BEEF A LA "MANLY MAN"
Steps:
- Heat the grill. Heat the oven to 450 degrees F.
- Season the filet with 1 tablespoon olive oil, salt, and pepper and set aside. In a medium saute pan, heat the butter on medium high and add the leeks. Sweat the leeks allowing no color, just cook until clear. Add the cream, 1 clove of the garlic and the blue cheese and turn heat to low and simmer for about 20 to 25 minutes, or until the cream has thickened. Add salt and pepper, to taste, and set aside.
- Place the filet on the hot grill and mark on the both sides. Place the steak in the oven to finish cooking to desired temperature. Medium rare is about 12 to 15 minutes. Pull from the oven and let rest for 10 minutes before cutting. In a large saute pan, heat 2 tablespoons of olive oil on high heat and add 2 cloves of minced garlic, and cook quickly until golden brown. Add in the spinach and turn heat to medium. Begin turning the spinach until wilted completely. Season with salt and pepper.
- To plate, use a warm plate and place the spinach first. Slice the filet in 1/2, width-wise. Place the bottom half on the spinach and pour 2 tablespoons of the leek mixture on the filet and place the second part of the filet on top. Spoon 3 to 4 tablespoons of the leeks on top of the filet. Place 3 to 5 onion rings on top of the filet and serve hot.
- Beer Battered Onion Rings:
- 1 bag batter mix
- 1 dark ale beer
- 1 large red onion, sliced in 1 inch rings
- Heat a fryer or a deep pot halfway filled with oil to 375 degrees F.
- In a bowl, mix the batter and beer and whisk until thick. Coat the onion rings and drop into the hot fryer. Fry until golden brown and place on a paper towel to absorb the excess grease. Salt while hot.

- Place mushrooms and onion in a 3-qt. slow cooker. Sprinkle beef with salt and pepper. In a large skillet, heat 1 teaspoon oil over medium-high heat; brown meat in batches, adding more oil as needed. Transfer meat to slow cooker., Add wine to skillet, stirring to loosen browned bits from pan. Stir in broth and Worcestershire sauce; pour over meat. Cook, covered, on low 6-8 hours or until meat is tender., In a small bowl, mix cornstarch and cold water until smooth; gradually stir into slow cooker. Cook, covered, on high until gravy is thickened, 15-30 minutes. Serve with mashed potatoes.

CREOLE BEEF TIPS
I used Chef Paul Prudhomme's low fat cooking techniques to create this very low fat and flavorful dish. The secret here is organization. Get all the prep work done, line up the ingredients and it really comes together quite fast.

Steps:
- Brown your flour in a dry pan. This will take about 10-12 minutes. Stir often so the flour does not burn. All you want here is a light brown color. (It will get darker in the later stages when you add it back into the vegetables). Transfer to a bowl and set aside.
- Season tips with 1 tsp of seasoning. Cover and set aside.
- Chop all veggies and set aside.
- Heat a non-stick pan over medium heat for about four minutes. Add the beef tips and brown well on all sides. When done transfer beef and all juices to a bowl.
- Add the onion, celery and bell pepper to the pan. Add ½ cup stock, 1 tsp seasoning and 1 tsp Worcestershire. Cook and stir until all liquid has evaporated.
- Let the veggies stick to the pot one minute. Stir then let stick one more minute.
- Add garlic. Cook and stir until fragrant.
- Add ½ cup stock and browned flour. Cook for one minute, stir then cook one more minute.
- Add ½ cup stock, meat and juices, mushrooms, tomatoes and remaining 1 tsp of Worcestershire.
- Bring to a boil, cover and simmer 10 minutes. Remove cover and simmer until desired consistency.
- Serve over brown rice.

- Heat olive oil in a large skillet over high heat; cook and stir onion in hot oil until browned, about 15 minutes. Add beef, garlic, ground black pepper, and cracked pepper to the hot oil; cook until stew meat is browned and garlic is golden, about 10 more minutes.
- Pour water, red wine, soy sauce, and Worcestershire sauce into a slow cooker and stir brown gravy mix and kosher salt into wine mixture until gravy mix dissolves; add beef mixture to slow cooker and stir to combine. Cook on High until mixture nearly comes to a boil, about 1 hour; reduce heat to Low and cook until beef is tender and sauce has thickened, 1 more hour.
