BAKED AVOCADO EGG



Baked Avocado Egg image

Easy and quick egg breakfast baked in avocados and topped with diced tomatoes.

Number Of Ingredients 5

1 Large Avocado
2 Eggs
1 Tbsp Grated Parmesan Cheese
½ Tbsp Parsley
Salt and Pepper to Taste

Steps:

  • Preheat oven to 400 F. Cut the avocado in half longways and remove the pit.
  • If it's a small pit, use a spoon to remove some of the avocado meat and make room for the egg.
  • Place the avocados in two small ramekins to keep them upright. Or you can bake without ramekins.
  • Crack the eggs into each avocado half and top with salt, pepper, parsley, and parmesan cheese.
  • Bake for 12-14 minutes or until the eggs is cooked to your liking.
  • Top with tomatoes before serving.

1 avocado, halved and pitted
2 eggs
¼ cup shredded Cheddar cheese
salt and freshly ground black pepper to taste
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Scoop out a little of the avocado from where the pit was to make room for 1 egg. Place on a baking sheet and crack 1 egg on top of each avocado half.
  • Bake in the preheated oven until egg is cooked, 15 to 20 minutes. Sprinkle Cheddar cheese on top and season with salt and pepper. Garnish with fresh parsley.

1 (8 ounce) package breakfast sausage
12 eggs
1 (8 ounce) package shredded Cheddar cheese
¾ cup heavy whipping cream
1 tablespoon minced onion
2 teaspoons dry mustard
1 teaspoon dried oregano
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook sausage, breaking it apart with a wooden spoon, until browned and crumbly, 5 to 7 minutes. Spread over the bottom of a 9x13-inch casserole dish.
  • Mix eggs, Cheddar cheese, cream, onion, mustard, oregano, salt, and pepper together in a bowl. Pour mixture over the sausage.
  • Bake in the preheated oven until firm and cooked through, 30 to 40 minutes.
