TROPICAL MANGO BREAD

Steps:
- Preheat oven to 350 degrees F. Stir together flour, sugar, baking powder, cinnamon and salt in a large bowl. Make a well in the dry ingredients and add vanilla, eggs, oil, fruits, nuts and coconut; mix well. Pour into 2 greased 8-1/2 x 4-1/2-inch loaf pans.
- Bake for 45 to 50 minutes or until a wooden pick inserted near the center of loaf comes out clean. Cool in pans 5 minutes. Remove from pans and cool completely on wire racks. When loaves are cool, mix together ingredients for glaze and pour over loaves.

Steps:
- In a small bowl, dissolve yeast in 1/2 cup warm water. Let stand until creamy, about 10 minutes.
- In a large bowl, beat together the yeast mixture, eggs, pineapple juice, 1/2 cup water, sugar, ginger, vanilla, and melted butter. Gradually stir in flour until a stiff batter is formed. Cover with a damp cloth and let rise in a warm place for 1 hour.
- Deflate the dough and turn it out onto a well floured surface. Divide the dough into three equal pieces and form into round loaves. Place the loaves into three lightly greased round cake pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven for 25 to 30 minutes, or until bottom of a loaf sounds hollow when tapped.

- Preheat oven to 350°. In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in banana, milk, orange zest and extracts. , Combine flour, baking soda and salt; add to the creamed mixture just until moistened. Fold in coconut, nuts and pineapple. - Preheat oven to 325 degrees F.
- Grease and flour two 9 1/2" x 5 1/2" loaf pans.
- Do not use a mixer with this recipe.
- Use a spoon or spatula and stir by hand.
- In medium mixing bowl, combine flour, baking powder, baking soda, and salt; mix well.
- In large mixing bowl, combine sugar, oil, beaten eggs, and coconut extract; mix well.
- Alternately add flour mixture and buttermilk to sugar mixture and stir only until moist.
- Stir in shredded coconut.
- Pour batter into the two prepared loaf pans, place on middle rack and bake for 1 hour.
TROPICAL QUICK BREAD

- Preheat overn to 350 degrees
- Grease bottom of 5x9 loaf pan
- In a large mixing bowl, combine flour, sugar, baking soda and salt.
- Stir in butter, eggs, milk, banans,coconut, pineapple, orange rind, vanilla extract and almond extract.
- Beat on low speed until all ingredients are moistened.
- Beat at medium speed for 2 minutes.
- Stir in Pineapple and coconut.
- Pour into a prepared pan and bake for 70 minutes or until a wooden toothpick comes out clean when inserted into the center of the bread.
- When ready, immediately remove the bread from the pan an onto a plate.
- Cool completely before slicing.
