Steps:
- 1. MICROWAVE 1 CUP, MORSELS AND 1/3 CUP MILK IN MEDIUM, UNCOVERED, MICROWAVE-SAFE BOWL ON HIGH FOR 45 SECONDS; STIR UNTIL SMOOTH. STIR IN BUTTER; POUR OVER CRUST. REFRIGERATE FOR 20 MINUTES OR UNTIL COOL TO TOUCH.
- 2. BEAT REMAINING MILK, PUDDING MIX, WATER, PEPPERMINT AND 3 DROPS OF FOOD COLORING IN MEDIUM BOWL TILL COMBINED. GENTLY STIR IN 2 CUPS WHIPPED TOPPING AND ADDITIONAL DROP OF FOOD COLORING. SPOON OVER CHOCOLATE LAYER.
- 3. REFRIGERATE FOR 2 HRS OR UNTIL SET. SPRINKLE WITH ADDITIONAL MORSELS. SPOON REMAINING WHIPPED TOPPING IN CENTER OF PIE.
LEPRECHAUN PIE
This pie is an absolutely scrumptious dessert and very easy to make. Except for 10 minutes in the oven with the crumb crust, it's a no-bake pie. I got this from preparedpantry.com. Prep time does not include freezer time.

- Mix the crumbs, sugar, and butter in a 9" springform pan. Mix until the crumbs have absorbed the butter and the mixture is uniform. Press the crumbs across the bottom of the pan and up the sides. Bake for 10 minutes at 350*.
- In a medium bowl, beat the cream cheese until soft. Add the sweetened condensed milk and beat until smooth, light, and fluffy. Add the limeade concentrate and continue beating until smooth. Add the food coloring. Poor into pie shell and place in the freezer. Serve when nearly frozen, garnished with whipped cream.

This just came in an email from Sparkrecipes.com, and I am intrigued enough that I am posting for safekeeping. Sounds like a cool and delicious treat for the upcoming hot summer months! The recipe didn't come with a chill time, so I am taking a guess here. I am also guessing as to the size of the box of pudding; that was not listed, either. Please let me know what size you use if you try this! I imagine this might also be delicious frozen!

- 1. Chill large mixing bowl and beaters of electric mixer.2. In large saucepan combine marshmallows and milk. Cook and stir over low heat until marshmallows melt. Stir in creme de menthe or mint extract and green food coloring, if desired.3. In chilled bowl beat whipping cream and vanilla on medium speed of electric mixer until soft peaks form. Fold in marshmallow mixture. Spread in crust. Freeze at least 4 hours or until firm.4. Let stand at room temperature for 15 minutes before cutting. Garnish as desired. Store in freezer.

I will warn you, if you dare put this in your mouth, you won't be able to stop! That won't be to great for your health, but I think most of you can indulge in a simple guilty pleasure such as this one. With the recipe comes a story... Once upon a time a fairy and a troll had a child they later named Leonardo, he was short and loved rainbow, gold, and green. He wants this pie! Serve with whipped cream and ice cream. Sprinkles don't hurt either!

- Preheat the oven to 350 degrees F (175 degrees C). Set a rack in the middle of the oven.
- Stir graham cracker crumbs, butter, and sugar together in a bowl until combined. Press the magical creation into the bottom and sides of a 9-inch pie plate.
- Bake in the preheated oven until set, about 10 minutes. Let crust cool on a wire rack; leave oven on.
- Whisk condensed milk and egg yolks together in a bowl until well combined. Add key lime juice and zest; mix well. Whisk in honey to combine. Add food coloring gradually, whisking until filling is green enough for you. Pour filling over the crust.
- Bake until nearly set, 16 to 18 minutes. Let cool completely on the wire rack so pie can set fully, at least 30 minutes. Cover and refrigerate, 8 hours to overnight.

- Preheat oven to 350 degrees F. Grease and flour 10-inch Bundt or tube pan.
- For cake, combine cake mix, pudding mix, eggs, oil, 3/4 cup water and 1/4 cup Key lime juice in large bowl. Beat at low speed with electric mixer until moistened. Beat at medium speed 2 minutes.
- Bake 50 to 60 minutes or until toothpick inserted in centre comes out clean. Cool in pan 25 minutes. Remove cake from pan onto cooling rack. Return cake to pan. Poke holes in top of warm cake with toothpick or long-tined fork.
- For glaze, combine 2 cups icing sugar, 1/3 cup Key lime juice, 2 tablespoons water and melted butter in medium bowl. Pour slowly over top of warm cake. Cool completely. Invert onto serving plate. Dust with additional icing sugar. Garnish with lime slices and strawberry slices, if desired.
