1 carton (10 ounces) hummus
1/4 cup finely chopped red onion
1/2 cup Greek olives, chopped
2 medium tomatoes, seeded and chopped
1 large English cucumber, chopped
1 cup crumbled feta cheese
Baked pita chips

Steps:

  • Spread hummus into a shallow 10-in. round dish. Layer with onion, olives, tomatoes, cucumber and cheese. Refrigerate until serving. Serve with pita chips.

The Mediterranean version of the ever popular Mexican layered dip. Instead of using garlic salt, I mix a large clove of pressed garlic with the hummus. Serve with toasted pita, flat bread or tortilla chips.

8 ounces prepared hummus
1/8 teaspoon cumin
1/2 cup chopped tomato
garlic salt
1/4 cup chopped cucumber
fresh ground pepper
4 ounces crumbled feta cheese
2 tablespoons chopped kalamata olives
2 tablespoons chopped parsley

Steps:

  • Combine hummus and cumin, spread on the bottom of a 9 inch pie dish.
  • Top with a layer of tomatoes, seasoned with garlic salt.
  • Add the cucumbers and sprinkle with pepper.
  • Add a layer of feta topped with olives, then parsley.

Entertain a crowd with this attractive chickpea dip - make the hummus and herby oil ahead, then assemble at the last minute

2 x 240g cans chickpeas , drained and rinsed
4 tbsp tahini
3 garlic cloves , crushed
2 tsp ground cumin
5 tbsp extra virgin olive oil
zest and juice 1.5 lemons
4 tbsp extra virgin olive oil
½ bunch parsley , leaves picked
½ bunch mint , leaves picked
juice 0.5 lemon
1 green chilli , deseeded and diced
1 tbsp olive oil
1 tsp ground cumin
1 tsp sumac
4 flour tortillas
100g pack pomegranate seeds
2 tbsp pine nuts , toasted
200g feta , crumbled

Steps:

  • In a food processor, whizz together all the ingredients for the hummus, adding about 50ml water to loosen the mixture to your desired consistency. Season, then chill for up to 24 hrs.
  • In the small bowl of a food processor or with a stick blender, whizz together all the ingredients for the herby oil. This can also be chilled for up to 24 hrs.
  • Just before you want to serve, heat oven to 200C/180C fan/gas 6 to make the tortilla chips. Mix together the oil, cumin and sumac, brush over one side of each tortilla and season. Cut each one into 8 triangles and arrange in a single layer on a baking tray (you may need to use 2 trays, or cook them in batches). Bake in the oven for 5-8 mins until crisp and lightly golden.
  • Spread the hummus over a large serving plate, drizzle with the herby oil and scatter over the pomegranate seeds, pine nuts and feta. Serve with the homemade tortilla chips.

This is a wonderful Greek-style layered dip with hummus as the base. It is a colorful and very tasty appetizer that always gets compliments. I often add a bit of chopped fresh parsley or oregano for added color.

¾ cup crumbled feta cheese
¾ cup peeled and diced cucumber
½ cup diced fresh tomato
½ cup finely chopped Kalamata olives
¼ cup olive oil
1 teaspoon dried oregano

Steps:

  • Spread the hummus in a smooth layer in an 8x8-inch baking dish.
  • Layer the feta cheese, cucumber, tomato, and Kalamata olives on top.
  • Whisk together the olive oil and oregano in a small bowl, then drizzle over the Kalamata olives. Refrigerate up 24 hours before serving.

  • Prepare hummus in advance using this recipe for creamy homemade hummus OR prepare 16-oz of quality store-bought plain hummus.
  • To make the spiced beef topping, heat 1 tbsp extra virgin olive oil in a skillet until shimmering but not smoking. Add most of the onions, keeping about 1 tbsp or so for later. Add green peppers and garlic. Cook over medium-high heat for about 4 minutes or so, stirring regularly, until softened.
  • Add lean ground beef and saute until fully browned (about 8 mins or so.) Carefully drain any excess fat and return skillet to heat. Season beef with kosher salt, pepper, allspice, sumac, and cinnamon. Stir in tomato sauce, and cook another 5 mins or so, stirring occasionally.
  • Assemble the layered hummus dip! Spread hummus in a serving bowl. Pour a generous drizzle of quality extra virgin olive oil (I used our Early Harvest Greek extra virgin olive oil.) Top with the spiced meat, fresh chopped tomatoes, parsley, the remaining red onion, and toasted pine nuts.
