PEACH KUCHEN
This is my favorite recipe. It's quick, easy and delicious. I've made it with both canned or fresh peaches

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch springform pan. Sift together the flour, baking powder and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Beat in the flour mixture. Spread dough with hands over the bottom and 1 inch up the sides of prepared springform pan. Arrange peach slices in a spoke pattern over the dough. Sprinkle with sugar and cinnamon.
- Bake in the preheated oven for 35 to 40 minutes, or until golden brown.

RICH FRUIT KUCHENS

- In a large bowl, dissolve yeast in warm water. Add the milk, sugar, salt, oil, egg and 2-1/2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Place in a greased bowl, turning once to grease top. Do not knead. Cover and refrigerate overnight., The next day, for custard, whisk the eggs, cream and sugar in a large bowl until combined; set aside. Divide dough into 4 portions. , On a lightly floured surface, roll each portion into a 10-in. circle. Press each circle onto the bottom and up the sides of an ungreased 9-in. pie plate. Arrange 2 to 2-1/2 cups of fruit in each crust. Pour 1 cup custard over fruit., For topping, combine the sugar, flour and cinnamon in a small bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle 1/3 cup over each coffee cake. Cover edges of dough with foil. Bake at 350° for 35-40 minutes or until golden brown and custard reaches 160°.

APPLE KUCHEN
These bars should be made by patient bakers with a bit of time - they look best when the apples are lined up in neat columns. This is not to say that it makes any difference in the way they taste.

- Preheat the oven to 450 degrees. Lightly grease and flour a 9x13-inch pan.
- To make the crust: Place the flour, sugar, and salt in a large bowl or food processor fitted with a steel blade and mix to combine. Add the vanilla and butter, a little at a time, and mix until it resembles cornmeal. Press into the prepared baking pan and transfer to the oven. Bake until slightly golden but not brown, about 12 to 15 minutes. Set aside to cool.
- Lower the oven temperature to 400 degrees.
- To make the filling: Place the cream cheese, sugar, and vanilla in the bowl of a mixer fitted with a paddle and beat until creamy. Add the egg, mix to combine, an pour over the cooled crust.
- Place the sugar and cinnamon in a small bowl and mix to combine.
- Place the apples on top of the filling in two or three columns. Sprinkle with the cinnamon sugar and transfer to the oven. Bake until firm and a rich brown, about 20 minutes. Cut into 20 to 24 pieces.
KUCHEN
This is a German coffee cake that was handed down from my Grandmother. These freeze very well and can be stacked two to a package with waxed paper between. The prep time is estimated.If you wrap them in saran wrap and then in foil they should stay good indefinately. I have kept them in the freezer for at least 5 months.

Steps:
- Mix the ingredients for the crust,well;Divide into 7 balls.
- Roll out each and put into pie tins.
- Arrange fruit (apples peaches,rhubarb or any other fruit you prefer), in single layer, on the dough.
- Sprinkle sugar on the fruit.
- Mix together filling ingredients and pour on the fruit.
- (I like more filling so I make enough for 8 kuchen).
- Sprinkle with cinnamon.
- Bake 375º till filling is set.
- About 33 minutes (If you stick a table knife in filling and it comes out clean it s done.).
PULL-APART KUCHEN
Also known as monkey bread, this version of kuchen is made by rolling balls of dough in ground pecans and semisweet chocolate. Hot from the oven, it takes some restraint to wait for the kuchen to cool long enough to avoid burning you fingers as you pull the pieces apart. - For the dough:
- In a small bowl, combine the water and yeast and stir to dissolve. Let stand for 10 minutes or until foamy.
- Place the yolks in the bowl of a stand mixer fitted with the paddle attachment. In a small saucepan, heat the butter and milk over medium-low heat until the butter has melted. With the mixer running on low speed, carefully pour the butter mixture into the yolks, and mix until combined. Let stand until just warm to the touch.
- With the mixer on low speed, add the salt, sugar, and yeast mixture, mixing until just combined. Stop the mixer and add 2 cups of the flour, then mix on low speed until just incorporated. There will still be some lumps. Add the remaining 2 cups flour and mix for 30 seconds. Increase the speed to medium and continue to mix until the dough is smooth, about 5 minutes; it will still be sticky.
- Lightly butter a large bowl. Using a plastic dough scraper, transfer the dough to the bowl. Turn to coat the dough with butter. Cover with a kitchen towel or plastic wrap and let rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.
- For the topping:
- Place the pecans, chocolate, and sugar in a food processor and pulse until the mixture has a sandy consistency.
- Set aside. Butter and sugar a 12-cup (l0-inch) Bundt pan.
- Pour the melted butter into a small bowl. Pull off small pieces of the dough, and roll into balls about the size of a golf ball. Roll in the butter, then in the nut and chocolate mixture to coat, and place in the prepared pan. Line the bottom of the pan and then stack more coated balls on top until all of the dough is used. Arrange the balls (and make smaller balls if necessary) so that the top layer is fairly even. Cover with a kitchen towel or plastic wrap and let rise in a warm spot for about 1 hour, or until doubled in size. Reserve any remaining melted butter.
- Position a rack in the middle of the oven and preheat the oven to 350degreesF. Brush the top of the kuchen with any remaining melted butter. Bake for 45 to 50 minutes, or until the top is dark brown and a skewer inserted in the center comes out clean. The melted chocolate and sugar will be hot, so be careful.
- Let the kuchen stand for 3 to 5 minutes, then turn out onto a cooling rack and let cool for 15 minutes. Serve warm.
PEACH KUCHEN
"KUCHEN IS a filling dessert for this German meal. It's not too sweet, and you can use virtually any of you favorite fruits. As a child, I took great pride in arranging the fruit in the pan. We always made this dessert on the same day of the meal so it would be warm and fresh. A dollop of whipped cream on top was an added treat!

