Greek Salad with Zoodles image

Low Carb Greek salad is a great way to use up garden vegetables. Toss the basic ingredients in Greek salad dressing then serve over fresh zucchini noodles.

6 tablespoons olive oil
3 tablespoons red wine vinegar
1/2 teaspoon dried oregano
1/4 teaspoon sea salt
1/8 teaspoon pepper
2 cucumbers (peeled and sliced)
1 cup tomatoes (cut in bite size pieces)
1 green bell pepper (chopped)
4 ounces feta cheese (cubed or crumbled)
1/2 cup Kalamata olives (pitted)
1 medium zucchini (spiralized into noodles)
8 slices Genoa salami (sliced (not included in nutritional info))
in pepperochini (not included nutritional info)

Steps:

  • In large bowl, whisk together olive oil, vinegar, oregano, salt and pepper to make a dressing.
  • Gently toss in the cucumbers, tomatoes, pepper, feta cheese, and olives.
  • Serve over spiralized zucchini. Add optional toppings, if desired.

These vegetarian Greek zoodles are low carb, keto, and super healthy! The recipe includes yummy artichokes, feta, tomatoes, and black olives!

12 oz zucchini noodles
1 medium tomato, deseeded and chopped
½ tsp minced garlic
6.5 oz jar of marinated artichoke hearts, drained
¼ cup black olives, sliced
½ cup crumbled feta cheese
black pepper

Steps:

  • If you haven't bought them ready made, make your zoodles by using a spiralizer or julienne peeler.
  • Place the zoodles in a large skillet (no oil), and sauté them for a few minutes to reduce the water content, stirring regularly.
  • Add the drained artichoke hearts, tomato, and minced garlic.
  • Once they have warmed through, toss in the crumbled feta cheese, sliced black olives and season with black pepper.

Zoodles (zucchini noodles) are all the rage and I keep looking for new ways to prepare them. I decided to combine my love of Greek salad with the zoodles and came up with this recipe. A great alternative to high-carb pasta salads!

2 zucchini
¼ English cucumber, chopped
10 cherry tomatoes, halved, or more to taste
10 pitted kalamata olives, halved, or more to taste
¼ cup thinly sliced red onion
2 ounces crumbled reduced-fat feta cheese
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
salt and ground black pepper to taste

Steps:

  • Cut zucchini into noodle-shaped strands using a spiralizing tool. Place "zoodles" in a large bowl and top with cucumber, tomatoes, olives, red onion, and feta cheese.
  • Whisk olive oil, lemon juice, oregano, salt, and pepper together in a bowl until dressing is smooth; pour over "zoodle" mixture and toss to coat. Marinate salad in refrigerator for 10 to 15 minutes.
