BACKYARD LOBSTER BAKE

Steps:
- Start the fire 1 hour in advance, making sure the coals are white hot before you begin cooking.
- Spread 1/2 of the seaweed on the bottom of the tub to protect the lobsters from burning. Place lobsters on top of seaweed. Place the corn on top of the lobster, and the potatoes on top of the corn. Arrange the raw clams on top of the vegetables and top with the remaining seaweed. Pour the wine into the tub. Place the wet burlap over the food and tuck the edges into the tub to retain the steam inside.
- Place the tub on top of the coals. Every 15 minutes, moisten the burlap with water. Cook for about 45 minutes.
- Serve the lobster bake strewn out on newspapers, with melted butter, piles of coarse sea salt, and favorite spices as condiments.
BROILED LOBSTER, NEW YORK RESTAURANT-STYLE

Steps:
- Fill a large pot with salted water. Bring to a boil and immediately add the lobsters. Cook for 7 minutes.
- Remove the lobsters, split them, brush them with melted butter and place under a broiler for another 7-8 minutes, or just until the meat is cooked and the top is nicely browned.
- If desired, a minute before removing from broiler, you may sprinkle the green tomalley with buttered bread crumbs.
LOBSTER SURPRISE
Steps:
- Lobster:
- Sauté lobster tail in equal parts butter and oil. Cook for 2—3 minutes. Remove from frying pan and cut into 1/2” pieces.
- Topping:
- Mix all ingredients together. In oven dish place artichoke bottoms. Put 1 piece of lobster in each artichoke bottom. Put about 1—1 1/2 tsp. of topping on each artichoke.
- Broil about 3 minutes or till light brown.

LOBSTER PASTA
Steps:
- Bring a large pot of water to a boil. Add the lobster and cook for 6 to 8 minutes, until bright red.
- As soon as the lobster starts cooking, melt 3 tablespoons of butter in a large skillet over medium heat. Add the onion and 3 cloves of garlic. Cook and stir just to release the liquid. Do not let them brown.
- When the lobster comes out of the pot, place it on a cutting board and use a big knife to cut it in half lengthwise. Place the halves meaty side down into the skillet with the onion and garlic. Cook for about 3 minutes.
- Bring another pot of water to a boil and season with a little salt. Add the spaghetti and cook for 8 minutes, or until tender. If you want to save time and a pot, you could boil the pasta in the lobster water since it is already boiling, just add salt.
- Add the tomatoes to the skillet and turn the heat up to high to bring to a boil. Add the olive oil, salt, pepper and cinnamon. Cook, stirring constantly for 5 to 7 minutes. Slowly pour in the cream, stirring constantly. The sauce will become a nice pink color. Turn the heat down to medium-low. Keep warm, stirring occasionally until the pasta is done.
- Drain the spaghetti and place on a large serving plate. Stir in the remaining butter and garlic. Pour the tomato sauce over the spaghetti and arrange the two lobster halves in the center. Sprinkle all over with parsley and serve.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan. In a small saucepan over medium heat, melt 4 squares of chocolate with 1 cup butter.
- In a medium bowl, beat eggs and sugar with the melted chocolate mixture until well blended. Stir in the flour. Spread the batter evenly into the prepared pan.
- Bake for 17 to 20 minutes in the preheated oven. Cool in pan. To make the mint layer: Beat the confectioners' sugar with 3/8 cup of butter in a medium bowl. Gradually beat in milk, green food coloring and peppermint extract. Spread evenly over the brownie layer and refrigerate for at least 1 hour.
- To make the glaze: Melt 3 squares chocolate with 3 tablespoons butter over medium heat or in a microwave oven, stirring frequently until smooth. Spread over the mint layer when completely cool. Chill again to set before cutting into bars.
