GREEK SALAD WITH ZOODLES
Low Carb Greek salad is a great way to use up garden vegetables. Toss the basic ingredients in Greek salad dressing then serve over fresh zucchini noodles.

- In large bowl, whisk together olive oil, vinegar, oregano, salt and pepper to make a dressing.
- Gently toss in the cucumbers, tomatoes, pepper, feta cheese, and olives.

- If you haven't bought them ready made, make your zoodles by using a spiralizer or julienne peeler.
- Place the zoodles in a large skillet (no oil), and sauté them for a few minutes to reduce the water content, stirring regularly.
- Add the drained artichoke hearts, tomato, and minced garlic.
- Once they have warmed through, toss in the crumbled feta cheese, sliced black olives and season with black pepper.

Zoodles (zucchini noodles) are all the rage and I keep looking for new ways to prepare them. I decided to combine my love of Greek salad with the zoodles and came up with this recipe. A great alternative to high-carb pasta salads!

Steps:
- Cut zucchini into noodle-shaped strands using a spiralizing tool. Place "zoodles" in a large bowl and top with cucumber, tomatoes, olives, red onion, and feta cheese.
- Whisk olive oil, lemon juice, oregano, salt, and pepper together in a bowl until dressing is smooth; pour over "zoodle" mixture and toss to coat. Marinate salad in refrigerator for 10 to 15 minutes.

- Heat extra virgin olive oil in a large, 12" skillet over medium heat. Add shallots then saute until tender, 5 minutes. Add garlic then saute until very fragrant, 30 seconds. Add zucchini noodles then turn the heat up to medium-high and season with salt, pepper, and dried oregano.
- Saute zucchini noodles until they just begin to soften then add kalamata olives and sun dried tomatoes, and continue sauting until zucchini is al dente. Add feta cheese and desired amount of lemon juice then toss to combine and serve.
