LAMB AND RED WINE STEW

2 tablespoons olive oil
1 pound lamb stew meat, cut into 1-inch cubes
Kosher salt
3 carrots, peeled and diced
2 ribs celery, diced
2 cloves garlic, smashed and peeled
1 onion, diced
2 tablespoons all-purpose flour
2 tablespoons tomato paste
1 1/2 cups dry red wine
1 1/2 cups low-sodium beef broth
5 sprigs fresh thyme
1 bay leaf
1 cup green Cerignola olives, smashed and pits removed
2 tablespoons chopped fresh Italian parsley
Mashed potatoes or crusty bread, for serving

Steps:

  • Place a medium Dutch oven over medium-high heat. Add the oil and heat another 30 seconds. Dry the lamb meat well and sprinkle with 1 1/2 teaspoons salt. Place the meat in the pot and leave undisturbed for about 4 minutes. When the first side is deeply browned, use tongs to flip the meat. Continue to brown the meat for about 4 minutes on each side until the pieces are evenly browned on all sides, about 20 minutes total. Use a slotted spoon to remove the meat to a plate. Add the carrots, celery, garlic and onions. Season with 1/2 teaspoon salt and cook, stirring often, until fragrant and beginning to soften, about 5 minutes. Stir in the flour and tomato paste and cook for 1 minute more. Deglaze with the red wine. Bring to a simmer and cook, stirring often to reduce slightly, about 5 minutes. Stir in the broth, thyme, bay leaf and reserved meat. Reduce the heat to medium-low to maintain a gentle simmer. Cover and simmer for 1 hour.
  • Stir in the olives. Partially cover the pot, leaving a small opening, and simmer until the meat is completely tender, about 30 minutes more. Stir in the parsley. Serve with mashed potatoes or crusty bread to sop up the juices.

This is a play on tsimmes, a traditional Jewish casserole. The flavors of North Africa and the Middle East are utilized for this lamb shoulder. Braising the meat in red wine yields a tender cut of meat without a lot of work.

1 lamb shoulder, boned, about 4 pounds
Kosher salt and pepper to taste
1 large onion, peeled
1 tablespoon minced garlic
1 tablespoon minced ginger, or 1 teaspoon dried
1 cinnamon stick
1 tablespoon ground cumin
2 tablespoons ground coriander
10 allspice berries or a pinch of ground allspice
1/2 to 3/4 bottle not-too-soft red wine
3/4 cup pitted prunes
3/4 cup pitted apricots
Chopped parsley or cilantro for garnish

Steps:

  • Season the meat with salt and pepper and put it in a pot that will fit it snugly and can later be covered. Add the spices and a 1/2 bottle of wine. Bring to a boil, lower the heat to a slow bubble, and cover. Cook about an hour, then add onion, garlic, ginger and dried fruit, and check to make sure the liquid isn't evaporating too quickly; turn and continue to cook. Add the remaining red wine if the mixture looks dry, but essentially cook this without fuss.
  • When the meat is very tender - after about 2 1/2 hours - uncover. Check and adjust the seasoning as necessary, garnish and serve.

8 ounces boneless leg of lamb
1 large clove garlic
1/2 cup dry red wine
3 tablespoons dried cherries
Salt and freshly ground black pepper to taste

Steps:

  • If using a broiler, turn it on.
  • Wash, dry and remove excess fat from the lamb. Cut into 1/4-inch thick slices.
  • Mash the garlic and combine with the wine in a bowl large enough to hold the lamb. Add the lamb, and turn it to coat it with wine. Allow the lamb to marinate until time to cook, or at least 10 minutes.
  • If using a stove-top grill, prepare it. Remove the lamb from the marinade and broil or grill until it is brown on both sides and pink inside, 7 to 10 minutes total.
  • Add the cherries to the wine marinade, and boil until it is reduced by half. When the lamb is cooked, stir it into wine mixture. Season with salt and pepper, and serve.

1 (6-pound) leg of lamb, fat trimmed, boned out, rolled and tied by your butcher
1/4 cup extra-virgin olive oil, plus more as needed
1/2 cup freshly ground black pepper, plus more as needed
1 cup chopped fresh basil leaves
Kosher salt
4 medium red onions
1/2 cup red wine
1/4 cup balsamic vinegar
1 cup beef stock
1 cup dried sour cherries, reconstituted in hot water; then drained
1 tablespoon butter

Steps:

  • Preheat oven to 400 degrees F.
  • Rub the lamb leg all over with olive oil, and then the pepper and basil. Let the lamb sit at room temperature for at least 20 minutes.
  • Season the lamb all over with salt, set fat-side up on a rack in a shallow roasting pan, and roast for 30 minutes. Reduce heat to 350 degrees F. and continue to cook for about 1 hour. While the lamb is roasting, peel the onions, cut the ends off, and slice in half into 2 thick rings. Place into a baking pan, drizzle with olive oil, season with salt and freshly ground pepper, and roast alongside the lamb for the last 30 minutes or until they are soft and caramelized. The lamb is done when a thermometer placed in the thickest part of the leg reads 120 to 125 degrees F. Transfer lamb to a cutting board and let rest 10 to 20 minutes.
  • Spoon off the fat from the roasting pan. Set the pan over 2 burners, add the red wine and balsamic and reduce by half, stirring and scraping up any browned bits from the bottom of the pan. Add the beef broth and reduce until sauce reaches desired consistency. Whisk in the sour cherries and butter. Season with salt and pepper and serve with slices of lamb and red onions.

