LEMON CUPCAKES WITH FRESH BLUEBERRY BUTTERCREAM

Lemon Cupcakes with Fresh Blueberry Buttercream image

These Lemon Cupcakes with Fresh Blueberry Buttercream are a must bake this Summer!

Provided by Ashley Manila

Categories     Dessert

Time 1h

Number Of Ingredients 18

1 and 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup full-fat sour cream
1/2 cup (1 stick) unsalted butter, at room temperature
3/4 cup granulated sugar
1/2 teaspoon lemon extract
2 teaspoons finely grated lemon zest
1 large egg plus one egg yolk, at room temperature
1 and 1/2 tablespoons fresh lemon juice
1 and 1/2 cups blueberries, fresh or frozen, if using frozen don't thaw
2 tablespoons lemon juice
2 sticks (8 ounces) unsalted butter, VERY soft
1/2 teaspoon salt
3 1/2 cups confectioners sugar (more if needed), sifted
1 tablespoon heavy cream (more if needed)
1/4 cup fresh blueberries, for decorating (optional)

Steps:

  • Preheat oven to 350 degrees (F). Line a 12 mold cupcake tin with paper liners and set aside.
  • In a medium bowl combine the flour, baking powder, baking soda, and salt; whisk well and set aside.
  • In a large bowl using a handheld electric mixer, or in the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium speed until smooth and creamy, about 30 seconds. Add in the sugar, lemon extract and lemon zest and beat until well combined. Add in the egg and egg yolk and mix well, scraping down the sides of the bowl as needed. Reduce the mixer speed to low. Add in 1/2 of the flour mixture and mix until just combined (this should take about 5 seconds). Add 1/2 of the sour cream and mix until just combined. Repeat with remaining flour and sour cream, being sure to mix on low until just combined. Turn mixer off. Using a rubber spatula, quickly fold in the lemon juice.
  • Divide the batter evenly among the prepared muffin cups, filling them 3/4 of the way full. Bake for 16 to 18 minutes, or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Once cupcakes are cool, frost and decorate. The cupcakes may also be frozen, unfrosted, and stored in a freezer safe bag, for up to 2 months.
  • In a small saucepan combine blueberries and lemon juice; bring to a simmer over medium heat and cook, stirring constantly and gently smashing the blueberries smooth, until thickened into a deep, dark blueberry reduction, about 10 minutes. Remove from heat. Place a fine-mesh strainer over a small bowl and push the puree though, leaving any skin/large chunks behind. Allow mixture to cool completely before using. If you'd like to have enough blueberry puree to drizzle on the cupcakes, double this recipe and set half aside for decorating.
  • Once the blueberry puree has cooled, place the softened butter in a large bowl or in the body of a stand mixer. Using a handheld mixer, or with the paddle attachment on your stand mixer, beat butter on medium-high (scraping down the sides as needed) until completely smooth; about 2 minutes.
  • Add in a 1/4 cup of the blueberry puree and beat until completely combined; about 1 minute (don't worry if the mixture looks weird at this point).
  • Add in the confectioners sugar, one cup at a time, on low speed. Once all of the sugar has been added, add in the cream and salt, then beat on high-speed for a full 2 minutes - this thickens up the frosting and makes it nice and fluffy.
  • Frost cooled cupcakes as desired.

LEMON CUPCAKES WITH BERRY BUTTERCREAM

Lemon Cupcakes with Berry Buttercream image

A light and fluffy lemon cupcake with a mixed berry buttercream swirled on top!

Provided by Heather Perine

Categories     Dessert

Time 43m

Number Of Ingredients 16

1 1/4 cups (150 g) cake flour
1 1/2 tsp. baking powder
1/4 tsp. salt
3/4 cup (131 g) granulated sugar
6 Tbs. (3/4 stick) unsalted butter, at room temperature
1 whole egg plus 1 egg white (at room temperature)
1 tsp. vanilla extract
1/2 cup (120 mL) whole milk
zest of 2 lemons
2 1/2 sticks (1 1/4 cups) unsalted butter (softened)
2 1/2 cups (283 g) confectioner sugar ((aka powdered or icing))
2 teaspoons vanilla extract
2 Tbs. heavy cream
1 cup (142 g) mixed berries (fresh or frozen)
1 Tbs. sugar
12 fresh raspberries for garnish

Steps:

