LOW CARB MEATLOAF
Total comfort food and it's low carb! That saucy topping is the perfect combo of sweet and tangy.

Steps:
- Preheat oven to 375 degrees.
- Mince the green pepper, onion, and garlic.
- Add to a large bowl with the ground beef, eggs, almond flour, cheddar, Parmesan cheese, Worcestershire sauce, salt, and pepper. Use your hands to combine.
- Shape mixture into a loaf, about 7x4 inches, and place in a 9x13 baking dish.
- Cut the bacon slices in half and drape over the meatloaf.
- Bake for 25 minutes.
- Whisk together the ketchup and Italian dressing. Spoon half of the mixture over the meatloaf.
- Increase heat to 425 and bake an additional 10 minutes and then spread the remaining sauce over the meatloaf.
- Continue baking for 10-15 minutes or until the internal temperature reaches 160 degrees.
- Let rest 5 minutes before slicing and serving.

MOZZARELLA MEATLOAF
My father-in-law hated meatloaf until he tried mine (he's Italian). Well...! He went nuts over it (must have been the garlic...hahaha!)

Steps:
- 1. Preheat oven 375 degrees. Grease or spray a large, glass bread dish or an oblong glass or aluminum dish (9x12). Mix ingredients and place on top of wax paper on the counter. Shape into a rectangle. Drain mushrooms and sprinkle evenly over hamburger. Distribute shredded mozarella on top of the mushrooms, and press gently into the meat.
- 2. Lift wax paper with both hands on short side and roll until you reach the other end. Wet hands and tuck in the ends and seal. Lift wax paper and slide into dish so seam side is on bottom of dish.
- 3. Cook for 1/2 hour. Remove and drain any grease off. Take remainder of tomato sauce and pour evenly over top of meatloaf. Bake for 1/2 hour more.
- 4. Remove and let rest for 10 minutes. Remove meatloaf to a serving platter (I use two spatulas). Slice and serve. Deliciosi!!!

- 1. Preheat oven to 350 degrees and ready a nonstick 9x5 loaf pan for baking. (Or spray a regular loaf pan with nonstick cooking spray.) 2. In a large bowl, mix the ground beef, 1 cup of the marinara sauce, diced red onion, eggs, Parmesan cheese, Italian seasoning, and salt and pepper. (This is easiest done with your hands.) 3. Evenly fill loaf pan with the meatloaf mixture, patting with your hands to form an even top. Bake uncovered for 45 minutes. 4. Remove loaf from oven; drain any excess fat or liquid, and then top with the remaining 1⁄2 cup of marinara sauce, and all of the mozzarella cheese. Return to oven and bake an additional 30 minutes, or until a meat thermometer registers 165 degrees. Drain fat from pan once more and let rest 10 minutes before cutting into 8 equal slices. George's Tips | When buying marinara sauce, it is very important to read the labels! Look for the sauce that is the lowest in sugar. While tomatoes contain some natural sugars, check the ingredients list for any sugar or corn syrup that may have been added. With so many jars to choose from, there's no need to buy the one with added corn syrup! Variation | If you do not have a loaf pan, simply form a rounded loaf by hand in a large baking dish. ITALIAN SPINACH & MOZZARELLA STUFFED MEATLOAF
Italian spinach & mozzarella stuffed meatloaf is an easy and low carb family dinner. Topped with marinara and cheese, it's healthy, yet anything but boring!

- Add 1 TBS of olive oil to small sauce pan. Add in diced onions and minced garlic. Cook until slightly softened and fragrant, about 5 minutes.
- Add in crushed tomatoes, oregano, dried basil, dried parsley, salt and pepper. Bring to boil, cover and let simmer for at least 20 minutes.
- Preheat oven to 375 degrees. Spray 9×5″ loaf pan with non stick cooking spray.
- Add 1 TBS olive oil to saute pan. Add in 3 cups fresh spinach and cook until wiled, about 5-7 minutes. Set aside.
- Add ground chicken to large bowl with remaining 1 cup of finely chopped fresh spinach, onion, garlic, grated cheese, egg, bread crumbs, oregano, dried basil, parsley, salt, pepper and 2 TBS olive oil. Mix with your hands until well combined.
- Spread half of the meat mixture evenly into your loaf pan. Layer with cooked spinach, about ½ cup marinara sauce (until meat is evenly covered) and fresh mozzarella slices (about half mozzarella ball).
- Top with remaining half of meat mixture, spread evenly.
- Bake for 1 hour or until internal temperature reaches 160 degrees.
- Remove from oven, and top with another ½ cup of sauce and remaining half of mozzarella slices. Bake for another 10 minutes until mozzarella is melted. (I like to turn my broil on for the last 2 minutes to get my mozzarella lightly golden).
- Remove from oven, top with fresh basil and let sit 10 minutes before serving.

- In a bowl mix together all ingredients except the mozarella and spinach.
- On a piece of waxed paper or plastic wrap - spread out the meat mixture - place the spinach ontop - pressing it in slightly - top with Mozarella cheese - and roll it up using the waxed paper or plastic wrap to help you roll it together tightly.
- Place in an oven safe dish - bake at 350 degrees for 1 - 1 1/4 hours.
- Remove from the oven and let it rest for 10 mins before cutting.
- Serve with a tossed salad -.

- Simmer sauce over low heat, stirring occasionally until thickened and reduced, about 30 minutes. Taste and season again with salt and black pepper if needed. Discard basil and garlic cloves. Puree if desired.
