1 cup chopped fresh mushrooms
1 cup chopped fresh broccoli
1 medium sweet red pepper, chopped
1 small onion, chopped
2 tablespoons olive oil
8 slices Italian bread (1/2 inch thick)
1/2 cup mayonnaise
1 garlic clove, minced
1 cup shredded smoked Gouda cheese

Steps:

  • Preheat oven to 425°. Place mushrooms, broccoli, pepper and onion in a greased 15x10x1-in. baking pan. Drizzle with oil; toss to coat. Roast 10-12 minutes or until tender., Meanwhile, place bread slices on a baking sheet. Mix mayonnaise and garlic; spread over bread., Change oven setting to broil. Spoon vegetables over bread slices; sprinkle with cheese. Broil 3-4 in. from heat 2-3 minutes or until cheese is melted.

Kale is supposed to have cancer-fighting properties. I love it, but my husband hates it. Cooking it this way is the only way he'll eat it.

1 bunch kale
1 tablespoon olive oil
1 teaspoon minced garlic

Steps:

  • Soak kale leaves in a large bowl of water until dirt and sand begin to fall to the bottom, about 2 minutes. Lift kale from the bowl without drying the leaves and immediately remove and discard stems. Chop the kale leaves into 1-inch pieces.
  • Heat olive oil in a large skillet over medium heat; cook and stir garlic until sizzling, about 1 minute. Add kale to the skillet and place a cover over the top.
  • Cook, stirring occasionally with tongs, until kale is bright green and slightly tender, 5 to 7 minutes.

A grilled cheese sandwich fit for an adult loaded with wilted kale and perfectly melted gouda cheese

Ingredients
2 cups destemmed packed kale
2 teaspoons olive oil
2 cloves garlic minced
4 slices whole wheat bread
1 tablespoon softened butter
4 slices Arla sliced gouda cheese

Steps:

  • Instructions
  • Roughly chop the kale and set aside. Heat a medium to large skillet over medium-low heat. Add the olive oil followed by the kale. Cook, stirring frequently, until the kale has wilted slightly, 3 to 4 minutes. Stir in the garlic and continue to cook until the garlic is fragrant and golden, 1 to 2 minutes.Remove kale from pan and set aside.
  • Wipe out the pan and reduce heat to low. Take a small amount of butter and spread on one side of a piece of bread. Place the buttered side down in the pan and top with a slice of cheese, half the greens, and another slice of cheese. Brush another slice of bread with butter and top, leaving the buttered side up.
  • Cook until the bread is golden. Flip, and continue to cook until the cheese has melted and both sides are golden. If the cheese has melted but the bread has not fully toasted, turn up the heat slightly.
  • Remove from the skillet, slice in half, and serve with a side of hummus if desired.

3 pounds fresh kale
Kosher salt
1 tablespoon unsalted butter
1 tablespoon minced fresh garlic
3 cups heavy cream
Freshly cracked black pepper
1/2 cup finely grated Parmesan
1/8 teaspoon freshly grated nutmeg

Steps:

  • Prepare the kale by removing the center stems and tearing the leaves into bite-size pieces. Set a large pot of water over high heat and bring to a boil. Season generously with salt. When it returns to a boil add the kale. Stir well so it cooks evenly. When it turns bright green and becomes tender, 10 to 12 minutes, remove and drain in a colander.
  • To a high-sided saute pan over medium heat, add the butter and garlic. Stir in the cream with some salt and pepper. Set over high heat and bring to a simmer. Cook until the cream reduces by half, 6 to 7 minutes. Once reduced, add the kale, Parmesan, nutmeg and more salt and pepper and bring back to a simmer so the kale is heated through and the Parmesan has melted. Stir to coat everything evenly. Taste and season again if needed.
