Quick and easy lemon cookies from scratch recipe, made with simple ingredients. These soft and chewy cookies are packed with lemon flavor, coming from lemon zest, lemon juice and lemon extract.

1.5 cups Granulated sugar
1 Egg (Large)
1 tsp Lemon extract
1/2 tsp Vanilla extract
2 tbsp Lemon juice
2 tbsp Lemon zest
Yellow food coloring (I recommend gel coloring)
2 3/4 cups All-purpose flour
1 tsp Baking soda
1/2 tsp Baking powder
1 cup Additional granulated sugar (For rolling cookie dough balls)

Steps:

  • In a mixing bowl, cream together butter and sugar until light and fluffy.
  • Mix in the egg, lemon extract, vanilla extract, lemon juice, lemon zest, yellow gel coloring until smooth.
  • In a separate bowl, whisk together the flour, baking powder, baking soda.
  • Dump this dry mixture into the wet mixture and mix until just combined.
  • Scoop out small portions of the dough and shape them into balls. Roll them in a plate filled with granulated sugar. Place them on a cookie tray, lined with parchment paper and chill the tray for 15-20 minutes.
  • Then, bake at 350 degrees for about 15 minutes or until the edges are firm and slightly golden brown.
  • Allow these cookies to cool down and enjoy!

2 cups sugar
2 large eggs, room temperature, lightly beaten
1/4 cup whole milk
2 teaspoons lemon extract

Colored sugar, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs, milk and extract. Combine dry ingredients; gradually add to creamed mixture and mix well. Cover and chill for 2 hours. , Preheat oven to 350°. Roll out on a lightly floured surface to 1/8-in. thickness. Cut with a 2-in. cookie cutter dipped in flour. Place 2 in. apart on ungreased baking sheets. Sprinkle with colored sugar if desired. , Bake until the edges just begin to brown, 8-9 minutes. Remove to wire racks to cool.

1 tablespoon baking powder
1 1/4 teaspoons coarse salt
2/3 cup granulated sugar
1 tablespoon plus 1 teaspoon finely grated lemon zest
8 ounces (2 sticks) unsalted butter, room temperature
3 large eggs
1 teaspoon pure vanilla extract
1 teaspoon fresh lemon juice
3 cups confectioners' sugar
7 to 8 tablespoons fresh lemon juice (from 4 lemons)
1/4 cup plus 2 tablespoons white nonpareils, for sprinkling

Steps:

  • Preheat oven to 350 degrees. Make the cookies: Combine flour, baking powder, and salt in a bowl. Pulse sugar and zest in a food processor until combined, about 2 minutes.
  • Beat sugar-zest mixture and butter in a mixer on medium speed until pale and fluffy, about 2 minutes. Add eggs, 1 at a time, beating well after each addition. Add vanilla and lemon juice. Reduce speed to low. Gradually add flour mixture, and beat until combined.
  • Scoop 1 tablespoon dough (or use a 1 1/8-inch ice cream scoop), and transfer to a lightly floured surface. Roll dough into a 4-inch rope. Bring ends together, overlapping slightly, and press together to form a ring. Repeat with remaining dough. Transfer rings to parchment-lined baking sheets, about 1 1/2 inches apart, as you work. Bake until pale golden on the bottoms and around the edges, about 18 minutes. Transfer to wire racks, and let cool.
  • Make the glaze: Whisk together confectioners' sugar and lemon juice in a small bowl until smooth. Dip the top side of each cookie into glaze, letting excess drip off. Return cookies to wire racks, glaze side up, and sprinkle with nonpareils. Let dry completely.

1 stick butter, softened

1 1⁄2 teaspoons lemon extract
2 cups all-purpose flour
3 teaspoons baking powder
1⁄8 teaspoon salt
3 cups confectioners' sugar
1⁄4 cup water
1 teaspoon lemon extract

Steps:

  • Preheat oven to 350°F.
  • Mix flour, baking powder and salt in a large bowl. Set aside.
  • Cream together sugar and butter. Add eggs and lemon extract and beat well. Add flour mixture, mix well until smooth texture. (dough will be a bit sticky) If dough seems light colored, add a drop or 2 of yellow food coloring. Chill dough until firm.
  • With a small cookie scoop, drop dough onto a slightly greased cookie sheet, spacing them about 2-inches apart.
  • Bake for about 12-15 minutes, or until firm and lightly brown.
  • Remove cookies from cookie sheet and allow to cool completely.
  • Combine the Icing ingredients in a bowl until just smooth. You want it more thick than thin, but still runny.
  • Dip the tops of the cooled cookies into the glaze, then return to the wire rack, allowing the glaze to drip down the sides of the cookie.
  • Top with sprinkles or a little lemon zest, while glaze is still wet.
  • Store in an airtight container.
  • * If you want to freeze the cookies, freeze unfrosted and frost once thawed.

2 cups + 1 tablespoon all purpose flour (at least 11% protein) ((268 grams))
1 teaspoon baking powder
1 pinch salt
zest of ½-1 lemon
⅔ cup + 1½ tablespoons butter (softened)* ((170 grams))
3/4 cup granulated sugar ((150 grams))
1 large egg
1 teaspoon vanilla
1 tablespoon lemon juice
1/4 cup granulated sugar ((50 grams))
1/2 tablespoon lemon zest
1/2 cup powdered / icing sugar ((62 grams))
1/2 teaspoon vanilla
1-2 tablespoons milk / cream or lemon juice (or a mixture)

Steps:

  • In a medium bowl whisk together the flour, baking powder, salt and zest. Set aside.
  • In the stand up mixer using the flat beater cream the butter and sugar until light and fluffy, about 3 minutes. Add the egg, vanilla and lemon juice and combine.
  • Add the whisked flour mixture and combine. Move to a lightly floured flat surface and gently form into a ball. Wrap the dough in plastic wrap and refrigerate for 1-2 hours.
  • Then roll the dough into 1/4 inch thick (or a little thicker if you wish) and cut with round cookie cutter or cutters of choice. Place the cookies on parchment paper lined cookie sheets and refrigerate for 15-20 minutes while the oven is pre-heating.
  • Pre-heat oven 350F (180C).
  • Sprinkle with plain or lemon sugar. Bake in pre-heated oven for about 7-9 minutes.
  • Let cool on cookie sheets for approximately 2-3 minutes before removing to a wire rack to cool completely. Drizzle with glaze if desired. Enjoy!
