Yield 36

Number Of Ingredients 17

2 cups ground almonds
3 cups red candied cherries
1 ½ cups green candied cherries
1 (8 ounce) package diced candied citron
6 cups golden raisins
8 ounces candied pineapple, diced
1 cup all-purpose flour
1 cup shortening
1 cup all-purpose flour
2 ⅔ cups white sugar
8 egg yolks
4 teaspoons almond extract
⅔ cup brandy
⅔ cup milk
4 ½ cups all-purpose flour
8 egg whites
1 ½ teaspoons cream of tartar

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Place a pan of water in oven. Grease thoroughly and line with heavy brown paper one set of tier pans (one 9 inch, one 7 inch, and one 5 inch).
  • In a large bowl combine ground almonds and fruits. Dredge with one cup flour.
  • In a large bowl, cream together 1 cup flour and shortening. Gradually blend in white sugar. Beat in egg yolks and almond flavoring; beat until very light and fluffy. Mix together brandy and milk; add alternately with 4 1/2 cups flour to creamed mixture. Make 3 dry and 2 liquid additions, combining lightly after each.
  • In another bowl, beat egg whites with cream of tartar to form stiff but moist peaks. Fold into batter. Fold in floured fruit mixture.
  • Bake for 2 1/2 to 3 1/2 hours, depending on size of pan. Bake each cake until it tests done with a toothpick. Remove from pans, and lift off paper. Cool.

CASSANDRA'S "LIGHT" FRUITCAKE RECIPE

Cassandra's

This bourbon-doused fruitcake is sure to turn the taste buds of even the most skeptical holiday guest. This family recipe was a childhood tradition that lived on through Cassandra King after her mother passed-but just slightly askew-until her daddy let her in on the secret touch she was missing: "Every time your mama wasn't looking, I'd sneak into the closet and pour more whiskey over those cakes." If that's not a true Southern tale, we don't know what is.

Time 4h40m

Yield Serves 16-20

Number Of Ingredients 14

3 cups chopped mixed dried fruit (such as cherries, apricots, dates, prunes, and apples)
1 cup chopped dried candied pineapple
1/2 cup currants
1/4 cup finely chopped crystallized ginger (or more to taste)
1 1/2 cups brandy or bourbon, divided
1 cup unsalted butter
1 1/2 cups granulated sugar
5 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 cups pecans, chopped
Cheesecloth

Steps:

  • Combine the mixed dried fruit (including pineapple and currants) and crystallized ginger in a large bowl. Stir together with 1 cup brandy or bourbon; cover and set the mixture aside for 2 hours to infuse the dried fruit.
  • Preheat the oven to 325˚F. Grease a tube pan with cooking spray. Meanwhile, cream together the butter and sugar in a large bowl, and beat in eggs 1 at a time. Stir in the vanilla extract. In a separate large bowl, whisk together the flour, baking powder, and salt. Using a large wooden spoon or spatula, stir the flour mixture into the butter mixture until thoroughly combined (do not beat with a mixer).
  • Stir in the soaked fruit mixture and chopped pecans. The mixture will be thick.
  • Scrape the mixture into the prepared tube pan, smoothing the top with a spatula. Bake 1 hour and 10 minutes or until a toothpick inserted into the center of the fruitcake comes out clean. Cool 15 minutes before removing from pan. Cool completely on a wire rack, about 45 minutes.
  • Soak a layer of cheesecloth in enough brandy or bourbon to thoroughly moisten (about 1/2 cup). Wrap the fruitcake in the cheesecloth, and then wrap it in aluminum foil. Set aside to rest for at least 24 hours before serving to allow the flavors to soak in.

Time 1h5m

Yield 1 8x8 cake, 16 serving(s)

Number Of Ingredients 5

3 eggs
1 cup sugar
1 cup flour
1/2 teaspoon baking powder
2 cups fruit

Steps:

  • Preheat the over to 350F (180C). Butter an 8x8 baking dish.
  • In a big bowl whisk together the eggs and the sugar just until it all comes together, about 30 seconds, no more.
  • Add the flour (and baking powder if using) and wisk together just until the flour disappears and there are no more lumps, about 45 seconds, no more. The batter will be quite thick and there won't be a lot of it.
  • Spread the fruit over the bottom of the dish and spread the batter over. It will barely cover the fruit and it'll look like it's not enough, but it will be great. Alternatively you can mix the fruit with the batter.
  • Bake for 45-55 minutes depending on your oven. A toothpick inserted into the cake should come out clean when the cake is ready.
