1 tablespoon cornstarch
1/2 cup soy sauce
1/2 cup rice vinegar
3/4 cup brown sugar
6 cloves garlic (minced)
1 teaspoon ground ginger
1 teaspoon sesame seeds
1/2 teaspoon crushed red pepper flakes
8 chicken drumsticks
Sliced green onions and sesame seeds for garnish

Steps:

  • Preheat an oven to 375 degrees.
  • In a small saucepan over medium-high heat, whisk together the sesame oil and cornstarch.
  • Stir in the soy sauce, rice vinegar, brown sugar, garlic, ginger, sesame seeds, and red pepper flakes.
  • Bring to a simmer and cook until the sauce is thick.
  • Spray a 4 sided baking sheet or 9x13 pan with nonstick cooking spray. Lay the drumsticks out on the pan and brush with the bbq sauce.
  • Bake in the 375 degree oven for about 45 minutes.
  • Garnish with sliced green onions and sesame seeds

Korean fried chicken is double fried, guaranteeing it's cooked and tender on the inside, golden and crispy on the outside. While many versions feature a spicy gochujang-based glaze, this one opts for a soy-garlic sauce with just a hint of heat from gochujang. In lieu of gochujang, you can use another Asian chili sauce, any of which will bring its own unique flavor profile. You could also swap in the red chile flakes gochugaru, another Korean pantry staple.

3 pounds chicken drumsticks or split wings (tips removed)
Kosher salt and freshly ground pepper
1/2 cup plus 1/3 cup cornstarch
1/2 teaspoon baking powder
2 tablespoons vegetable oil, plus more for frying (about 10 cups)
4 cloves garlic, minced
2 teaspoons grated peeled fresh ginger
1/4 cup low-sodium soy sauce
1/4 cup packed dark brown sugar
2 tablespoons honey
2 teaspoons rice vinegar
1 teaspoon gochujang (Korean red chile flakes) or Asian chili sauce
1 teaspoon toasted sesame oil
1/3 cup all-purpose flour
1/3 cup vodka
Toasted sesame seeds, for sprinkling

Steps:

  • Toss the chicken with 2 teaspoons salt and 1/2 teaspoon pepper. Whisk 1/2 cup cornstarch and 1/4 teaspoon baking powder in a medium bowl. Coat the chicken in the cornstarch mixture, shaking off any excess. Transfer to a rack set on a baking sheet and let sit, uncovered, to set the coating, 30 minutes.
  • Meanwhile, heat 2 tablespoons vegetable oil in a small saucepan over medium heat. Add the garlic and ginger and cook, stirring, until just softened but not browned, about 2 minutes. Add the soy sauce, brown sugar, honey, rice vinegar, gochujang and sesame oil; bring to a simmer and cook until slightly thickened, 6 to 8 minutes. Set the sauce aside.
  • Fill a large Dutch oven or other heavy pot with 2 to 3 inches of vegetable oil. Heat over medium heat until a deep-fry thermometer registers 350 degrees F. Whisk the flour, remaining 1/3 cup cornstarch and 1/4 teaspoon baking powder and 2 pinches of salt in a medium bowl. Add the vodka and 1/3 cup cold water and whisk until the batter is smooth and very thin (about the consistency of half-and-half). If needed, add more water, 1 tablespoon at a time, to thin the batter.
  • One at a time, dip about half the chicken pieces in the batter, letting any excess drip off. Then, using tongs, hold the chicken halfway in the hot oil for 1 to 2 seconds before letting go completely (this will prevent the chicken from sticking to the bottom of the pot). If any pieces stick together, gently separate them with the tongs. The oil temperature will drop; adjust the heat as necessary to maintain a temperature between 300 degrees F and 325 degrees F. Fry the chicken until the coating is crisp but not browned, about 6 minutes. Remove to a rack set on a baking sheet to drain. (The chicken will not be fully cooked at this stage.) Let the oil temperature return to 350 degrees F before frying the remaining chicken.
  • Double-fry the chicken: Increase the oil temperature to 375 degrees F. Working in two batches, fry the chicken again until the coating is browned and very crisp, 4 to 6 minutes for wings and 6 to 8 minutes for drumsticks. Adjust the heat as necessary to maintain a temperature of 350 degrees F. Remove with tongs and transfer to a clean rack set on a baking sheet; brush all over with the sauce. Sprinkle with sesame seeds.

These sticky chicken drumsticks with Korean marinade are moreish finger food. Try them with coleslaw and salads at a summer picnic - but take napkins!

16 chicken drumsticks
coleslaw , to serve
sliced red chilli and spring onions, to serve
3 tbsp soy sauce
2 shallots , roughly chopped
2 tbsp honey
large piece ginger , finely grated
8 garlic cloves , finely grated
2 tsp chilli flakes
3 tbsp mirin

Steps:

  • Tip all of the marinade ingredients into a mixing bowl with a good grinding of pepper and whisk them together. Score the drumsticks with a sharp knife, if you like, and toss them in the marinade. Cover and chill for as long as you can - overnight is good but 24 hrs is even better.
  • Heat the oven to 160C/140C fan/gas 4. Lay the drumsticks on a shallow roasting tray and spoon over any excess marinade from the bowl. Roast the chicken for 40 mins, then baste with the sticky juices in the tin. Turn the oven up to 220C/200C fan/gas 8 and continue to cook the chicken for 20 mins more, or until caramelised (it's fine for it to char a little). Use tongs to lift the chicken onto a platter and scatter over some sliced red chilli and spring onions, if you like. Serve with coleslaw and plenty of napkins. Cold beers are optional.

3 tablespoons korean hot chili paste
1 cup sesame oil
1 1/2 cups kinder's mild spicy bbq sauce or 1 1/2 cups marinade
2 tablespoons sesame seeds
1 whole lemon, squeezed
1 lemon, sliced
5 -6 chicken legs

Steps:

  • Mix all ingredients in a bowl excluding the sliced lemon and the chicken legs. Once the mixture becomes a thick, yet fluid sauce, place chicken legs into a large Ziploc bag with the sliced lemon evenly distributed, Then, pour the sauce in and make sure it covers all of the chicken. Seal the bag and store over night for best results (If not, at least 4 hours).
  • Place chicken onto a large cooking tray with space in between each piece. Make sure each is covered in sauce (generously!). Preheat oven to 400°F When placing in oven, lower heat to 350 F and cook for 30 minutes. Flip over the chicken and cook for another 30 minutes.
  • Feast and enjoy!

⅔ cup gochujang (Korean hot pepper paste)
½ cup soy sauce
⅓ cup brown rice vinegar or unseasoned rice vinegar
⅓ cup sugar
¼ cup fish sauce
¼ cup gochugaru (coarse Korean red pepper powder)
¼ cup grapeseed or vegetable oil, plus more for grill
¼ cup Worcestershire sauce
3 Tbsp. toasted sesame oil
2 Tbsp. Diamond Crystal or 1 Tbsp. plus ½ tsp. Morton kosher salt
2 Tbsp. ground coriander
2 tsp. freshly ground black pepper
12 large chicken drumsticks (about 3 lb.)
Steamed white rice (for serving)

Steps:

  • Whisk ⅔ cup gochujang, ½ cup soy sauce, ⅓ cup brown rice vinegar or unseasoned rice vinegar, ⅓ cup sugar, ¼ cup fish sauce, ¼ cup gochugaru, ¼ cup grapeseed or vegetable oil, ¼ cup Worcestershire sauce, 3 Tbsp. toasted sesame oil, 2 Tbsp.   • Place 12 large chicken drumsticks (about 3 lb.) in a large resealable plastic bag and pour in remaining buldak sauce. Seal bag and chill at least 1 hour and up to 12 hours.
  • Prepare a grill for high indirect heat (for a gas grill, leave 1 or 2 burners off; for a charcoal grill, bank coals on one side); oil grate. Remove drumsticks from sauce, letting excess drip back into bag, and arrange over indirect heat; transfer sauce to a clean small bowl. Cover grill and grill drumsticks (this is a low-and-slow heat situation), brushing with reserved sauce and turning every 5 minutes or so, until sticky, well-coated, and cooked through (an instant-read thermometer inserted into thickest part of chicken and avoiding bone should register 165°), 30-40 minutes.
  • Transfer drumsticks to a platter and serve with copious amounts of steamed white rice. Do ahead: Buldak sauce can be made 3 days ahead. Cover and chill.
