Easy and delicious Low Carb tacos made with Gorton's grilled salmon and Low Carb tortillas from Trader Joes.

1 packets Gorton's Grilled Salmon (from Gorton's Seafood )
9 Low carb tortillas (from Trader Joe's)
1 cup Lettuce (chopped)
1/2 cup Radishes (chopped)
1 Lime
1 medium Avocado
1/2 cup Cilantro (chopped)
1/2 cup Green onions (chopped)
1 tbsp Red pepper flakes
Sriracha
Queso Fresco

Steps:

  • Preheat the oven to 375° F. Remove salmon from its packet and place it on a baking sheet.
  • Bring to the oven to bake for 15-17 minutes. While the salmon is baking chop the veggies and heat tortillas in a skillet.
  • Once the salmon is ready to remove from the oven. Carefully with a fork crumble the salmon and assemble your tacos.
  • Start with your tortillas, followed by the lettuce, the salmon, and the rest of the veggies and toppings.

  • Mix sour (or coconut) cream, vinegar, garlic and season to taste with salt. Cut the fish across the grain of the flesh into strips roughly 1/2 inch wide, and add it to the cream marinade. Cover and refrigerate for two hours, though preferably overnight!
  • Make a batch of my keto tortillas. You can have them shaped and ready to go for cooking them simultaneous to the fish- as the secret to great tacos is eating them right away!
  • Prepare your frying station by adding enough oil to a skillet or pan to make it about 1/2-inch deep. You can save a lot of oil by using a narrower pan and frying in batches. Heat up oil over medium/low heat while you coat the fish.
  • Mix the whey protein, baking powder, chili powder and salt in a shallow plate or dish. In a second plate or dish, whisk the egg with cream and vinegar.

  • To make the marinade for the fish, add all the ingredients to a bowl, stir well, then cover and leave for at least 30 minutes.
  • Preheat the oven to 425F. Transfer the pieces of fish onto a lined baking sheet, and discard any remaining marinade. Season the fish with salt and pepper, then roast for around 10 minutes or until the fish has cooked through.
  • For hard tacos, drape the tortillas over the bars of your oven grill racks until they are crispy. For soft tacos, heat the tortillas in the microwave for 30 seconds. Load up the the tacos with the slaw and fish, then finish with the avocado crema.
