CRUSTLESS SPINACH AND CHEESE QUICHE
Our Crustless Spinach and Cheese Quiche is deliciously loaded with chopped spinach, eggs, grated Parmesan cheese along with shredded mozzarella and sharp cheddar cheese. Make ahead and reheat, this delicious tasting quiche is perfect to serve as breakfast or as a meatless meal on busy weekends.

- Preheat oven to 375 degrees F. (190 C). Lightly spray a 9-inch baking pie dish. Set it aside.
- In a medium-size skillet, heat olive oil and butter on moderate heat, and add the chopped onion. Saute the onion for 3 to 5 minutes, until the onions are golden brown and caramelized.
- Add in the chopped spinach, and continue to cook the spinach with the onions for 3 minutes, stirring occasionally.
- In a mixing bowl, whisk together 5 eggs with salt, pepper. Then whisk in all three kinds of cheese. Finally, add the spinach and onion mixture to the egg mixture and whisk until well combined.
- Transfer to the prepared baking dish. Spread the mixture in an even layer.
- Bake on the center rack of the oven for 15 to 17 minutes, until the quiche is golden brown.
- Remove and allow to cool for about 5 minutes. Serve warm or at room temperature.

- Preheat oven to 375ºF.
- Press bacon and cheese into bottom of the pie crust. Beat the eggs, heavy cream, salt, and pepper in a mixing bowl until blended. Pour over bacon in the pie crust.
- Bake for 45 minutes to an hour, or until quiche has puffed and browned.
QUICHE AUX EPINARDS (SPINACH QUICHE)
This is Julia Child's recipe for Spinach Quiche. But of course, I couldn't leave well enough alone . . . just had to add bacon. Ham could also be substituted. Also added a little more cheese. Note: The partially cooked shell may be baked hours ahead of time and the filling prepared and refrigerated in the mixing bowl. Can even be made into tiny quiches for hot hors d'oeuvers.

Steps:
- Preheat oven to 400 degrees and bake pastry shell for 9-10 minutes.
- Remove from oven and allow to cool.
- Reduce oven temperature to 375 degrees.
- Cook the shallots or onions for a moment in the butter.
- Add the spinach and stir over moderate heat for several minutes to evaporate all its water.
- Stir in salt, pepper and nutmeg and taste carefully for seasonings and set aside.
- Beat the eggs, cream and seasonings in a mixing bowl.
- Gradually stir in spinach mixture.
- Pour into partially baked pastry shell.
- Sprinkle with cheese and dot the top with butter.
- Bake at 375 degrees for 25 - 30 minutes.
- The quiche is done when a knife plunged into the center comes out clean. Serve immediately.
- Note: If adding bacon, press pieces into bottom of the pastry shell before filling.
SPINACH QUICHE OR GRATIN - ADAPTED FROM JULIA CHILD
I usually simplify Julia's recipes and omit some of the details, including using less fat, and they come out fabulous! For the quiche, use a pastry shell crust. For the gratin, omit the pastry crust.

- To partly bake the pastry shell: Bake in middle of oven at 400 degrees F. for 8-9 minutes.
- Preheat oven to 375 degrees F. Place oven rack in upper third of oven.
- Saute onions briefly in butter; set aside.
- Beat together salt, eggs, nutmeg and pepper. Gradually stir in spinach mixture. Check seasoning.
- Pour into pastry shell. Sprinkle cheese on top. Place on baking sheet.
- Bake 25-30 minutes or until puffed and browned.

- Preheat your oven to 375F degrees. Line a 9-inch pie plate with pie dough and crimp your edges as desired. Chill the plate for 30 minutes in the refrigerator. Line your crust with parchment and fill it with pie weights (or dried beans). Bake until the crust has set, about 15 minutes. Remove the crust from the oven and take off the weights and foil/parchment. Continue baking until the crust is lightly golden, about 5 minutes. Let the crust cool while you continue to prepare your filling.
- In a large sauté pan over medium heat, add the sliced bacon. Cook for about 5 minutes, until cooked through but not burned. Transfer to a paper towel lined plate to drain. Drain excess fat from the pan, but do not wipe the pan clean.
- Over medium heat add the shallots and sliced mushrooms. Cook for 5-10 minutes, or until the mushrooms are tender. Add the spinach one handful at a time and allow to wilt. Add back the bacon and stir to combine. Remove from heat.
- To make your egg custard, crack your eggs into a 2-cup measuring cup. Add equal parts whole milk and half and half until you reach 2 cups total liquid. Add the nutmeg, salt and pepper. Whisk the custard until well combined and the eggs and milk have completely blended together.
