KOREAN-INSPIRED SLOPPY JOES AND QUICK PICKLES
Ground pork and beef are mixed with new ingredients like pears, sesame oil and gochujang to create this quick, easy, Korean-inspired take on the old favorite sloppy joe. The Quick Korean Pickles add a sweet crunch that rounds out the sandwich.

- Gather your ingredients.
- For the pickles: Thinly slice the cucumber 1/4 to 1/8-inch thick. In a bowl, whisk up rice wine vinegar, sugar, chili flakes, salt and sesame oil. Add sliced cucumbers and toss.
- For sloppy joes: Peel and grate the pear on a wide tooth of box grater. Peel and chop the onion and slice or grate the garlic and ginger.
- Heat a skillet over medium-high to high heat. Add the oil, 2 turns of the pan, then add the meats and brown and crumble. Season with salt and pepper. Add pear, onions, garlic and ginger and stir a couple of minutes to soften. Add soy sauce, Worcestershire, chili paste, stock, sugar and sesame oil. Bring to a bubble and reduce heat to simmer, 10 to 15 minutes.
- Serve beef on rolls with scallions and fresh or pickled chili peppers and quick pickles.
QUICK PICKLES

- Heat small saucepan over medium high heat. Add vinegar, sugar, mustard seed, salt, and garlic to the pan and cook until it begins to simmer and sugar dissolves. Toss the dill, bay leaf, and sliced cucumbers together in a heat-proof bowl. Pour the simmering liquid over the cucumbers and stir to evenly coat. Allow to cool to room temperature or chill before serving.
HOW TO PICKLE RED ONIONS

- Slice the red onions as thin as you can. I use a mandoline but a sharp knife works well, too.
- Stuff all the red onions in the jar of your choice. A bowl works too but a jar is easier to store in the fridge.
- In a measuring cup, combine apple cider vinegar, salt, sugar, and warm water. Stir to dissolve the sugar and salt. Pour the pickling mixture over the sliced onions, making sure they are immersed in the liquid, and let them set for an hour.
- After an hour, cover and store in the fridge for up to three weeks.

RACHEL'S DICKLES
Originally these were just called "dickles" but my boyfriend's family found such humor in the name that they renamed them after me. This has been a staple party food in my family for ages and it sounds strange but it tastes awesome!! It's easy and fast and the name is great for a laugh!! **Serving numbers are up to you and prep time is affected accordingly**

Steps:
- Use a knife to spread the cream cheese on the dried beef. (This can be a little tricky so be gentle with the beef and you'll have the technique down in a snap.).
- Wrap the beef around the pickles and cut into bite-size pieces.
- Secure with toothpicks if necessary.
- EXTRA NOTES:.
- I know LowFat or NoFat cream cheese is healthier but the taste with the pickles is not as good. I can't make you use the regular but at least I've given you fair warning.
- The pickles seem to be more cooperative (unless they're baby dills) if they are quartered and all are more cooperative when dried with a paper towel.
- If you find it easier you could "butter" the pickle instead of the dried beef.
