KICKED UP SPICY WINGS

Steps:
- For the wings and dip: Pour about 3 inches of the vegetable oil into a large pot and heat it to 350 degrees F.
- While the oil is heating, make the dip. Stir together the sour cream, blue cheese, mayonnaise, Worcestershire, chipotle and lemon juice in a medium bowl. Thin with a little buttermilk if needed. Taste and adjust the seasoning with salt and pepper.
- To make the batter, whisk together the flour with some salt, pepper and cayenne in a large bowl. Whisk in the 1 1/2 cups buttermilk to form a smooth but thin batter.
- Toss the chicken wings in the batter. Working in batches, fry 6 to 8 wing pieces at a time until golden brown and cooked through, 7 to 8 minutes. Drain on paper towels and keep warm.
- For the sauce: In a large bowl, stir together the melted butter, hot sauce, barbecue sauce, honey, pickled jalapeno juice and Worcestershire. Toss the hot wings in the sauce to coat them well. Serve with the creamy dip.
ZIPPY BARBECUE SAUCE
I make this in huge batches and made the mistake giving out jars of it to friends. Now I can't keep enough of it around.

- Whisk the ketchup, water, molasses, Worcestershire sauce, white wine vinegar, Dijon mustard, brown sugar, salt, hot pepper sauce, granulated garlic, and black pepper together in a small heavy-bottomed saucepan and place over medium heat. Bring to a boil, reduce heat to low, and continue cooking at a simmer, stirring together, another 10 minutes. Remove from heat and allow to cool completely. Pour into a glass jar and store uncovered in the refrigerator for 8 hours or overnight. This allows the flavors to blend and reduce any sharpness from the vinegar.

KICKED UP BBQ SAUCE
This is the best BBQ sauce I have every eaten. No kidding! Slightly sweet with some HEAT. Perfect for pulled pork. I actually came up with this recipe after overcooking a pork roast. I wanted an amazing sauce to cover up the fact the meat was dry and stringy. Did the trick. :)

- In medium-sized saucepan, heat butter over medium-low heat. Add onion and saute for 5 minutes, but do not allow them to brown.
- Stir in ketchup, sugar, Worcestershire sauce, mustard, vinegar. Bring to a boil; reduce heat and simmer, stirring occasionally, for 5 minutes.
- Divide into jars, cool and freeze or refrigerate for 2 to 3 weeks.
