HEALTHY SHRIMP FRIED RICE
Steps:
- Add extra virgin olive oil to a large skillet and bring to medium heat. Add bell peppers and shredded carrots to the skillet. Cook 5 minutes just until the veggies are tender, stirring them occasionally.
- Add the shrimp the skillet with ginger, garlic and black pepper. Stir and cook 3-4 minutes then flip the shrimp.
- Once the shrimp is cooked, add the coconut aminos, chili paste, rice wine vinegar and green peas to the pan. Stir and cook another 5-6 minutes until cauliflower rice is coated in the sauce and soft.
- Serve immediately garnished with sliced green onions. Store in the refrigerator up to 5 days.

Steps:
- Using a Rice Cooker, cook the Jasmine Rice. (You can use a different method to cook it, if you want.).
- Scramble and Cook the egg.
- Chop egg up and put on a small plate.
- When rice is done, add garlic salt, stir with rice still in cooker.
- Stir in Soy Sauce, and egg.
- Enjoy!

Steps:
- Combine baking mix and Old Bay - adjust amount of Old Bay to your own taste.
- Toss shrimp in breading mixture to coat.
- Fry in oil preheated in deep skillet on stove. Shrimp should only take 2 mins or so to fry.
- Top lightly with fresh ground pepper.

- Combine broth, soy sauce and chile-garlic sauce to taste in a small bowl. Set aside. Cut shrimp into ½-inch pieces and pat with paper towels until thoroughly dry (if they are wet, they will turn your stir-fry soggy).
- Heat a 14-inch flat-bottomed carbon-steel wok (or 12-inch stainless-steel skillet) over high heat until a drop of water vaporizes within 1 to 2 seconds of contact. Swirl in 1 Tbsp. oil. Add garlic and ginger; using a metal spatula, stir-fry until the ginger is just fragrant, about 10 seconds. Add the shrimp and stir-fry just until they start to turn pink, about 1 minute. Remove to a plate.
- Swirl in the remaining 1 Tbsp. oil. Add mushrooms and carrots; stir-fry for 1 minute. Add cauliflower, edamame, and the reserved broth mixture. Cover and cook over high heat for 1 minute. Uncover and stir-fry for 1 minute. Return the shrimp to the pan and stir-fry until the shrimp are just cooked through and vegetables are tender-crisp, about 1 minute. Sprinkle with cilantro.

- Heat butter in a large skillet over medium high heat. Add shrimp to the skillet and saute for 30 seconds on each side. Then remove and set aside.
- Add in mushrooms, cauliflower rice, vegetables, liquid aminos, white vinegar, sesame oil and monkfruit sweetener. Cook for 3-4 minutes or until vegetables are heated through.
- Add back in the shrimp. Create a well in the middle of the skillet by pushing the cabbage mixture off to the sides. Crack the eggs in the center of the well and let cook until the edges turn white before scrambling the egg into the fried rice mixture.
