KETTLE CORN
Take a trip to the county fair with a bowl of old-fashioned Kettle Corn. Your family will never want plain popcorn again! If you use white sugar, it will taste like popcorn balls and if you use brown sugar, it will taste like caramel corn.

Steps:
- Heat the vegetable oil in a large pot over medium heat. Once hot, stir in the sugar and popcorn. Cover, and shake the pot constantly to keep the sugar from burning. Once the popping has slowed to once every 2 to 3 seconds, remove the pot from the heat and continue to shake for a few minutes until the popping has stopped. Pour into a large bowl, and allow to cool, stirring occasionally to break up large clumps.

CRISPY DEEP FRIED BACON
Battered and fried bacon that is even better after cooking in the oven for 7 minutes. My husband and I saw the idea of fried bacon on the travel channel where they just battered and fried it and we decided to make it. It was so good. But then we cooked in the oven and it was even better. Serve with white gravy and it is a heart attack waiting to happen but tastes so good!

Steps:
- Whisk together the eggs and milk in a bowl until smooth. Separate the bacon strips, and soak in the milk mixture for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Heat oil in deep skillet to 375 degrees F (190 degrees C).
- Whisk together the flour, salt, and pepper in a separate bowl. Remove the bacon from the egg mixture, and toss with the flour to coat. Line a baking sheet with aluminum foil.
- Fry the bacon strips 3 to 5 slices at a time until golden brown, about 4 minutes. Drain on a paper towel-lined plate. Once all of the bacon has cooked, place onto the prepared baking sheet, and bake in the preheated oven until crispy, about 7 minutes.

KETTLE BACON
Some of you with age will remember this type bacon from those camps that our folks used to send us to for the summer. It is not the typical flat served bacon and is the only way to cook bacon for a crowd. Even though this is called kettle bacon it can be cooked in any large cooking vessel such as a dutchoven, large kettle or large skillet with deep sides. This is how I used to make it when I cooked at a camp in Charles County, Md. Cooking times are an estimate, cook until done to your liking.

Steps:
- Place your cooking vessel on the heat source.
- Seperate bacon slices and drop slice by slice into the vessel.
- Add butter ( please use butter not substitute stuff, it is needed for the flavor ).
- Sprinkle ground black pepper over the bacon while stirrring.
- Cook over low to medium heat stirring very often with a wooden spoon .
- Remove bacon pieces with tongs as they become crisp and place on toweling to drain.
- Serve while still warm.
- Options:.
- Lemon Pepper can be used in place of black pepper.
- Add a dash of cayenne pepper while cooking to add some zing.

MAPLE-BACON KETTLE CORN
The sweetness of kettle corn with the smoky saltiness of bacon - can it get any better? Adapted from a recipe at Brown-Eyed Baker.

Steps:
- Fry bacon in a skillet until brown and crisp; transfer to paper towels to drain. Transfer grease to a measuring cup; if less than 1/4 cup, add plain oil to make 1/4 cup total.
- When bacon is cool, chop into small pieces and toss with maple syrup. Set aside.
- In a large saucepan, place bacon grease (with oil, if using) and popcorn kernels. Sprinkle with sugar and 1 tsp salt. Cover with a tight-fitting lid and place over medium heat until you hear a few kernels pop.
- Once popping begins, hold pot and lid together tightly and shake pot every 1-2 minutes then return to heat (this will prevent the sugar from burning).
- Once popping is done, carefully remove the lid, add remaining salt and stir with a large spoon. Add bacon-maple mixture and toss well before serving.
