STRAWBERRY AND CRANBERRY POPSICLES



Strawberry and Cranberry Popsicles image

Yield Makes 8

Number Of Ingredients 4

1/2 cup (110g) caster (superfine) sugar
1/4 cup (180ml) water
1 1/3 cups (330ml) cranberry juice
8 strawberries, sliced

Steps:

  • Place the sugar and water in a small saucepan over low heat and stir until the sugar is dissolved. Increase the heat to high and bring to boil for 1 minute. Set aside to cool completely.
  • Pour the sugar syrup and cranberry juice into a large jug and stir to combine. Pour half the cranberry mixture into 8 x 1/3 cup-capacity (80ml) ice-pop molds. Place 2 strawberry slices into each mold, insert ice-pop sticks and freeze for 4 hours. Pour remaining cranberry syrup into molds. Divide remaining strawberry slices between molds and freeze for a further 4 hours or until frozen.

Steps:

  • For ease just blend your leftover cranberry sauce with your favorite juice: lemonade, pear nectar, orange juice, apple juice, etc. The proportion should be about 1/3 cup sauce
  • to 1 cup juice. Place these in paper cups (for individual eating, ice cube trays (For adults it works great with vodka over them) or popsicle molds. It's great to remember the kids throughout the weekend this way. After they rake the leaves and run around outside, they'll want a cool refreshing treat!
  • For adults:
  • Dissolve 1/2 teaspoon of gelatin in hot juice, fold in stiff egg white (2) and mold more like a sorbet into your favorite fancy mold, cover with foil freeze, unmold and decorate with fresh mint leaves.

If you don't have any popsicle molds you can use 175 gram plastic containers or cups. Cooking time is freezing time. This is kid friendly but kids of all ages enjoy these lol! You can really make these using any canned fruit you like, I have made these using canned pears!

1 (28 ounce) can sliced peaches in juice
1/4 cup sugar (for a sweeter taste use more sugar)
1/2 cup vanilla yogurt (regular or low-fat or peach flavored)
2 cups sweetened cranberry juice

Steps:

  • Drain the peaches reserving about 1/4 of the juice.
  • In a blender or food processor puree the peaches and reserved 1/4 cup juice and sugar until smooth.
  • Using on/off turns add in the yogurt.
  • Divide the the mixture between popsicle molds or cups.
  • Freeze for about 1 hour or until partially set.
  • Insert one stick in the center of each pop.
  • Pour and divide the cranberry juice on top of each pop.
  • Cover the mold lightly with plastic wrap and freeze until completely firm (about 6 hours).
