To come up with this dish, I used a number of different recipes plus some ideas of my own. It's great for potluck because it's made the night before and the flavor keeps getting better. Whenever I serve it I'm inundated with recipe requests.

1 head cabbage, shredded
1 red onion, thinly sliced
½ cup chopped green bell pepper
½ cup chopped red bell pepper
½ cup shredded carrots
½ cup sliced pimiento-stuffed olives
½ cup white wine vinegar
½ cup canola oil
½ cup white sugar
2 teaspoons Dijon mustard
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon mustard seed

Steps:

  • Mix cabbage, onion, green bell pepper, red bell pepper, carrots, and olives together in a large bowl.
  • Whisk vinegar, oil, sugar, Dijon mustard, salt, celery seed, and mustard seed together in a saucepan. Bring to a boil; cook and stir until sugar is dissolved, about 1 minute. Pour hot dressing over cabbage mixture and toss gently. Cover the bowl with plastic wrap and refrigerate for at least 8 hours or overnight.

1 medium head cabbage, shredded
1 medium red onion, thinly sliced
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
1/2 cup sliced pimiento-stuffed olives
1/2 cup white wine vinegar
1/2 cup canola oil
1/2 cup sugar
2 teaspoons Dijon mustard
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon mustard seed

Steps:

  • Combine cabbage, onion, peppers and olives. In a large saucepan, mix remaining ingredients; bring to a boil. Cook and stir 1 minute. Pour over vegetables, and stir gently. Cover and refrigerate overnight. Mix well before serving.

MAKE AHEAD, OVERNIGHT COLESLAW RECIPE



Make ahead, overnight coleslaw recipe image

1 kg of sliced cabbage (2 pounds)
100 gr sliced carrot (2 cups)
100 gr sliced pepper (one large)
1 tbsp salt
2 tbsp sugar
4 tbsp white vinegar
4 tbsp vegetable oil
200-250 ml. hot water (as needed)

Steps:

  • Thinly chop or slice the cabbage, carrots, and pepper.
  • Add salt and sugar and mix well.
  • Combine hot water, oil, and vinegar and pour over the vegetables.
  • Mix together and let sit for a bit at room temperature.
  • Fill the coleslaw into jars or airtight containers
  • Refrigerate overnight. Taste best after 24 hours.

CUCUMBER-CABBAGE SLAW

1/4 cup mayonnaise
1/4 cup sour cream
3 tablespoons white wine vinegar
2 teaspoons sugar
1 teaspoon celery seeds
1/2 teaspoon hot sauce
Kosher salt and freshly ground pepper
1/2 head green cabbage, shredded (about 8 cups)
2 English cucumbers, sliced into half-moons
2 carrots, grated
2 scallions, sliced

Steps:

  • Whisk the mayonnaise, sour cream, vinegar, sugar, celery seeds, hot sauce, 1 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the cabbage, cucumbers, carrots and scallions; toss. Season with salt and pepper.

1 tablespoon sesame oil
2 tablespoons lime juice
2 tablespoons sugar

Steps:

  • Combine the first 6 ingredients in a bowl. In another bowl, mix peanut and sesame oil, lime juice, and sugar until dissolved, then season with salt and pepper to taste. Pour over cabbage mixture.

1 cup brown sugar
½ cup water
1 cup molasses
1 teaspoon ground allspice
1 teaspoon ground cinnamon

2 teaspoons vanilla extract
1 ¾ cups raisins
1 ¾ cups dates, pitted and chopped
2 cups pecans, chopped
1 ½ cups chopped candied fruit
½ teaspoon salt
1 teaspoon baking soda
3 ¼ cups all-purpose flour

Steps:

  • Combine the butter, brown sugar, water, molasses, allspice, cinnamon, cloves, ginger, and black pepper in a saucepan. Bring to a simmer over medium heat, then remove from the heat, and allow to cool. Once warm to the touch, stir in the vanilla extract, and pour into a mixing bowl. Cover, and let stand at room temperature at least 8 hours.
  • Stir in the raisins, dates, pecans, and candied fruit. Whisk together the salt, baking soda, and flour; stir into the fruit mixture until no dry lumps remain. Refrigerate 3 to 4 hours until firm.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Form the mixture into golf ball-sized balls. Place onto ungreased baking sheets 1 1/2-inches apart, and flatten with your palm to 1/4-inch thick. Bake in the preheated oven until the edges are golden, 8 to 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

CHILEAN CABBAGE AND AVOCADO SLAW



Chilean Cabbage and Avocado Slaw image

Coleslaw meets guacamole here in this utterly simple mix of shredded cabbage, salt, lemon, and puréed avocado. The chef Iliana de la Vega, who was born in Oaxaca, Mexico, served it at a delicious Latin-themed lunch she prepared at the "Healthy Kitchens, Healthy Lives" conference this year at the Culinary Institute of America in Napa Valley. I couldn't get enough of it. I sat with Iliana at the lunch and asked her about the salad. "Just salt the cabbage, let it sit for a while, then add lots of lemon juice and the mashed avocado," she said. That really is all there is to it. Shred the cabbage thin and for best results let it sit, after salting generously, for an hour or more, to tenderize it and draw out strong-tasting juices.

1/2 large cabbage, cored and finely shredded (about 1 pound cabbage, which produces 5 cups shredded cabbage)
Salt to taste
4 to 5 tablespoons fresh lemon juice (more to taste)
1 large or 1 1/2 medium-size ripe avocados
Freshly ground pepper (optional)

Steps:

  • Place shredded cabbage in a large bowl or colander and salt generously. Tossand rub the salt into cabbage with your hands. Let sit for 1 hour or longer (refrigerate if longer than 1 hour). If cabbage tastes too salty, rinse, then squeeze out excess moisture and transfer to a dry bowl.
  • Toss cabbage with half the lemon juice.
  • Mash avocados in a mortar and pestle, or in a bowl using a fork, potato masher or a whisk. Add salt to taste and remaining lemon juice and mix until smooth. Scrape into the bowl with cabbage and stir together until shredded cabbage is thoroughly coated with mashed avocado. Taste and adjust salt. Add pepper if desired. If mixture isn't creamy, add more avocado.
