WINE, BALSAMIC AND ROSEMARY LAMB CHOP LOLLIPOPS

Steps:
- Combine the wine, garlic and rosemary in a small saucepot and bring to a bare simmer. Remove from the heat, add the balsamic and olive oil, and let cool to room temperature.
- Place the lamb chops in a large resealable plastic bag and cover with the cooled marinade. Refrigerate for 1 to 2 hours.
- Remove the chops from the marinade and pour the marinade into a small saucepan along with the honey. Bring the mixture to a brisk simmer and reduce until slightly syrupy, 5 to 10 minutes.
- Meanwhile, pat the lamb chops dry and sprinkle all over with salt and pepper. Heat a large grill pan over medium-high until very hot. Lightly brush with oil.
- Grill the chops, turning once, for 3 to 3 1/2 minutes per side for medium.
- Serve the chops garnished with rosemary sprigs and drizzled lightly with the reduced marinade.
LAMB CHOPS WITH BALSAMIC REDUCTION
This recipe for lamb chops is a favorite in my house. It is an easy and quick recipe for two people (we eat two chops each). Rosemary and thyme give it great flavor. If you double the recipe, remember that the sauce will take longer to reduce.

- In a small bowl or cup, mix together the rosemary, basil, thyme, salt and pepper. Rub this mixture onto the lamb chops on both sides. Place them on a plate, cover and set aside for 15 minutes to absorb the flavors.
- Heat olive oil in a large skillet over medium-high heat. Place lamb chops in the skillet, and cook for about 3 1/2 minutes per side for medium rare, or continue to cook to your desired doneness. Remove from the skillet, and keep warm on a serving platter.
- Add shallots to the skillet, and cook for a few minutes, just until browned. Stir in vinegar, scraping any bits of lamb from the bottom of the skillet, then stir in the chicken broth. Continue to cook and stir over medium-high heat for about 5 minutes, until the sauce has reduced by half. If you don't, the sauce will be runny and not good. Remove from heat, and stir in the butter. Pour over the lamb chops, and serve.

I made this for a Seder dinner, and it was a great hit. Use a good red wine, as you will only be needing one glass for the lamb, and the rest can be served to your guests.

- Remove the leaves from the rosemay sprigs. Remove the skin from the garlic. Crush both with the salt and pepper. When all has been crushed almost to a paste, push this paste into each side of each lamb chop. Refrigerate for about 30 minutes to let the seasonings set in. Preheat the oven to 200. Have ready a large skillet, with lid, that can hold all the lamb and is able to go into the oven. Have ready a large serving platter that can hold all the chops. Heat the pan and add the olive oil. Put in the chops and sear them on both sides, about 3 minutes each. Put the pan in the oven, covered for about 10 minutes. Check that the meat is cooked to at least 125 degrees for rare. Remove the pan from the oven and put the chops on the serving platter. Cover to keep warm. If there is a lot of liquid in the pan, pour most of it off. Return the pan to the stove and add the shallots. Saute until they are translucent, then deglaze the pan with the red wine, scraping the bottom to get all the good bits up. Add the balsamic vinegar and let that cook down to about half. Add the butter and whisk it in, the sauce will thicken and take on a shiney appearance. Dip and roll each chop in the sauce and return it to the platter. Pour the remaining sauce over the chops. Garnish with parsley and sprigs of rosemary if desired.

- Put the celeriac, swede and potato in a large steamer, then steam for 25 mins until softened.
- Meanwhile, heat the oil in a large non-stick frying pan and fry the onions for 10 mins until softened and golden. Push to the side of the pan, then add the lamb and rosemary and stir-fry over the heat until browned, but still a little pink in the middle - try not to overcook it as it will become tough and will need a longer cook to become tender again. Add the bouillon and balsamic vinegar with 200ml boiling water. Stir to make a sauce.
- Mash the steamed veg and spoon half into the centre of two plates. Top with half the lamb and gravy, scatter with the parsley and serve with the spinach and peas. Chill the remaining lamb and veg to reheat and serve on another evening.

Steps:
- With a sharp knife, pierce the leg in several places and soak it for 5 hours in the olive oil mixed with the vinegar.
- Place it on a roasting rack and rub with the salt, pepper, rosemary and garlic.
- Bake until a thermometer reads 140*. 1 ¼-1 ¾ hours.
- Baste with the marinade several times during the roasting.
- Remove from the oven and let sit 30 minutes before carving.

- Trim fat from lamb. Combine vinegar, 2 teaspoons rosemary, and minced garlic in a large zip-top plastic bag. Add the lamb to bag, and seal. Marinate in refrigerator for at least 6 to 12 hours, turning occasionally.
- Remove lamb from bag, reserving marinade. Sprinkle lamb with pepper. Combine the breadcrumbs and 1 teaspoon chopped rosemary, and pat breadcrumb mixture into meaty side of lamb. Place lamb, meat side up, on a jelly-roll pan coated with cooking spray. Insert a meat thermometer into the thickest part of lamb, making sure not to touch bone. Bake lamb at 450° for 20 minutes or until the meat thermometer registers 145° (medium-rare) or until the lamb is desired degree of doneness.
- Heat olive oil in a large nonstick skillet over medium-high heat; add shallots, and sauté for 4 minutes. Add white wine and reserved marinade, and bring to a boil. Reduce heat, and simmer, uncovered, 8 minutes or until liquid almost evaporates. Add chicken broth, and bring to a boil. Reduce heat, and simmer, uncovered, until reduced to 1/3 cup (about 5 minutes). Combine honey and cornstarch, and add to the broth mixture. Bring to a boil, and cook for 1 minute, stirringconstantly.
