LEMON LOVER'S COOKIES

Another recipe from my favorite magazine "Taste of Home" I love Lemon and these are described "light cookies that will melt in your mouth - just the right sweet with a cup of coffee or tea." A tip given states "to freez drop cookie dough, drop dough in amounts recipe calls for onto bakiing sheet and freeze until solid. Once frozen, place cookies into a resaealable plastic bag. When ready to bake, let thaw on a baking sheet for 30 min. before baking." Great idea for future uses. Prep time does not include refrigeration. Update, thanks Carrol for some great hints - have a feeling this may be one of those recipes that needs some help, will try these with the added sugar to see if it helps and the extra lemon zest. This may be one of those recipes that needs a lot of help.

3/4 cup butter, softened
3 tablespoons sugar
2 teaspoons lemon juice
1 1/4 cups all-purpose flour
1/2 cup cornstarch
1 teaspoon lemon peel, grated
1/4 cup butter, softened
1 cup confectioners' sugar
2 teaspoons lemon juice
1 teaspoon lemon peel, grated

Steps:

  • In small bowl, cream butter and sugar until light and fluffy.
  • Beat in lemon juice.
  • Combine flour, cornstarch and lemon peel; gradually add to creamed mixture and mix well.
  • Shape into 1 1/2 inch roll; wrap in plastic wrap.
  • Refrigerate for 1 hour or until firm.
  • Unwrap and cut into 1/4 inch slices.
  • Place 2 inches apart on ungreased baking sheets.
  • Bake at 350 for 8-10 minutes or until edges are golden brown.
  • Cool completely on pans on wire racks.
  • Frosting:.
  • In small bowl beat butter until fluffy.
  • Add confectioners' sugar, lemon juice and peel.
  • beat until smooth.
  • Spread over cooled cookes; sprinkle with additional lemon peel if desired.
  • Let stand until set. Store in an airtight container.

1/3 cup confectioners' sugar
2 teaspoons lemon juice
1 cup all-purpose flour
1/2 cup cornstarch

LEMON FROSTING:
1/4 cup butter, softened
1 cup confectioners' sugar
2 teaspoons lemon juice
1 teaspoon grated lemon zest
Additional grated lemon zest, optional

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy, about 5 minutes. Beat in lemon juice. Combine the flour, cornstarch and lemon zest; gradually add to creamed mixture and mix well., Shape into a 1-1/2-in. roll; wrap in plastic. Refrigerate for 1 hour or until firm. Unwrap and cut into 1/4-in. slices. Place 2 in. apart on greased baking sheets., Bake at 350° until edges are golden brown,10-12 minutes. Gently remove to wire racks to cool completely., In a small bowl, beat butter until fluffy. Add the confectioners' sugar, lemon juice and zest; beat until smooth. Spread over cooled cookies; sprinkle with additional lemon zest if desired. Let stand until set. Store in an airtight container.

2 cups unbleached all-purpose flour, (spooned and leveled)
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 tablespoon finely grated lemon zest, plus 2 tablespoons fresh lemon juice
1/2 cup (1 stick) unsalted butter, room temperature
1 cup sugar
1 large egg
1 teaspoon pure vanilla extract
Lemon Glaze

Steps:

  • Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, salt, and lemon zest. In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. Add egg, vanilla, and lemon juice and beat until combined. With mixer on low, beat in flour mixture.
  • Drop dough by heaping tablespoons, 1 inch apart, onto two baking sheets. Bake until edges are golden, 15 to 20 minutes, rotating sheets halfway through. Let cool 2 minutes on sheets, then transfer cookies to a wire rack to cool completely. Spread cookies with Lemon Glaze and let set, about 1 hour.

These are very delicious with a great burst of lemon! If you aren't a lemon lover, then these aren't for you! You will find the lemon oil and the lemon powder at a craft store , or you may choose to use lemon juice. Using the lemon juice will not produce the level of tartness as it would with the lemon oil. Times are guestimated, as the level of doneness is up to you.

1/2 cup unsalted butter
3/4 cup sugar
1 large egg
1/2 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon lemon oil
1 tablespoon lemon, powder
1 1/2 teaspoons lemons, powder
1 1/2 cups king arthur unbleached all-purpose flour
1 cup sweetened flaked coconut
yellow gel-paste food coloring (optional) or bottled food coloring (optional)
3 tablespoons sugar, coarse or 3 tablespoons granulated sugar, for topping

Steps:

  • Preheat the oven to 350°F Lightly grease (or line with parchment) two baking sheets.
  • To prepare the dough:
  • In a medium-sized bowl, beat the butter and sugar until light and fully. Add the egg, vanilla, baking powder, salt, lemon oil, and lemon powder, beating on medium speed until well blended. Add the flour and coconut, beating until thoroughly combined. Use food color to tint the cookies yellow. Gel-paste food color will give the most intense color; be aware that with paste colors, you only need to add the merest touch. Dip a toothpick in the color, and then dip it into the dough. Repeat a couple of times. Mix the dough, adding more color until it's as intense as you like.
  • To shape the cookies: Place the coarse sugar in a small bowl. Drop the dough by tablespoonfuls into the bowl, one at a time, shaking the bowl to coat with sugar. Gently roll cookies into smooth balls with your hands, then transfer to the prepared baking sheets.
  • To bake the cookies: Bake the cookies for 9 to 10 minutes, for soft cookies. For crunchier cookies, bake for 12 minutes, until they're barely beginning to brown around the edges. Remove from the oven, and after a few minutes transfer them to a rack to cool.
  • Variation: You can make these cookies using fresh lemons instead of lemon powder and lemon oil (though they won't be nearly as intensely citrus-y). Substitute 1/4 cup freshly squeezed lemon juice (the juice of one medium-large lemon), and the grated rind from one lemon. You may also omit the coconut and/or food coloring, if you like. Bake the cookies for 12 minutes, until they feel barely set in the center (for softer cookies); or 14 minutes (for crisper cookies).

Steps:
