KETO CRANBERRY STREUSEL BARS



Keto Cranberry Streusel Bars image

Low-carb bars with a good balance of sweet-tart for breakfast, dessert, or a snack. The kids will love them too!

cooking spray
2 cups almond flour
⅓ cup low-calorie natural sweetener (such as Swerve®), or more to taste
6 tablespoons butter, melted
1 teaspoon almond extract
2 cups fresh cranberries
⅓ cup low-calorie natural sweetener (such as Swerve®), or more to taste
¼ cup orange juice
1 teaspoon grated orange zest
¼ teaspoon arrowroot powder
⅓ cup chopped pecans
½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking pan with cooking spray and set aside.
  • Pour almond flour, sweetener, melted butter, and almond extract for crust in a medium bowl and mix well. Set aside 1/3 of the mixture to be used later for the streusel topping. Press remaining 2/3 of the mixture into the prepared baking pan.
  • Bake in the preheated oven until partially golden, about 5 minutes. Remove and set aside.
  • Combine cranberries, sweetener, orange juice, orange zest, and arrowroot powder in a small saucepan. Bring to a boil over medium heat; reduce heat to medium-low and let simmer until all of the cranberries have popped, about 10 minutes. Remove from heat and let cool for about 5 minutes. Spread cranberry filling over the crust.
  • Stir pecans and cinnamon into the remaining crust mixture, mixing until incorporated. Sprinkle streusel topping evenly over the cranberry mixture.
  • Bake in the preheated oven until set, about 30 minutes. Remove from the oven and cool completely before cutting into bars, 30 minutes to 1 hour.

This crustless pumpkin pie is so rich and delicious! The streusel topping really takes it over the top.

1 can (15 ounces ) pure pumpkin
1 cup heavy cream
2 large eggs
¾ cup sweetener, such as monkfruit
1 tablespoons pumpkin pie spice
1/2 cup almond flour
½ cup chopped pecans
3 tablespoons brown sugar substitute, such as monkfruit
2 tablespoons coconut flour
1 teaspoon cinnamon
1/4 cup melted butter

Steps:

  • Preheat oven to 350 degrees.
  • Add the filling ingredients to a large mixing bowl and whisk well to combine.
  • Spray a 9 inch standard plate with non-stick spray. Pour filling into pie plate.
  • Bake for 45 minutes. Filling will still be somewhat jiggly.
  • Add the topping ingredients to a small mixing bowl and stir to combine.
  • Sprinkle the streusel evenly over the pie and return to the oven for 15-20 minutes or until a knife inserted in the center comes out clean.
  • Cool on the counter for 1 hour before transferring to the refrigerator to cool completely, about 3 hours.

1 Tablespoon unsweetened protein powder- I like vanilla
1 teaspoon THM Sweet Blend, or 2 teaspoons Gentle Sweet, or ½ to a full packet of your favorite sweetener
1 teaspoon cold or room temp butter
1-2 drops of flavoring or essential oils to add flavor, optional

Steps:

  • Mix protein powder & sweetener together in a small dish.
  • Add 1 teaspoon butter, and cut in with a fork.
  • You can now add a drop or two of favoring or essential oil if you want an additional flavor boost.
  • Top your favorite muffin or cake with this mix and bake as directed
