Ingredients

1 large shallot, coarsely chopped
1 red Holland or Fresno chile pepper
2 large cloves garlic
2 large fresh bay leaves
1 teaspoon mustard seed or dry mustard, 1/3 palmful
1/4 cup dry sherry
1/4 cup Worcestershire sauce
1 tablespoon black peppercorns
1 cup organic ketchup or low-sugar ketchup
2 tablespoons soy or tamari sauce
1 cup beef stock

Steps:

In food processor bowl, combine the shallot, chile, garlic, bay leaves, mustard seed, sherry, Worcestershire sauce and peppercorns and process into a smooth paste. Place the flavor paste in a pot and combine with the ketchup, soy and stock. Bring the mixture to a boil, reduce the heat to a simmer and cook 30 minutes. Cool and refrigerate for a make-ahead meal.

Found on the back of a bottle of Lea & Perrins Worcerstershire Sauce. Great for steaks or any grilled meat. Note: you can replace the olive oil with vegetable oil if you like.

1/2 cup Worcestershire sauce (Lea & Perrnis)
3 tablespoons olive oil
3 tablespoons balsamic vinegar
1/4 teaspoon salt

Steps:

In large, shallow non-aluminum baking dish or plastic bag, pour marinade over steak(s); turn to coat. marinate in refrigerator for 30 minutes. Remove steak(s); discard marinade. Grill or broil to preferred doneness, brushing frequently with additional Leaq & Perrins.

Spicy Sweet Steak Sauce image

This sauce is sweet and spicy, and can be thick or thin depending on how long you cook. **I discovered that you can substitute half ketchup for half the Worcestershire to cut the heat. Thats the way my DH prefers it, but I still love it spicy.

1/2 cup Worcestershire sauce
1/4 cup balsamic vinegar
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 cup brown sugar
pepper

Steps:

Combine above ingredients in a sauce pan. Bring to a slow boil, whisk or stir until desired consistency 2-5 minutes.
Serve warm. Will thicken a bit more as it cools.

1/4 apple cider vinegar
1/4 chopped fresh herbs

Steps:

Combine all the ingredients together and Reserve ¼ cup marinade; refregerate. Marinate you steaks in refrigerator 3 to 24 hours. Remove steaks:discard marinade. Grill or broil steaks, brushing with reserved marinade until done.
