LINGUINE WITH LEMON & TOMATOES



Linguine with Lemon & Tomatoes image

This roasted lemon & tomato linguine pasta is a simple, yet elevated, summer dinner. Roast the tomatoes ahead of time, and this recipe comes together in a flash.

Number Of Ingredients 12

1 cup Roasted Tomatoes
4 very thin lemon slices
1 tablespoon extra-virgin olive oil
1 garlic clove (minced)
1 tablespoon lemon juice
6 ounces linguine pasta
1 1/2 cups arugula
1 tablespoon fresh thyme
3 ounces fresh mozzarella (torn)
¼ cup toasted pine nuts
½ cup fresh basil
Sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350°F and line a small baking sheet with parchment paper.
  • Place the lemon slices on the baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for for 15 to 20 minutes or until they're golden brown around the edges. Finely mince the lemons and set aside.
  • In the bottom of a medium-sized (cold) pot, combine the olive oil, garlic, lemon juice, and ¼ teaspoon sea salt.
  • Prepare the pasta according to the package directions, cooking until al dente. Reserve ¼ cup of the pasta cooking water. Scoop the hot pasta into the pot, along with the reserved pasta water, the arugula, and toss. If necessary, gently heat until the arugula wilts and the pasta is warmed through. Add the thyme, tomatoes, lemons, and toss again. Top with the mozzarella, pine nuts, and basil. Gently toss, season to taste and serve.

CLASSIC MACARONI AND TOMATOES



Classic Macaroni and Tomatoes image

2 cups uncooked macaroni
1 tablespoon bacon grease
1 (28-ounce) can diced tomatoes
1/2 teaspoon salt
1/4 teaspoon black pepper
sugar (optional - see note)

Steps:

  • Cook the macaroni in salted water to al dente according to the package instructions then drain and rinse with cold water to stop the cooking process.
  • In a large pot, melt the bacon grease and pour in the tomatoes with the juice. Bring to a boil, then reduce the heat to medium and cook until most of the liquid has evaporated, stirring occasionally - about 10 minutes.
  • Add the macaroni to the tomatoes and mix well. Add the salt and pepper. Mix well then adjust seasoning to taste. (See my note about sugar below.) Serve warm.

2 cups elbow macaroni (uncooked)
28 ounces canned, whole tomatoes (with the juices)
3 Tablespoons sugar
1/2 teaspoon salt
2 - 3 Tablespoons butter

Steps:

  • Cook elbow macaroni in boiling, salted water according to package instructions. Drain well.
  • In a large skillet, pour in tomatoes, breaking them up in bite-sized chunks using a meat chopper or your clean hands.
  • Add cooked macaroni, sugar and salt; bring to a simmer over medium heat, stirring occasionally.
  • Once simmering, lower heat and add butter, stirring until melted.
  • Taste, and add black pepper and additional salt if desired. Tastes great served with buttered bread.

Homemade noodles and canned tomatoes. Very old recipe; I am writing in directions. The real recipe very sketchy but fun to read. They used a lot of Velveeta cheese and home canned tomatoes; her recipe for tomatoes is on food.com.

2 eggs
1 tablespoon water
2 cups flour
1 quart tomatoes
1/2 cup cheese
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup cracker crumb (optional)

Steps:

  • Make noodles using 2 eggs and 1 egg shell full of water; roll out; cut and boil in salted water.
  • Take a quart of canned tomatoes; put in a sauce pan and add about a saucer of cheese cut in slices; add 2 tablespoons of butter.
  • Boil for about 10 minutes then pour on the noodles, which have been drained and put on a greased baking dish.
  • Season with salt and pepper; stir well.
  • Cracker crumbs can be put on top.
  • Bake for about one hour at 375 degrees Fahrenheit.

My boyfriend's family eats these. I've never had them. I just made a whole bunch and every time you mention them they smile. I guess they eat these like fruit. I serve them cold. I have also cooked with them as they are not overly sweet. When canning, amounts are estimates, sorry.

