Note that you can make these even more keto (lower carbs) by leaving off the dried fruit and/or only eating 2-3 pieces!

Number Of Ingredients 4

About 9 ounces chocolate -- we used this kind with only 3 organic ingredients
About 1/4 cup slivered almonds -- even better is if you prepare them like this for more nutrition
About 1/3 cup dried fruit (she used cherries, but cranberries, blueberries, or any dried fruit would be good.)
Optional additions: *sea salt (shredded coconut, any other ideas?)

Steps:

  • Melt the chocolate in a pan over top another pan of boiling water. (Or melt in the microwave for a few seconds, but I like not using the microwave as much as possible
  • Place the cookie sheet into the freezer or refrigerator until it hardens. Break into small pieces and store in the fridge or freezer so it doesn't melt.

1/2 cup dark chocolate (unsweetened, melted)
1 oz coconut oil (melted)
3-5 drops stevia (liquid)
1/3 cup Walnuts (chopped)
1/3 cup almonds (roasted, for topping)

Steps:

  • Add dark chocolate and coconut oil into the microwave-safe bowl. Microwave for 1 to 2 minutes but remove and stir every 30 seconds until the mixture is completely smooth and the chocolate is well melted. You can also use a double-boiler to melt them. Add stevia or erythritol to sweeten to your desired sweetness.
  • Chop walnuts into pieces then mix into the melted chocolate. Spread this mixture on the parchment paper into a thin layer then top with roasted almonds.
  • Freeze until set then break into pieces and serve.

1 tbsp orange zest

Steps:

  • Line a baking sheet with parchment paper.
  • Place the chopped chocolate bar into a microwave-safe bowl, add the coconut oil, powdered sweetener, and microwave for 30 seconds. Then stir the chocolate and repeat until it is smooth and completely melted.
  • Pour the melted chocolate onto the baking sheet and sprinkle it with sliced almonds and orange zest.
  • Place the baking sheet in your refrigerator for 30 minutes, take it out, and break the chocolate into pieces.

1 tablespoon shortening

Steps:

  • Line a 9x13 inch baking pan with parchment paper. Set aside. Put chopped almonds In a skillet. Cook, stirring often over medium high heat, until golden brown. Remove from heat.
  • In a metal bowl over a pan of simmering water, melt chocolate chips and shortening until smooth. Remove from heat and stir in 1/2 the toasted almonds. Spread onto the prepared baking pan. Sprinkle with remaining almonds, and chill 30 minutes, or until solid. Break into bite-size pieces to serve.
