For a little fancier New Year's gathering, I like to serve these pasta shells stuffed with cheese and spinach and topped with spaghetti sauce. Complete the meal with breadsticks and a tossed salad. Italian food is loved by all, and the aroma is warm and inviting. -Trisha Kuster, Macomb, Illinois

1 package (12 ounces) jumbo pasta shells
1 large egg, lightly beaten
2 cartons (15 ounces each) ricotta cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1 jar (32 ounces) spaghetti sauce
Thin breadsticks, optional

Steps:

  • Cook pasta shells according to package directions. Meanwhile, in a large bowl, combine the egg, ricotta cheese, spinach, Parmesan cheese, salt, oregano and pepper. Drain shells and rinse in cold water; stuff with spinach mixture., Place shells in a greased 13x9-in. baking dish. Pour spaghetti sauce over shells. Cover and bake at 350° until heated through, 30-40 minutes. Serve with breadsticks if desired.

This recipe is simple to make. I always have marinara sauce on hand, so I can just create any pasta dish in a hurry. Sometimes I make little meatballs and toss them on top of this dish. This recipe is a great vegetarian dish.

1 (12 ounce) box jumbo pasta shells
1 (10 ounce) box chopped spinach
2 lbs ricotta cheese
1 egg, beaten
4 tablespoons romano cheese
1/8 teaspoon black pepper
4 ounces pre shredded mozzarella cheese
3 1/2 cups marinara sauce

Steps:

  • Cook Shells in boiling salted water according to package directions.
  • Cook spinach according to package.
  • After cooking spinach squeeze to drain excess water. Chill.
  • Blend Cheeses, egg, spinach and black pepper together well.
  • Warm Marinara sauce.
  • Pour 2 C sauce in the bottom of a 9 x 13 pan, reserve remaining sauce.
  • Using a teaspoon fill shells, place in pan in single layer.
  • Cover and bake 20 to 25 minutes at 350°F.
  • Serve with remaining sauce.

Large pasta shells stuffed with lowfat cheeses and spinach, smothered in marinara sauce and baked. You can use 2 tablespoons egg substitute in place of the egg white if you prefer. Lighten it up even more by using nonfat cottage cheese.

16 jumbo pasta shells
1 (10 ounce) package frozen chopped spinach, thawed and drained
6 ounces low fat mozzarella cheese, shredded
1 cup low-fat cottage cheese
1 egg white
1 tablespoon grated Parmesan cheese
¼ teaspoon ground nutmeg
2 tablespoons Italian seasoning
1 (16 ounce) jar spaghetti sauce

Steps:

  • In a large pot of salted water boil pasta shells until al dente. Drain well and rinse.
  • Preheat oven to 375 degrees F (175 degrees C).
  • In medium bowl, combine spinach, mozzarella cheese, cottage cheese, egg white, parmesan cheese, nutmeg, and Italian seasoning until blended.
  • Fill each pasta shell with a heaping tablespoon of spinach mixture. Pour 1 cup spaghetti sauce into a 8x12 inch baking dish, spread evenly. Place shells in pan. Spoon remaining spaghetti sauce over shells. Cover with aluminum foil and bake for 30 to 40 minutes, or until shells are heated through.

An interesting meatless casserole. Uses large shells filled with a spinach and cottage cheese mixture and baked in a creamy parmasan cheese sauce. This is from an old Better Homes and Gardens recipe card. I have not tried it yet myself, but it is on my list to try. (prep time is a guess)

12 ounces jumbo pasta shells
1/2 cup finely chopped celery
2 tablespoons finely chopped onions
1 tablespoon cooking oil
2 cups creamy cottage cheese
1 (10 ounce) package frozen chopped spinach (cooked and drained)
1 beaten egg
1/2 teaspoon salt
1/8 teaspoon dry oregano
1/8 teaspoon ground nutmeg
1 dash pepper
2 tablespoons chopped onions
3 tablespoons cooking oil
3 tablespoons flour
1/4 teaspoon salt
1 1/2 cups milk
3/4 cup chicken broth
1/4 cup grated parmesan cheese

Steps:

  • Cook shells according to package directions; drain and set aside.
  • Filling;.
  • In skillet cook celery 2 Tbls onion in 1 Tbls oil till tender but not brown; drain.
  • Combine celery mixture with cottage cheese, cooked spinach, egg 1/2 teas. salt, oregano, nutmeg and pepper.
  • Mix well.
  • Fill shells with mixture, set aside.
  • For sauce;.
  • In saucepan cook 2 Tbls onion in 3 Tbls oil till tender but not brown.
  • Blend in flour, salt and pepper.
  • Stir in milk and chicken broth.
  • Cook and stir till thickened and bubbly.
  • stir in parmesan.
  • Pour half of the sauce into bottom of 12x71/2x2 inch baking dish.(You cold use a 9x13 as well).
  • Arrange stuffed shells in dish.
  • Cover with foil.
  • Bake at 375 for 20 minutes.
  • pour remaining sauce over shells.
  • Baked Uncovered for 15 minutes more.
  • Sprinkle with additional grated parmesan cheese if desired.
