Chocolate-Laced Kiwifruit with Orange Sauce image

Fat-free yogurt provides the base for this "fruit-tas-tic" dessert.

1/2 cup Yoplait® Fat Free plain yogurt (from 2-lb container)
1 tablespoon frozen (partially thawed) orange juice concentrate
4 large kiwifruit, peeled and cut into 1/4-inch slices
2 tablespoons semisweet chocolate chips
1 teaspoon shortening

Steps:

  • In small bowl, mix yogurt and orange juice concentrate. Spoon 2 tablespoons mixture onto each of 4 dessert plates. Arrange kiwifruit on yogurt mixture.
  • In 1-cup microwavable measuring cup, microwave chocolate chips and shortening uncovered on High 30 to 60 seconds, stirring every 15 seconds, until melted and smooth. Carefully drizzle chocolate in thin lines over kiwifruit.

Awesome over ice cream - you could use this on any dessert you wanted! Recipe comes from the California Kiwifruit Commission.

2 tablespoons unflavored gelatin powder
1/3 cup cold water
2 lbs kiwi fruits (approximately 9-10)
3/4 cup sugar

Steps:

  • Sprinkle gelatin over the cold water and set aside to soften. Peel the kiwifruit and blend in a food processor or blender until pureed. Be careful not to over-process; the black seeds will break and change the color of the puree.
  • Add the gelatin mixture to the kiwi puree. Heat mixture to about 110°F; do not overheat. If mixture gets too hot, pull off heat and stir constantly. Continue to stir until all gelatin is dissolved. Keep covered in a refrigerator.

  • Place fruit in a serving bowl. Combine caramel topping and orange juice; drizzle over fruit. Sprinkle with nuts.

I was looking for a quick way to dress up a package of store-bought pudding tonight, and came up with this. It is important to use a small pan for this recipe. You can make sure that the pan you have is the right size by squeezing the marshmallows all together into the bottom of the pan, so that there are no double layers of marshmallows.

2 tablespoons water
2 hand- fulls large store-bought marshmallows
1 teaspoon vanilla extract
milk (I use non-fat)

Steps:

  • Place water, marshmallows, and vanilla extract in a SMALL saucepan on very low heat.
  • Add milk until the milk level in the saucepan is as high as the tips of the marshmallow mixture. (the marshmallows should be squished together in one layer on the bottom of the pan. If you end up with two layers, your pan is not the right size.).
  • Stir until the marshmallows are completely melted, and the resulting sauce is light and foamy.
