Late Summer Fruits in Rose image

Pluots, plums, and berries soften as they macerate in wine. This soaking has an effect like cooking: The juices are drawn out to form a syrup.

Number Of Ingredients 6

3 plums
3 pluots
1/2 bottle (about 2 cups) dry rose
1/2 cup sugar
1/2 pint (about 1 cup) blackberries
1/2 pint (about 1 1/3 cups) raspberries

Steps:

  • Prepare an ice-water bath. Score an X on the bottom of each plum. Bring a medium saucepan of water to a simmer. Add plums; cook until skins begin to loosen at the X, about 1 minute (less if fruit is very ripe). Transfer to ice-water bath to cool. Remove skins; discard. Halve each plum to remove pit; cut each half into wedges. Repeat process with pluots.
  • Whisk wine, sugar, and 1 cup cold water in a large bowl until sugar has dissolved. Stir in plums, pluots, and berries. Refrigerate 1 hour. Divide chilled fruit and wine mixture among 6 bowls.

  • Cherries. Ripe, sweet cherries (such as the Bing and Rainier varieties) are synonymous with summer. They come and go with the season: they're ready to harvest starting in May and ending in August.
  • Figs. Fresh figs can be hard to find - they have a short season in early summer and a longer one in late summer through fall. They have a sweet flavor (almost like honey) and a squishy texture.
  • Gooseberries. These little known berries are rising in popularity throughout the country. They're mostly available from specialty growers and farmers' markets.
  • Grapes. While you can typically find grapes at your local supermarket year-round, they grow best towards the end of summer. They're a rich source of antioxidants and potassium, and bursting with refreshing juice.
  • Honeydew Melons. Honeydew is in peak season in late summer and into early fall, from August to October. Honeydew melons get their name for their hint of honey flavor.
  • Huckleberries. If you're not familiar with huckleberries, it might be because they don't grow where you live. Huckleberries are a small reddish purple berry related to blueberries and cranberries that's commonly grown throughout the Pacific Northwest region of the U.S. Their peak season is July through September.
