Steps:
- In a wide pan over medium heat, heat vegetable oil. Add garlic and ginger and cook until aromatic.
- Add ground beef and cook, breaking apart with the back of a spoon, for about 3 to 5 minutes or until lightly browned. Drain excess fat.
- In a bowl, combine soy sauce, sugar, sesame oil, and red pepper flakes. Stir until sugar is dissolved. Add to the pan.
- Continue to simmer until beef is cooked through.
- Add green onions and cook, stirring to distribute, for about 1 minute.
- Serve over steamed rice and garnish with green onions and toasted sesame seeds. Serve hot.

- In a small mixing bowl, stir together the brown sugar, vinegar, soy sauce, ginger, crushed peppers, and black pepper. Set aside. Heat a large skillet over medium heat; add sesame oil and swirl around to coat. Add the ground beef and stir and cook just until no longer pink, then add the garlic and cook until meat is done. Drain off excess fat. Reduce heat to medium-low and add the reserved soy sauce mixture, stirring to coat the meat. Simmer and stir for a few minutes to blend the flavors and slightly thicken the sauce. Serve over hot rice and garnish top with green onions. NOTE: Instead of chopping the ground beef up as it cooked, I roughly shaped the raw beef into a log then wrapped in foil and partially froze it for a couple of hours, then sliced it off in irregular pieces before cooking.

- Bring water and rice to a boil in a saucepan. Reduce heat to low, cover, and simmer until rice is tender and water has been absorbed, about 15 minutes. Remove from the heat and let sit, covered, for 10 minutes. Gently fluff with a spoon and keep warm.
- While the rice is cooking, combine scallion whites, vinegar, and salt for the pickled scallions in a small bowl. Set aside to pickle while you start the stir-fry.
- Heat 1/2 of the olive oil in a large skillet over medium-high heat. Add zucchini, mushrooms, and carrots; season with salt and pepper. Stir-fry until crisp-tender, 3 to 5 minutes.
- Combine 1/2 of the soy sauce with sesame oil and sugar in a small bowl; whisk until well blended. Pour over vegetables in skillet and toss to coat. Remove vegetable mixture from the skillet and keep warm.
- Heat remaining olive oil in the same skillet over medium-high heat. Add garlic and ginger and cook until fragrant, about 1 minute. Add beef; cook and stir in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in remaining soy sauce.
- Ladle rice into bowls. Top with beef, vegetables, and pickled scallions. Sprinkle with scallion greens and drizzle Sriracha over top.

Inspired and altered from Taste of Home recipe, this recipe is easy to do and has great flavor! An absolute favorite for a weeknight dinner. I tried the Taste of Home recipe and felt that we needed more sauce to flavor the rice so I just halved the beef and added some sauteed vegetables for a more colorful dish. - In a small saucepan, saute sliced onions and peppers in a small amount of butter.
- In large saucepan, crumble ground beef under medium heat. Add minced garlic to the beef. Stir and cook until brown. When vegetables at desired tenderness, add to beef mixture. Stir occasionally.
- In a medium mixing bowl, add brown sugar, soy sauce, sesame oil, pepper, crushed red pepper and ground ginger. Whisk ingredients.
- When ground beef is fully cooked, pour sauce into the pan. Reduce heat to low and simmer for additional 2-3 minutes.
