1 1/2 cups chopped pecans
1 Gala apple, peeled, chopped (1 1/2 cups)
1/2 cup chopped dried Calimyrna figs
1/3 cup packed brown sugar
1/3 cup brandy
2 teaspoons grated lemon peel
1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box

Steps:

  • In medium bowl, stir together mincemeat, pecans, apple, figs, brown sugar, brandy and lemon peel. Cover; refrigerate at least 8 hours.
  • Let pie filling stand at room temperature 30 minutes. Meanwhile, heat oven to 425°F. Make pie crusts as directed on box for Two-Crust Pie using 9-inch pie plate. Stir filling well; pour into crust-lined plate. Top with second crust and flute; cut slits in several places.
  • Bake on lowest oven rack 40 to 45 minutes or until pastry is golden brown. Cool completely on cooling rack, about 5 hours.

1¼ cups all-purpose flour, plus more for rolling
¼ teaspoon salt
½ teaspoon sugar
1 stick chilled unsalted butter, cut in pieces
3 tablespoons ice water
2 large eggs
1 cup sugar
1 stick unsalted butter, melted and cooled
¼ cup Maker's Mark® Bourbon
½ cup all-purpose flour
1½ cups walnuts, toasted and coarsely chopped
1 cup semi-sweet chocolate chips

Steps:

  • 1. To make the crust: In a food processor, pulse the flour, salt, and sugar to mix. Add the butter and pulse until the mixture resembles coarse meal with pea-sized pieces. Sprinkle the ice water on top and pulse until large clumps form. Press the dough into a disk, wrap tightly in plastic wrap, and refrigerate until firm, about 1 hour. 2. On a lightly floured work surface, roll the dough into a 12-inch round. Fit into a 9-inch pie dish. Tuck in the overhang and decoratively crimp the edges. Freeze while heating the oven. 3. Preheat the oven to 350°F. Prick the bottom of the dough all over with a fork. Line with parchment paper and fill with pie weights or dried beans. Bake until the is golden and dry, about 20 minutes. Remove the parchment and pie weights. Return the crust to the oven and continue baking until golden brown, about 5 minutes. Let cool slightly on a wire rack. 4. Meanwhile, make the filling: In a large bowl, whisk the eggs and sugar. Continue whisking while adding the butter, then the bourbon. Stir in the flour until well combined. Stir in the walnuts and chocolate chips. Pour into the warm pie shell. 5. Bake until the filling is set and the top golden, about 30 minutes. Cool in the pan on a wire rack. Serve warm or room temperature.

All-purpose flour, for dusting
Pate Brisee for Plum Crumb Pie
2 prepared twenty-seven-ounce jars mincemeat
1 McIntosh apple, peeled, cored, seeded, and grated
1 tablespoon brandy
Grated zest of 1 lemon

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper; set aside. On a lightly floured surface, roll half the pate brisee into a 12-inch circle. Fit pastry into a 9-inch glass pie plate; trim dough evenly along edge. Refrigerate 15 minutes. Meanwhile, in a large bowl, combine mincemeat filling, grated apple, brandy, and lemon zest. Spoon filling into the chilled piecrust.
  • On a lightly floured surface, roll out remaining pate brisee to a 12-inch circle. Cover filling, trim evenly along edge, and press to seal edges. Cut small slits in pastry with the tip of a paring knife, about 3/4-inch apart. Place on prepared baking sheet.
  • Bake for 15 minutes. Lower the temperature to 350 degrees. and bake until the crust is golden brown and the center bubbles, 45 to 50 minutes. Cool on a wire rack.

Mom's 88 yrs. old now, but her mincemeat pie was a staple every year at the weekly Lenten Luncheons at our church as well as family holiday dinners. I wonder if it had anything to do with the half cup of brandy or rum mom would add to her pie.

2 (9 ounce) packages mincemeat
1 large apple, diced very fine
1 cup raisins
2 1/2 cups water
1/2 cup brandy or 1/2 cup rum

Steps:

  • Break mincemeat into small pieces and put in saucepan.
  • Add diced apples, raisins, water and liquor.
  • Boil about 2 minutes; cool.
  • When mincemeat mixture is cool, put into pastry lined 9" pie pan; cover with top crust.
  • Prick top crust with folk.
  • Bake at 425 degrees for 35 minutes or until crust is golden brown.

1/4 pound salt pork
1 cup granulated sugar
1 pound beef-stew meat, cubed
1 cup homemade or low-sodium beef broth
1 cup powdered sugar
1 cups raisins
1 cup pitted prunes, chopped
1 cup apple cider
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground mace
1/2 teaspoon ground nutmeg
1/4 pound citron, diced
6 tablespoons brandy
7 1/2 cups peeled, cored and finely chopped apples
1 1/2 teaspoons lemon juice
Dough for 6 pie crusts (see Butter-and-Shortening Pastry Dough recipe)

Steps:

  • Place the salt pork in a saucepan and cover with water. Bring to a boil, lower the heat and simmer 3 minutes. Drain and finely dice the salt pork. Set aside.
  • Place the granulated sugar in a small saucepan set over medium heat. When the edges begin to bubble, stir with a fork until the sugar is completely melted. Scrape the melted sugar into a large pot. Add the salt pork, meat, broth, powdered sugar, raisins, prunes and cider. Bring the mixture to a boil, adjust the heat and simmer, stirring occasionally, until the sugar has dissolved and all the ingredients are well blended, about 30 minutes.
  • Remove the cubed meat from the pot, place in a food processor and pulse until coarsely chopped. Return the meat to the pot and cook an additional 15 minutes. Stir in the salt, cinnamon, allspice, cloves, mace, nutmeg and citron. Remove from heat and pour the brandy over the top. (Can be made to this point several days in advance and kept refrigerated.)
  • When ready to assemble the pies, preheat the oven to 350 degrees. Stir the apples into the mincemeat and bring to a boil over high heat. Reduce heat and simmer for 5 minutes. Stir in lemon juice.
  • Roll three of the disks of pastry dough out to disks 11 inches in diameter and ease them into three 9-inch pie pans. Divide the mincemeat among the pans. Roll the remaining dough out to disks 10 inches in diameter and cover the tops of the pies with them. Trim excess dough and pinch the edges of the top and bottom crusts together with your fingers to seal them. Use a paring knife to poke a few slits in the top of each crust.
  • Bake until filling is bubbling and crusts are lightly browned, 60 to 65 minutes. Serve warm or chilled.

4 cups all-purpose flour, sifted
1 1/2 cups unsalted butter
1 teaspoon salt
2 teaspoons sugar
1 beaten egg
About 4 to 6 tablespoons cold water
2 8-ounce jars mincemeat
1/2 cup brandy

Steps:

  • Put the flour in a bowl. Chop the butter and blend it into the flour with the tips of your fingers (or with a pastry blender), adding the salt and sugar until it is like bread crumbs. Add the water gradually and work into a dough, moistening with more water as needed. Put the dough on a floured board and knead with the palm of your hand. Shape into a ball and refrigerate for half an hour.
  • Preheat oven to 400 degrees.
  • Mix the brandy into the mincemeat. Roll the pastry out thin and cut in rounds half an inch larger than your cupcake tins. Use a glass or a cutter to cut rounds for the lids. Dust the baking tin with flour, fill each cupcake round with a round of pastry, and fill with mincemeat - not too full or it will boil over during cooking. Press on the lids, crimping the edges together.
  • Brush each pie with a little beaten egg and bake in the oven for eight to 10 minutes.
