My family likes these enchiladas so much that they request a turkey dinner several times a year just so I'll make this dish with the leftovers. I usually double it because I feed three growing boys-two teenagers and my husband! -Beverly Matthews, Pasco, Washington

Number Of Ingredients 13

3 cups cubed cooked turkey
1 cup chicken broth
1 cup cooked long grain rice
2 plum tomatoes, chopped
1 medium onion, chopped
1/2 cup canned chopped green chilies
1/2 cup sour cream
1/4 cup sliced ripe or green olives with pimientos
1/4 cup minced fresh cilantro
1 teaspoon ground cumin
8 flour tortillas (10 inches)
1 can (28 ounces) green enchilada sauce, divided
2 cups shredded Mexican cheese blend, divided

Steps:

  • In a large saucepan, combine the first 10 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Remove from the heat. , Place 1/2 cup turkey mixture down the center of each tortilla; top each with 1 teaspoon enchilada sauce and 1 tablespoon cheese. Roll up and place seam side down in a greased 13x9-in. baking dish. Pour remaining enchilada sauce over top; sprinkle with remaining cheese. , Cover and bake at 350° for 30 minutes. Uncover; bake 8-10 minutes longer or until bubbly.

These enchiladas are a great way to use leftover Thanksgiving turkey. Serve with sour cream and refried beans if desired.

2 cups shredded Cheddar and Monterey cheese blend
1 onion, chopped
1 (2 ounce) can sliced black olives
24 (6 inch) corn tortillas
1 (19 ounce) can red enchilada sauce
4 cups cooked turkey, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a small bowl, combine the cheese, onion, and black olives.
  • In a small skillet, heat enough oil to lightly coat one tortilla, and cook until soft. Remove and dip in enchilada sauce to coat.
  • Add turkey and cheese mixture to center of tortilla, roll and place in the prepared dish. Repeat until bottom layer of pan is covered with enchiladas. Spread enough sauce over bottom layer to cover.
  • Repeat process with a second layer; spread remaining sauce on top and sprinkle with remaining cheese mixture. Bake 20 minutes in the preheated oven, or until cheese is melted.

These cheesy & flavorful enchiladas are the perfect way to use up all that leftover turkey from the holidays!

2 teaspoons olive oil
1 green pepper (diced)
½ onion (diced)
2 cloves garlic
8 tortillas (6" each, corn or flour)
2 cups leftover turkey (or chicken)
15 ounces enchilada sauce (divided)
2 cups Monterey jack cheese (shredded, divided )

Steps:

  • Preheat oven to 400°F. Lightly grease a 9x13 pan.
  • Heat oill in a small pan. Cook onion and peppers over medium heat until tender. Stir in garlic and cook 1 minute more. Toss with the turkey and season with salt & pepper to taste.
  • Place ½ cup enchilada sauce in the bottom of the prepared pan.
  • Spread 1 tablespoon on each tortilla. Top each with ¼ cup of the turkey mixture, 2 tablespoons cheese, and the pepper mixture. Roll up and place in the pan.
  • Pour remaining enchilada sauce over top and sprinkle with remaining cheese.
  • Cover with foil and bake 15 minutes. Remove foil and bake uncovered for 5-10 minutes or until the cheese is browned and bubbly.

1 lb turkey breast tenderloin, cut in bite sized strips
16 ounces frozen peppers and onions, stir fry vegetables
10 ounces enchilada sauce
1/2 cup whole berry cranberry sauce
54 inches corn tortillas, halved
2 cups shredded Mexican blend cheese
lime wedge (optional)
fresh cilantro stem (optional)

Steps:

  • Preheat oven to 450°F
  • In extra-large skillet cook turkey in 1 Tbsp hot cooking oil over medium-high heat for 4 minutes or till no longer pink. Add veggies, enchilada sauce, and cranberry sauce. Bring to boiling. Sprinkle salt and pepper to taste.
  • In 2 quart baking dish layer 1/3 tortillas, 1/3 cheese, 1/2 turkey-veggie-sauce mix (add this part with a slotted spoon). Repeat. Then add the remaining tortillas, pour the leftover turkey-veggie-sauce juice (this is why you used the slotted spoon initially!) on top, and add the remaining cheese. Bake 10 minutes or till cheese is melted.
  • Cut into squares and garnish with limes and cilantro.

15 ounces black beans
12 small corn tortillas
1/2 red pepper
1/2 green pepper

Steps:

  • spray baking pan with pam.
  • bake or grill the turkey london broils and cut turkey into thin slices.
  • cube peppers and onion into small pieces.
  • layer corn tortillas onto pan
  • sprinkle some red enchilada sauce.
  • sprinkle cumin on each layer.
  • layer on turkey, peppers and onions, cheese, green sauce, red sauce and more tortillas ending with cheese on top (like a lasange).
  • bake at 350 degrees for 45 minutes, covered and then uncovered at the end.

This recipe is perfect for that leftover turkey after Thanksgiving! These enchiladas are full of flavor and so cheesy! Your family will love them!

Number Of Ingredients 8

12 corn tortillas (soft fried)
1/2 cup oil (for frying)
2 cups turkey, chopped
4 cups Mexican blend cheese, shredded
1/2 cup green onion, chopped
1 cup sour cream
1 (4 ounce) can green chilies, chopped
2 (10 1/2 ounce) cans cream of chicken soup

Steps:

  • In a small size skillet add 1/2 cup oil, heat to medium / high and fry all tortillas lightly, dab with paper towels to remove excess oil from tortillas, stack on top of each other to prevent them from drying out. Set aside.
  • Dice 2 cups of turkey into small pieces. Set aside.
  • In a medium size mixing bowl add cheese and chopped onions, blend well. Set aside.
  • In another medium size mixing bowl add sour cream, green chilies and soup, using a whisk, mix well. Set aside.
  • ASSEMBLING AND COOKING:.
  • Preheat oven to 350 degrees F.
  • In a 9 x13 x 2 greased baking dish add 1/2 of soup mixture to bottom of baking dish.
  • Fill each tortilla (one at a time) with about 2 tablespoons of turkey, top with 1 tablespoon cheese across the top and roll into a tight roll, place into pan on top of sauce. Repeat, making 2 rows of 6.
  • Pour remaining soup mixture evenly over enchiladas. Top with remaining cheese.
  • Bake uncovered for 35-40 minutes. Serve hot with rice and beans (optional).
  • Cook's Notes:.
  • "Chicken can also be used in this recipe. Top with sliced olives, cilantro or green onions (optional)".
