Lemony Tortellini Bacon Salad Recipes
TORTELLINI BACON BROCCOLI SALAD
This is an excellent pasta salad that is great to make for the week ahead or to bring to potlucks! Make it -- you won't be disappointed. You may frown at the coleslaw dressing, but trust me, it's amazing in this recipe! This recipe is highly requested when served.

Steps:
- Cook the tortellini according to the package directions, drain, rinse with cold water, and refrigerate until cool, about 30 minutes.
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Chop the bacon into 1/2-inch pieces while still a little warm.
- Place the tortellini, bacon, broccoli, grape tomatoes, and green onions into a salad bowl. Pour the dressing over the ingredients, and toss lightly to coat. Chill in refrigerator before serving.

Steps:
- In a large saucepan, cook tortellini according to package directions, adding broccoli during the last 5 minutes of cooking. Meanwhile, in a small bowl, mix mayonnaise, vinegar, lemon juice, oregano and salt. , Drain tortellini and broccoli; gently rinse with cold water. Transfer to a large bowl. Add dressing; toss to coat. Serve over salad greens; sprinkle with bacon.

CREAMY TORTELLINI SALAD WITH CHICKEN, BACON, AND RANCH DRESSING
When I moved to Oklahoma, I discovered a pizza called "chicken bacon ranch" and this pasta salad is a nod to the flavors in the pizza. If desired, marinate chicken in ranch dressing, and grill chicken to bump up the flavor.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes. Run tortellini under cold water and drain. Store in the refrigerator until chilled, at least 30 minutes.
- Stir ranch dressing and milk together in a large bowl. Add chilled pasta, cooked chicken, mozzarella, bacon, green onions, and parsley.
- Toss to combine. Season with salt and pepper if desired.

- Cook the tortellini in salted water per the package instructions. Drain well and set aside to cool slightly.
- Meanwhile, in a large mixing bowl whisk together the mayonnaise, buttermilk, sour cream, ranch dressing mix, garlic power, onion powder, lemon pepper and dill.
- Toss cooked tortellini with dressing. Mix well. Add cheese, bacon, and green onion to the bowl. Mix until evenly coated. (May reserve some of each to garnish, if desired) Add chicken, if using.
- Serve immediately warm or place into the fridge to chill for several hours before serving. Garnish as desired.