- Preheat oven to 400 degrees. Place flour, butter, 2 teaspoons sugar, salt, and baking powder in a 9-by-13-inch baking dish. Cut ingredients together until the mixture resembles cornmeal. With hands, press mixture onto bottom and sides of pan, evenly coating.
- Arrange peaches evenly over top of crust. In a small bowl, combine the remaining 1/2 cup sugar and cinnamon and sprinkle over peaches.
- Place in oven and bake for 10 minutes, or until crust begins to turn golden and sugar is bubbling.
- Meanwhile, in a medium bowl, combine heavy cream and egg yolks. Remove kuchen from oven and pour cream-egg yolk mixture over peaches. Lower oven temperature to 350 and bake kuchen 20-30 minutes more, until custard mixture is set. Allow to cool slightly, then cut. Serve warm.
EASY APPLE KUCHEN
One of my mother's favorite recipes. Great with your morning coffee or a cold glass of milk.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat milk, shortening, egg, and vanilla extract together in a bowl until smooth. Stir 1 1/2 cups flour, 1/2 cup sugar, baking powder, and salt into milk mixture until dough comes together. Spread dough out into the bottom of a rimmed baking sheet.
- Spread apples over the dough on the baking sheet.
- Stir 1 cup sugar, melted butter, 1/4 cup flour, and cinnamon together in a bowl until topping is combined. Sprinkle topping over apples.

FRANK'S CINNAMON KUCHEN
This is my late father's recipe. He did not make it with fruit like a ton of other kuchen recipes that I have seen. Its a cinnamon german coffeecake that he helped sale at my hometown's annual summer festival. He was part of the Knights of St.John and this is the kuchen that they sold every year at the festival. I sometimes drizzle vanilla glaze or icing on the top, but this is my doing and not part of the original recipe. One more thing..this will NOT rise up a lot. It rises only a small bit and the dough will not fill up and touch the edges of the round cake pans.

Steps:
- Scald milk and add butter, sugar,and salt.
- Dissolve yeast in warm water and add to milk mixture.
- Beat in eggs, then beat in flour and nutmeg.
- Cover, and let rise until double, about an hour.
- Divide into 3 pieces.
- Place the 3 pieces into 3 separate greased round cake pans.
- Cover and let rise again.
- For the topping: Spread the 1/2 cup melted butter all over the tops of the 3 kuchens.
- With finger, press holes one inch apart all over the top of the kuchens.
- Combine the brown sugar, cinnamon and soft butter.
- Divide brown sugar mixture evenly over the top of the kuchens.
- Bake in 325 degree oven for about 20 min or until golden brown.
- Note: After its cooled, you can add a vanilla glaze over the tops for an extra special treat.
