12 ounces linguine
1 tablespoon extra-virgin olive oil
1/2 pound sweet Italian sausage, casings removed
1 small onion, chopped
1 stalk celery, thinly sliced
1/2 pound sliced mixed mushrooms
2 cloves garlic, chopped
4 plum tomatoes, chopped
1/2 cup dry white wine or low-sodium chicken broth
2/3 cup heavy cream
3 tablespoons chopped fresh parsley
Freshly ground pepper

Steps:

  • Bring a pot of salted water to a boil; add the pasta and cook as the label directs. Reserve 1 cup of the cooking water, then drain the pasta. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook, stirring, until browned, 3 minutes. Increase the heat to high; add the onion, celery and mushrooms and cook, stirring, until tender, 4 minutes. Add the garlic and cook 1 minute. Reduce the heat to medium high; add the tomatoes and wine and cook, stirring occasionally, until the liquid is reduced by half, about 5 minutes. Add the cream and cook until slightly thickened, about 4 minutes. Stir in the parsley and reduce the heat to low. Add the pasta to the skillet and cook, tossing, until it absorbs some of the sauce, 2 to 3 minutes. (Add some of the reserved pasta cooking water to loosen, if needed.) Season with salt and pepper.

3/4 pound sweet or spicy Italian sausage, casings removed
1 8-ounce package sliced mixed mushrooms
Freshly ground pepper
3 tablespoons tomato paste
1 teaspoon chopped fresh rosemary
1/4 cup heavy cream
Shredded Parmesan cheese, for topping (optional)

Steps:

  • Bring a pot of salted water to a boil. Add the spaghetti and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, heat 1 teaspoon olive oil in a large nonstick skillet over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, about 5 minutes. Transfer to a bowl.
  • Add the remaining 2 teaspoons olive oil to the skillet and increase the heat to medium high. Add the mushrooms, season with salt and pepper and cook until lightly browned, 3 to 4 minutes. Stir in the tomato paste and rosemary and cook, stirring, 1 minute. Return the sausage to the skillet, then add the cream and 1 cup water; bring to a gentle simmer and cook until slightly thickened, 8 to 10 minutes. Season with salt and pepper.
  • Add the spaghetti to the skillet and toss with the sauce, adding some of the reserved cooking water to loosen, if needed. Top with shredded Parmesan, if desired.

1 pound bulk Italian sausage
1 pound baby portobello mushrooms, sliced
3 cloves garlic, minced
1 ½ cups heavy cream
¼ teaspoon salt, or to taste
¼ teaspoon cracked black pepper
½ cup grated Parmesan cheese
1 (8 ounce) package shredded whole milk mozzarella

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Bring a large pot of lightly-salted water to a boil; cook the penne uncovered, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and return to the pot.
  • Meanwhile, heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Cook and stir the sausage in the hot oil until crumbly and no longer pink, about 7 minutes: remove from the skillet, leaving the fat in the pan, and set aside. Pour the remaining 2 tablespoons of olive oil into the skillet and add the mushrooms and garlic. Cook and stir until the mushrooms have browned and begun to release their liquid, about 5 minutes more. Return the sausage to the skillet and pour in the heavy cream. Season with salt and pepper and return to a simmer, cooking until the sauce begins to thicken, about 5 minutes more. Pour the sauce over the pasta and stir. Stir in 1/2 cup mozzarella and Parmesan. Pour into a 9x13-inch baking dish and sprinkle with remaining 1/2 cup mozzarella cheese.
  • Broil in the preheated oven until the mozzarella cheese is bubbly and golden brown, 5 to 7 minutes.

A nice side dish especially with chicken. The rosemary smells wonderful while this is cooking. I found it difficult to find the Bel Paese cheese in my grocery store. I cornered the 'cheese lady' and found a substitute - Port Salut. This says that it is 2 servings, however we felt that this makes more than that as a side dish.

3 Tbsp butter
8 oz mushrooms, sliced
3 medium garlic cloves, minced
1/2 tsp dried rosemary, crumbled
salt and freshly ground pepper
1/2 c whipping cream
4 oz dried linguine
2 oz bel paese cheese, cut into small cubes
chopped fresh parsley

Steps:

  • 1. Melt butter in heavy large skillet over medium-low heat. Add mushrooms, garlic, rosemary and generous amount of pepper. Cook until mushrooms exude their juices, stirring occasionally, about 5 minutes.
  • 2. Add cream and simmer until sauce thickens slightly, about 3 minutes. Season with salt.

1 pound bulk Italian sausage
2 teaspoons butter
1 pound sliced fresh mushrooms

1 lb sweet sausage, casings removed
3/4 lb baby portabella mushrooms, chopped & sliced
1/4 teaspoon crushed red pepper flakes
3/4 cup canned reduced-sodium chicken broth
3/4 cup whipping cream
1 tablespoon butter
1 lb penne
1 cup fresh parmesan cheese, grated

Steps:

  • In a large skillet, over medium heat saute sausage (casings removed) until crumbled and brown.
  • Remove to a paper towel-lined dish with a slotted spoon.
  • Add butter, mushrooms and crushed red pepper to same skillet and saute in sausage drippings.
  • Cover, cook until mushrooms are tender - about 5 minutes.
  • Add chicken broth and whipping cream to skillet - reduce heat to low. Occasionally stirring as sauce thickens.
  • In different pot, cook pasta according to directions on box. Drain pasta. Return to same pot.
  • Add sausage, mushroom mixture, and cheese to pasta.
  • Toss over medium heat, until pasta is coated and sauce begins to thicken.
  • Season with salt and pepper to taste.
  • **Add more chicken broth if sauce seems dry.

1 cup dry white wine (such as Pinot Grigio)
1 cup chicken broth

1 pinch freshly ground black pepper
2 (14.5 ounce) cans diced tomatoes in juice, undrained
¾ cup heavy whipping cream
½ (16 ounce) package linguine pasta
2 links cooked sweet Italian-style chicken sausage, thinly sliced
2 tablespoons basil, cut chiffonade style
¼ cup freshly shaved Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a large saucepan over medium heat. Add onion and cook, stirring, until soft and lightly browned, about 3 minutes. Add garlic and stir until lightly browned, 1 to 2 minutes. Pour in white wine and chicken broth; stir to combine. Season with Italian seasoning, salt, red pepper, and black pepper. Bring sauce to a simmer and cook for 10 minutes.
  • Pour in tomatoes with liquid and cook on a low simmer for 30 minutes. Remove sauce from heat and allow to cool slightly. Pour sauce into a blender and process until smooth. Adjust seasoning with salt and pepper if desired. Return sauce to saucepan and heat over lowest setting until warm. Pour in cream and stir to combine.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, 8 to 10 minutes.
  • Heat a skillet over medium heat and cook sliced sausage until browned and heated through, 3 to 5 minutes.
  • Drain pasta and add to sauce. Gently mix to combine.
  • Divide pasta and sauce amongst individual serving bowls or plates and top with sliced sausage. Garnish with basil chiffonade and Parmesan cheese.

Steps:

  • Heat oil in large skillet over medium-high heat. Add mushrooms, garlic, and nutmeg; sauté until mushrooms are brown and tender, about 10 minutes. Sprinkle with salt and pepper. Stir in cream. Remove mushroom mixture from heat.
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain, reserving 1/2 cup cooking liquid. Return pasta to pot.
