Korean BBQ Ground Beef is easy to make with a short list of ingredients and in under 30 minutes. It's a delicious medley of sweet and savory flavors you'll love served over steamed rice or wrapped in lettuce leaves for a low carb option.

1 tablespoon vegetable oil
2 cloves garlic, peeled and minced
1 thumb size ginger, peeled and finely minced
1 pound ground beef
1/4 cup low-sodium soy sauce
3 tablespoons brown sugar
1 tablespoon sesame oil
1/2 teaspoon crushed red pepper flakes
1/4 cup green onions, chopped
sesame seeds, toasted

Steps:

  • In a wide pan over medium heat, heat vegetable oil. Add garlic and ginger and cook until aromatic.
  • Add ground beef and cook, breaking apart with the back of a spoon, for about 3 to 5 minutes or until lightly browned. Drain excess fat.
  • In a bowl, combine soy sauce, sugar, sesame oil, and red pepper flakes. Stir until sugar is dissolved. Add to the pan.
  • Continue to simmer until beef is cooked through.
  • Add green onions and cook, stirring to distribute, for about 1 minute.
  • Serve over steamed rice and garnish with green onions and toasted sesame seeds. Serve hot.

6 green onions, diced

Steps:

  • Heat a large skillet over medium heat and brown hamburger with garlic in the sesame oil.
  • Drain fat and add brown sugar, soy sauce, ginger, red pepper and ground pepper.
  • Simmer for a few minutes to blend flavors.
  • Serve over steamed rice and top with green onions.

1 pound lean ground beef (I used 93/7)
1 tablespoon sesame oil
2 medium cloves garlic, minced (about 2 tsp)
1/3 cup dark brown sugar
1 teaspoon white vinegar
1/4 cup soy sauce
1/2 teaspoon fresh ginger, minced
1/2 teaspoon crushed red peppers, or to taste
1/4 teaspoon black pepper
5-6 chopped green onions for garnish
Cooked white, or fried rice for serving

Steps:

  • In a small mixing bowl, stir together the brown sugar, vinegar, soy sauce, ginger, crushed peppers, and black pepper. Set aside. Heat a large skillet over medium heat; add sesame oil and swirl around to coat. Add the ground beef and stir and cook just until no longer pink, then add the garlic and cook until meat is done. Drain off excess fat. Reduce heat to medium-low and add the reserved soy sauce mixture, stirring to coat the meat. Simmer and stir for a few minutes to blend the flavors and slightly thicken the sauce. Serve over hot rice and garnish top with green onions. NOTE: Instead of chopping the ground beef up as it cooked, I roughly shaped the raw beef into a log then wrapped in foil and partially froze it for a couple of hours, then sliced it off in irregular pieces before cooking.

2 cups cooked rice
1 teaspoon sesame seeds (or more)

Steps:

  • In a small bowl combine brown sugar, soy sauce, sesame oil and ginger and red pepper flakes (if using). Set aside.
  • In a skillet cook ground beef until cooked through and crumbled.
  • Drain any excess grease.
  • Add garlic and cook 1 more minute
  • Add soy sauce mixture and green onions to beef mixture.
  • Cook for an additional 3-5 minutes.

2 ¼ cups water
1 ½ cups uncooked jasmine rice, rinsed and drained
4 stalks scallions, white and green parts thinly sliced, divided
3 ⅓ tablespoons white wine vinegar
1 pinch salt
3 teaspoons olive oil, divided
2 medium zucchini, halved lengthwise and cut into half-moon slices
1 (8 ounce) package button mushrooms, thinly sliced
4 large carrots, shaved into strips using a vegetable peeler
salt and ground black pepper to taste
6 tablespoons soy sauce, divided
2 tablespoons sesame oil
2 tablespoons white sugar
4 cloves garlic, minced
2 (1 inch) pieces fresh ginger, peeled and minced, or more to taste
2 pounds ground beef
4 teaspoons Sriracha sauce

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to low, cover, and simmer until rice is tender and water has been absorbed, about 15 minutes. Remove from the heat and let sit, covered, for 10 minutes. Gently fluff with a spoon and keep warm.
  • While the rice is cooking, combine scallion whites, vinegar, and salt for the pickled scallions in a small bowl. Set aside to pickle while you start the stir-fry.
  • Heat 1/2 of the olive oil in a large skillet over medium-high heat. Add zucchini, mushrooms, and carrots; season with salt and pepper. Stir-fry until crisp-tender, 3 to 5 minutes.
  • Combine 1/2 of the soy sauce with sesame oil and sugar in a small bowl; whisk until well blended. Pour over vegetables in skillet and toss to coat. Remove vegetable mixture from the skillet and keep warm.
  • Heat remaining olive oil in the same skillet over medium-high heat. Add garlic and ginger and cook until fragrant, about 1 minute. Add beef; cook and stir in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in remaining soy sauce.
  • Ladle rice into bowls. Top with beef, vegetables, and pickled scallions. Sprinkle with scallion greens and drizzle Sriracha over top.

3 garlic cloves, minced
1/4 cup packed brown sugar
1/4 cup reduced-sodium soy sauce
2 teaspoons sesame oil
1/4 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
2-2/3 cups hot cooked brown rice
3 green onions, thinly sliced

Steps:

  • In a large skillet, cook beef and garlic over medium heat 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles. Meanwhile, in a small bowl, mix brown sugar, soy sauce, oil and seasonings., Stir sauce into beef; heat through. Serve with rice. Sprinkle with green onions. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

Inspired and altered from Taste of Home recipe, this recipe is easy to do and has great flavor! An absolute favorite for a weeknight dinner. I tried the Taste of Home recipe and felt that we needed more sauce to flavor the rice so I just halved the beef and added some sauteed vegetables for a more colorful dish. 1/4 cup sliced peppers and onion (optional)
1 cup white rice (cooked) or 1 cup brown rice (cooked)
3 garlic cloves, minced (or 1/2 teaspoon)
1/4 cup packed brown sugar
1/4 cup soy sauce (reduced-sodium if desired)
2 teaspoons sesame oil
1/4 teaspoon ground ginger
1/8 teaspoon crushed red pepper flakes (less or more for desired amount, will change spicy level)
1/4 teaspoon pepper

Steps:

  • In a small saucepan, saute sliced onions and peppers in a small amount of butter.
  • In large saucepan, crumble ground beef under medium heat. Add minced garlic to the beef. Stir and cook until brown. When vegetables at desired tenderness, add to beef mixture. Stir occasionally.
  • In a medium mixing bowl, add brown sugar, soy sauce, sesame oil, pepper, crushed red pepper and ground ginger. Whisk ingredients.
  • When ground beef is fully cooked, pour sauce into the pan. Reduce heat to low and simmer for additional 2-3 minutes.
