ANNIE'S WHITE CHOCOLATE-KAHLUA® CREME BRULEE
I try to come up with at least one new dish for every holiday with the family. I decided to do a creme brulee one year, and found several recipes that looked interesting but none were quite what I wanted. I ended up combining a couple, then tweaking until my hubby said, That's it! Now when the torch comes out, everyone starts swarming! I've even found hidden dishes in the refrigerator where someone has saved one for themselves.

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Whisk egg yolks and 1/3 cup white sugar together in a bowl until smooth.
- Bring 1 3/4 cup plus 2 tablespoons heavy cream to a simmer in a saucepan over medium-high heat, about 5 minutes. Add white chocolate. Remove from heat and whisk until chocolate is melted.
- Spoon 2 tablespoons of cream mixture into egg yolks, whisking constantly to prevent eggs from scrambling. Pour remaining cream mixture over egg yolks, whisking until custard is thick and smooth. Stir in vanilla extract and coffee liqueur.
- Pour custard into four 6-ounce ramekins. Arrange ramekins in a 9x13-inch baking pan. Pour in enough warm water to come 1 1/2 inches up the sides of the ramekins.
- Bake in the preheated oven until custard is set, about 45 minutes. Cool to room temperature, about 30 minutes. Cover with plastic wrap and refrigerate until chilled, about 2 hours.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Arrange ramekins on a baking sheet. Sprinkle 1 teaspoon white sugar over each custard.
- Broil in the preheated oven until sugar is melted and crispy, about 2 minutes. Chill before serving, 5 to 10 minutes.

KAHLUA® HOMEMADE
This recipe I love to make around Thanksgiving to drink or give as presents at Christmastime. The longer you wait the better it is, try and wait 4 weeks. I got this recipe from one of my own concoctions from trying several different recipes.

Steps:
- Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
- Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.

I'm a big fan of Kahlua and love this served over bread pudding. In fact, as Emeril would say "this would be good served on a bumper".

Steps:
- In a cup or small bowl combine water and cornstarch stirring until dissolved.
- Set cornstarch mixture aside.
- In heavy saucepan stir together heavy cream, sugar and Kahlua.
- Cook over medium heat stirring constantly until mixture comes to a boil.
- Lower heat and simmer for 1 minute.
- Add cornstarch mixture and simmer over low heat for 4 minutes, stirring constantly until thickened.
- Remove from heat and whisk for 1 minute.

KAHLUA FUDGE SAUCE
This is the fudge sauce from my ice cream pie recipe (#7549). It is so rich and wonderful I decided it deserved being posted by itself. I could drink it, it's that good! Makes a great sauce for dipping bananas, brownies or for pouring over ice cream (of course!) Store any left-overs (ha!) in the fridge and reheat in the microwave for about 20 seconds.

- Over a double boiler* on low heat, combine chocolate chips, heavy cream, and butter.
- Stir until chips are melted and mixture is smooth.
- Remove from heat, stir in coffee liqueur.
- Serve warm.
- *Can also be melted in the microwave on a low temperature, stirring occasionally and being sure not to burn the chocolate.