  • Preheat an oven to 350°F. Line a standard 12-cup muffin pan with paper or foil liners.
  • In a bowl, whisk together the flour, baking powder and salt.
  • In a large bowl, using an electric mixer, beat together the sugar and butter on medium-high speed until light and fluffy, 2 to 3 minutes.
  • Reduce the speed to low and add the egg and egg white one at a time, beating well after each addition, then beat in the vanilla and the lemon zest.
  • Add the flour mixture in 3 additions, alternating with the milk in 2 additions, beating until just combined; scrape down the sides of the bowl as needed. Increase the speed to medium-high and beat just until no traces of flour remain, about 30 seconds; do not overbeat.
  • Divide the batter evenly among the prepared muffin cups, filling each about three-fourths full. Bake until the cupcakes are lightly golden on top and a toothpick inserted into the center of a cupcake comes out clean, 18 to 20 minutes. Transfer the pan to a wire rack and let cool for 5 minutes. Then transfer the cupcakes to the rack and let cool completely, about 1 hour.
  • Frost the cupcakes with the buttercream. (The frosted cupcakes can be refrigerated in an airtight container for up to 3 days; bring to room temperature before finishing.) Garnish the cupcakes with a fresh raspberry. Makes 12 cupcakes.
  • In a saucepan over medium heat, cook the berries and sugar together. Use a wooden spoon to break the berries apart.
  • Simmer until significantly reduced - you should have about ⅓ cup of liquid.
  • Remove from the heat. Using a fine mesh sieve or cheese cloth, push the berries through the sieve set over the bowl to get rid of the seeds. Let the puree cool before adding it to your buttercream.
  • With a mixer, cream the butter together with the powdered sugar. Add in your vanilla extract, heavy cream, and cooled berries.
  • Mix on medium-high for about 8 minutes until light and fluffy. Frost your cupcakes with a spatula or piping bag fit with a star tip. Top with a fresh raspberry.

6 ounces soy milk
2 tablespoons vanilla extract
2 tablespoons fresh lemon zest
2 1/4 cups organic, unbleached white flour

LEMON-BLUEBERRY CUPCAKES WITH BLUEBERRY-LEMON BUTTERCREAM FROSTING

Lemon-Blueberry Cupcakes with Blueberry-Lemon Buttercream Frosting image

Zesty and bright, these cupcakes are sure to wow! A vibrant frosting (flavored with a quick homemade jam) sits atop a lemony, moist cupcake studded with colorful berries. Using frozen blueberries makes these cupcakes accessible any time of year, too!

Provided by Kim

Categories     Lemon Cupcakes

Time 4h25m

Yield 18

Number Of Ingredients 21

1 ½ cups frozen blueberries
2 tablespoons white sugar
1 teaspoon lemon juice
1 ¾ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup white sugar
½ cup unsalted butter, softened
2 large eggs, at room temperature
3 tablespoons lemon juice
1 ½ tablespoons lemon zest
½ teaspoon vanilla extract
⅔ cup buttermilk, at room temperature
1 ½ cups frozen blueberries
1 tablespoon all-purpose flour
1 cup unsalted butter, softened
2 teaspoons lemon zest
1 ½ teaspoons lemon juice
⅛ teaspoon salt
3 ½ cups powdered sugar
1 tablespoon heavy cream

Steps:

  • Combine frozen blueberries, sugar, and lemon juice for jam in a small pot over medium heat; bring to a simmer. Cook, stirring occasionally, until mixture has reduced and thickened, about 12 minutes. Remove from the heat.
  • Pour mixture through a fine mesh sieve, pressing solids to extract as much jam as possible; you should have approximately 1/4 cup. Discard any solids and refrigerate jam until completely cool, at least 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin cups with paper liners.
  • Whisk flour, baking powder, and salt for cupcakes together in a small bowl.
  • Cream sugar and butter together in a large bowl until light and fluffy. Mix in lemon juice, lemon zest, and vanilla until combined. Add flour mixture in 2 batches, alternating with buttermilk, beating batter just until combined after each addition; batter will be somewhat thick.
  • Place frozen blueberries in a small bowl and toss with flour until coated. Add to the batter and fold to incorporate. Spoon batter into the prepared muffin cups, filling each one 3/4 full.
  • Bake in the preheated oven for 20 minutes. Check to see if a toothpick inserted into the centers comes out clean, and continue to bake, if needed, for 4 to 8 more minutes. Cool in the pans for 5 minutes before removing to a wire rack to cool completely, about 20 minutes more.
  • While the cupcakes are cooling, remove blueberry jam from the refrigerator. Measure out 1/4 cup for the frosting and reserve any extra for another use.
  • Beat butter for frosting in a large bowl until creamy and smooth. Add 1 cup powdered sugar, lemon zest, lemon juice, and salt; beat until thoroughly combined. Add 1/4 cup blueberry jam and mix until combined. Add 1 cup powdered sugar and mix until smooth. Repeat with remaining 1 1/2 cups powdered sugar. Add heavy cream and beat until frosting is smooth and fluffy, 1 to 2 minutes more.
  • Frost cooled cupcakes.