I made this yesterday for my husband. i took inspiration for it from aunty mags santorini lamb recipe on zaar. I used a new enamel roaster tin that o got after searching charity shops/ second hand stores for a casserole dish. In the end I went to Argos and bought a huge enamel roaster that came with a free smaller one for £20 in the end my lamb actually fit into the free smaller pot ! winner! I used whatever herbs I had knocking about id dint have any fresh rosemary and was nearly out of dried mint but I did have some fresh oregano and some fresh mint and some dried sage etc. I would say to throw in whatever you have to be honest. I did use half a bottle of red wine but half way through I topped it up with the other half. I always feel bad when I have to use a whole bottle for a dinner so I bought myself a bottle so it was fair haha! I like recycling into another dish so I then made the leftovers of this into a Moroccan style dish which I will be posting later. I served this with my bacon and olive oil roast potatoes. Also my camera battery died before I could take picture of it cooked so I only have prep pics sorry! I also opened my thyme honey from my honey moon in Greece which tasted very good

2 1/4 lbs leg of lamb
200 g onions (peeled and whole about 3)
1 tablespoon olive oil
300 g carrots (peeled and chopped into large chunks)
1 lemon, juice and zest of
3 teaspoons dried mint
3 teaspoons dried sage
3 teaspoons dried rosemary
1 tablespoon fresh oregano
1 tablespoon of fresh mint
3 garlic cloves, peeled and sliced
750 ml red wine (general quaffing plonk)
1/2 teaspoon white pepper
1 tablespoon honey

Steps:

  • put the lamb into a pot/ casserole dish/ so that there is is anug fit but there is enough room for the veggies.
  • cut a cross in the top of each onion
  • mix the wine herbs honey pepper garlic and oil together and marinade the lamb in it for an hour or overnight if possible.
  • add the veggies to the the pot and preheat oven to gas mark 6 and put lid on. put in oven for 3 hours.
  • half way through open and check it turn over teh lamb if the liquid does not totally cover it so that the top gets a good cooking in the liquid. you may need to top up the liquid with a little water at this stage.
  • when done hack off chunks of the lamb into the liquid and serve with roast potatoes save nay leftover as you can turn them into a morrocan cous cous thingy which i will be posting shortly.

8 ounces pitted dried cherries (Trader Joe's)
1/2 cup olive oil
1/2 cup unsalted butter
4 lbs lamb shoulder, trimmed of fat, cut into 1 1/2-inch cubes
kosher salt & freshly ground black pepper
2 yellow onions, finely chopped
2 teaspoons toasted ground coriander
1 teaspoon cinnamon
1 teaspoon freshly grated ginger
1 pinch saffron thread
2 teaspoons preserved lemons, chopped (or the zest of 2 lemons, finely chopped)
3 -4 cups rich dark stock (beef,lamb or roasted chicken)
2 tablespoons honey
3 tablespoons toasted sesame seeds

Steps:

  • Rehydrate the cherries in a bowl with about a cup of warmed stock. Let soak until needed.
  • In a large, heavy saute pan, heat 2 T olive oil with 2 T butter over high heat. Season the lamb with salt and pepper and saute in batches, not overcrowding the pan, so all sides are browned. Transfer to a large saucepan or casserole. Continue this process until allo the lamb is well browned.
  • Reheat the saute pan over medium-high heat. Add olive oil and saute the onions to translucent, about 10 minutes. Add the spices and cook until the aromas start to come up, 2-3 minutes. Deglaze with some of the stock and add this to the pan with the lamb. Add the remaining stock and bring to a boil. Reduce the heat, cover and simmer for 45 minutes. Add the rehydrated cherries with their soaking liquid and the preserved lemon (or lemon zest). Continue cooking for about 15-20 minutes more, or until the lamb is very tender. Add the honey and season to taste with additional salt and pepper.
  • Serve over couscous, mixed with a few chopped Kalamata olives. Top with toasted sesame seeds and enjoy with a glass of Cabernet Franc.
  • Notes:
  • This dish has A LOT of butter. By mistake, I only used 2 T, in stead of ½ cup Next time, I wouldn't use any at all. There is enough olive oil & liquid from the lamb to sufficiently cook the lamb without the butter. This will cut calories by A LOT, too!
  • I toasted the ground coriander in a frying pan until it was smoky & fragrant.
  • I used beef broth, and lemon zest.