20 lbs tomatoes (enough for 7 quarts)
3 1/2 cups sugar

Steps:

  • Blanch tomatoes to take skin off.
  • Pack peeled tomatoes in hot sterilized jars.
  • Fill 1/2 way add 1/2 cup of sugar to each jar.
  • Fill jar rest of way with tomatoes.
  • Seal and hot water bath for 45 minutes.
  • You start timing when water is at a rolling boil around the jars.

Salt and freshly ground pepper to taste
6 ripe plum tomatoes, about 1/2 pound
3/4 pound thin noodles
1 tablespoon olive oil
1 tablespoon finely chopped garlic
1 tablespoon butter
4 tablespoons fresh basil or parsley chopped coarse

Steps:

  • In a large saucepan or kettle, bring enough salted water to cover the noodles to a boil.
  • Core the tomatoes and cut them into 1 1/2-inch cubes.
  • Drop the noodles into boiling water and cook, stirring until tender. Do not overcook.
  • Meanwhile, heat olive oil in a saucepan. Add the tomatoes and salt and pepper. Cook for 1 minute, stirring occasionally. Add the garlic, cook and stir for 30 seconds. Set aside and keep warm.
  • Drain the noodles and return them to the saucepan. Add the butter, tomatoes and basil, and blend well. Check for seasoning and serve immediately.

1 10-ounce package narrow noodles, preferably fresh, available in many grocery stores and supermarkets as well as in specialty shops
1 large tomato, about 3/4 pound (see note)
2 tablespoons butter
1/3 cup finely chopped onion
1/4 teaspoon finely chopped dried rosemary
1/8 teaspoon dried hot red pepper flakes
Salt to taste if desired
Freshly ground pepper to taste

Steps:

  • Bring enough water to the boil to cover the noodles when they are added. Add salt to taste.
  • Meanwhile, drop the tomato into a basin of boiling water and let stand about 9 seconds. Peel the tomato and cut away the core. Cut the tomato into 1/4-inch cubes. There should be about 2 cups.
  • Heat the butter in a saucepan and add the onion and rosemary. Cook, stirring, until the onion is wilted. Add the tomato, pepper flakes, salt and pepper. Cook, stirring often, about 5 minutes.
  • Drop the noodles into the boiling water and cook, stirring, about 3 minutes if the noodles are fresh, 8 to 9 minutes if they are dried. Drain well and add the tomato sauce. Toss.

My grandmother started making this dish for us when we were kids. That was quite a few years ago! She once commented that she must have made a dump truck full of macaroni for us. I still make this -- it's comfort food for me. This is a very butter/tomatoey dish. It's not spicy and meant to be bland so that the creaminess of the butter, the tang of the tomatoes and the flavor of the pasta shine.

2 cups prepared pasta (I prefer egg noodles or elbows)
1 (14 ounce) can crushed tomatoes (you can use whole tomatoes as well and just moosh them up)
2 -3 tablespoons butter

  • Prepare the pasta according to pacakge directions and drain well.
  • While the pasta is draining, melt the butter in the pasta pot.
  • Add the pasta back to the pot, mix well.

12 to 14 ounces somyeon, somen, capellini or other thin wheat noodle
1/4 cup rice vinegar

1 large garlic clove, finely grated
1/2 teaspoon Dijon mustard

2 cups cold filtered water
1 tablespoon toasted sesame seeds
2 radishes, thinly sliced

Steps:

  • In a large bowl, toss together the tomatoes and salt. Let sit until juicy, about 10 minutes.
  • Meanwhile, bring a large pot of water to a boil. Cook the noodles according to package instructions, drain and rinse under cold water. Set aside.
  • Add the vinegar, soy sauce, sugar, garlic, mustard and sesame oil to the tomatoes, and toss with a spoon until well combined. Stir the filtered water into the tomatoes and sprinkle the surface of the broth with the sesame seeds, radishes and scallions.
  • Right before serving, add the ice to the broth. Divide the noodles among bowls, and ladle in the broth and any unmelted ice, making sure each serving gets a nice sprinkling of tomatoes, radishes, scallions and sesame seeds.
