CHICKEN PASTA BAKE - FAMILY FRIENDLY
This chicken pasta bake is family-friendly and has a healthy style with its high vegetable content of Cauliflower and Spinach

Steps:
- (Pasta) Pop on a large pot of water to boil- once boiling cook the pasta. Use the packet directions as a guide for cooking time, as the pasta will also be baked I tend to cook the pasta for approximately two-thirds of the suggested cooking time, but while this is happening you can move on to the other steps.
- (Chicken) Heat a pan and brown your chicken
- (Veggies) Cut the cauliflower into florets, add to a second pot, cover with water and bring to boil (leave to boil until tender)
- (White Sauce ) Add butter to a third smaller pot, heat over a medium/low heat until melted
- (White Sauce ) Heat your milk and stock (you don't have to, but the sauce making is much faster with warmed milk and stock)
- (White Sauce ) Add the flour to the pot and cook off for the basis of your roux/white sauce
- (White Sauce ) Gradually add the milk and stock to create a thick velvety sauce
- (White Sauce )Add cheese to the white sauce and allow to melt into the sauce. Once done remove from the heat (you do not want a white sauce to boil, as it goes runny)
- (Pasta) Remeber to check back on your pasta water and cook your pasta as per the packet instructions, once ready drain thoroughly
- (Veggies) Remember to check on your cauliflower, once tender add 2 handfuls of spinach to the pot and let steam until wilted for a few minutes.
- (Veggies) Drain the water from the cauliflower and spinach, blend to create a purée (I use a stick blender to do this)
- Add the veggie purée to the cheese sauce and mix (do this in whichever is the bigger pot, ie the white sauce pot or the cauliflower pot. Be sure to taste the sauce at this stage, season with salt and pepper to your tastes.
- Mix the sauce mixture and with the cooked pasta and browned chicken, add one more handful of spinach if desired and mix through
- Pop the pasta mix into a baking/lasagna dish, top with grated cheese
- Bake in an oven at 180 degrees for 30-35mins, until cheese, is melted and golden

- In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce. Cover and simmer for 10 minutes. Stir in spaghetti; set aside. , In a saucepan, melt butter. Stir in flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in 3/4 cup cheddar cheese and Parmesan cheese until melted. , Place half of the spaghetti mixture in a greased 13x9-in. baking dish. Top with cheese sauce and the remaining spaghetti mixture. Sprinkle with remaining cheddar cheese. , Bake, uncovered, at 350° for 30 minutes or until heated through.

EASY KID-PLEASING SPAGHETTI BOLOGNESE
i always used to use the jars of sauce, but had to start making my own spaghetti bolognese sauce because my DH HATES tomato bits and other chunks of veggies that come in the jarred sauce. You probably have most of the ingredients already in the cupboard. Personally, I think this is better than any store bought sauce.

Steps:
- Heat oil in a large saucepan.
- In another large pot, boil water for spaghetti. When it comes to a rolling boil, add spaghetti and salt, and leave for approx 12 minutes.
- Once the pan is hot, add the beef. Let it sear on both sides before breaking it up, this seals in more flavour.
- Once beef is browned, drain excess fat from the pan, add the onion and garlic, and cook for another 3 minutes.
- Add tomato sauce, sugar, oregano, basil, salt and pepper. Bring to the boil.
- Reduce heat to low, and let simmer for another 10 minutes, stirring occasionally. Keep seasoning to taste.
- Drain spaghetti, and rinse excess starch off it.
- Mix spaghetti and sauce together.
- Serve and enjoy with a hot slice of garlic cheese bread.

FAMILY PLEASING CHICKEN PAPRIKA
This is the recipe my Mom and I have made for years. I don't know where it originally came from, just that everyone seems to love it- I did growing up - and now my whole family does (always a plus to find a quick meal that my kids like that my hubby and I can enjoy eating too!!) Easy to round out with a green salad or veggie and roll or bread on the side. I have made this in a pinch for friends and they always rave thinking it took more time than it did to prepare. ;) Mushrooms are a great addition, simply add them in when adding the onions. I also like to stir in sautéed asparagus sometimes or frozen peas. ;)

Steps:
- Cube chicken into 1-2 inch chunks- as desired.
- In a deep skillet, brown chicken breasts with oil, garlic and pepper.
- Once cooked, add onions and cook for 2 minutes, stirring lightly.
- Add paprika (at least 2 tbsp -more to taste) and the chicken broth.
- Bring to a rolling bubble, add wine and simmer for 5 minutes.
- In a cup on the side, mix cold water and cornstarch completely.
- Spoon mixture into simmering chicken, stirring until desired thickness is achieved.
- Cook for at least 5 more minutes to cook out the starch taste.
- When ready to serve, remove from heat and stir in the sour cream, enough to achieve the creaminess desired.
- Serve over your favorite pasta(egg noodles, cavatappi, penne), mashed potatoes or rice.
- Enjoy! ;).
