CRISPY SPICY FRENCH FRIES



Crispy Spicy French Fries image

I found the recipe on the internet. It's amazing. I have also used frozen french fries instead of fresh potatoes and it came out great.

2 1/2 lbs potatoes, peeled
1 cup flour
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1 teaspoon paprika
1/2 cup water (or more)
1 cup vegetable oil, for frying

Steps:

  • Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
  • Heat oil in a large skillet over medium-high heat.
  • While the oil is heating, sift the flour and spices into a large bowl.
  • Gradually stir in enough water so that the mixture can be drizzled from a spoon.
  • Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first.
  • The fries must be placed into the skillet one at a time, or they will clump together.
  • Fry until golden brown and crispy.
  • Remove and drain on paper towels.

2 1/2 pounds Yukon Gold potatoes, cut into 1/2 inch dice
Kosher salt
3 tablespoons canola oil
1 medium Spanish onion, diced
3 tablespoons unsalted butter
2 tablespoons ancho chile powder
Freshly ground black pepper
1/4 cup thinly sliced green onion
2 tablespoons finely chopped fresh cilantro

Steps:

  • Bring a large pot of water to a boil, add 2 tablespoons of salt and the potatoes, bring to a boil and cook, until just tender, about 8 minutes. Drain well in a colander.
  • Heat 1 tablespoon of oil in a large cast iron skillet over medium heat until it begins to shimmer, add the onion and cook, stirring a few times, until soft and lightly golden brown, about 5 minutes. Remove the onions to a plate.
  • Add the remaining oil and the butter to the pan, increase the heat to high and heat until the butter has melted and the oil is sizzling. Add the potatoes and chile powder and season with salt and pepper and immediately press down into an even layer on the bottom on the pan, using a wide metal spatula. Cook, pressing down occasionally and not turning, until the potatoes on the bottom are golden brown and crusty, about 5 minutes. Turn the potatoes over, press down again and cook until the potatoes on the bottom are golden brown, about 5 minutes longer. Stir in the onions, season with more salt and pepper, transfer to a shallow bowl or a platter and garnish with green onion and cilantro.

4 large russet potatoes, peeled and cut into 1/4 inch thick fries
¼ cup vegetable oil
¼ cup tomato-vegetable juice cocktail
1 tablespoon chili powder
1 teaspoon ground cumin
2 teaspoons dried onion granules
1 teaspoon garlic powder
1 teaspoon cayenne pepper
1 teaspoon white sugar
1 tablespoon salt

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a large baking sheet.
  • Fill a large bowl with cold water, add the potatoes, and allow to soak for 10 minutes.
  • Whisk together the oil, vegetable juice cocktail, chili powder, ground cumin, onion granules, garlic powder, cayenne pepper, sugar, and salt in a large bowl. Drain the potatoes, and pat dry with paper towels. Toss the potatoes with the oil and spice mixture; stir until evenly coated. Arrange fries in a single layer on the prepared baking sheet.
  • Bake fries in preheated oven for 20 minutes. Turn and continue to bake until browned and crispy, about 20 additional minutes.

4 small red potatoes, scrubbed and cut into 1/2-inch cubes
2 tablespoons vegetable oil
1 tablespoon butter
1/2 onion - chopped fine
1 red bell pepper - chopped fine
3/4 tsp chile powder
1/2 tsp cumin
salt and pepper

Steps:

  • In a large microwave-safe bowl, toss the potatoes with the oil. Cover the bowl tightly with plastic wrap and microwave on high until the potatoes are tender but not falling apart, 5 to 10 minutes, shaking the bowl (without removing the plastic) to redistribute the potatoes every 3 minutes. Carefully remove the plastic, transfer the potatoes to a colander, and drain thoroughly. Melt the butter in a 12-inch skillet over medium-high heat. Add the potatoes to the skillet and using a wooden spoon or heatproof spatula, distribute them evenly over the pan. Cook undisturbed until the potatoes are browned on one side, about 5 minutes. Carefully turn the potatoes to ensure even browning, and add the onion and pepper to the skillet. Add the chile powder and cumin and stir to combine. Continue cooking, turning the potato, onion, and pepper mixture every few minutes, until the potatoes are well browned and the onion and pepper is softened, 10 to 15 minutes longer. Season with salt and pepper and serve.

  • Soak the Potatoes. Put the cut potatoes in a large bowl and cover with cool water. Soak for at least 20 minutes or up to an hour. This step gets rid of excess starch, resulting in fluffier and crispier fries.
  • Drain and Dry the Potatoes. Drain the potato sticks and pat them dry with paper towels or a clean kitchen towel. Arrange them in a single layer to air-dry for a bit.
  • Fry the Potatoes. Bring at least 2 inches of oil in a large heavy pot to 325 F. Once the oil is hot, fry the potatoes for about 5 minutes. Work in batches if you're making more than one or two potatoes' worth.
