Steps:
- Cook macaroni according to package directions, adding broccoli during the last 5 minutes of cooking. Drain., Meanwhile, in a Dutch oven, heat oil over medium-high heat. Add chicken, onion, salt and pepper; cook and stir 6-8 minutes or until chicken is no longer pink. Remove from pan., In same pan, melt butter. Stir in flour, paprika and cayenne until smooth; gradually whisk in milk and broth. Bring to a boil, stirring constantly; cook and stir 2-3 minutes or until thickened. Stir in cheese and mustard until cheese is melted., Add macaroni mixture and chicken to sauce. Heat through, stirring to combine.

CHICKEN MAC AND CHEESE RECIPE

Steps:
- Heat 1 tsp of the butter in a pot or a large skillet over high-medium heat
- Add salt and pepper to the chicken and put the chicken into the pot
- Cook for around 5-7 minutes until slightly brown and cooked through
- Remove the meat from the pot.
- Add the second tsp of butter and the garlic and cook for 1-2 minutes
- Pour in the chicken stock and milk, add the mustard and the nutmeg, stir and bring to boil.
- Once boiling add the pasta and give it a good stir.
- Reduce heat to medium-low and cook pasta for 9-10 minutes while stirring regularly (note 1)
- Once the pasta is cooked, remove the pot from the stove, add all three cheeses and stir thoroughly to bring them all to melt.
- Add salt and pepper to taste.
- Put the chicken with all the accumulated juices into the pot, fold it in and serve immediately.

- Preheat oven to 350 degrees and lightly spray a 9×13 inch baking dish with cooking spray.
- Cook pasta according to package directions. Drain and set aside for a few minutes.
- To prepare roux, melt butter into a medium saucepan over medium heat. Once melted whisk in flour, salt and pepper. Stir and cook for 3-4 minutes until color of roux will gets slightly darker. Slowly whisk in milk, stirring continuously until thickened, about 2 minutes. Reduce heat to a simmer and stir in cheese until melted.
- Transfer cooked pasta to large dutch oven or pot over low heat. Pour cheese sauce over top, stirring to combine.
- Add chicken, broccoli, asparagus, onion and bacon, stirring to combine.
- Transfer mac and cheese to prepared baking dish. Top with additional shredded cheese and bake for 25-30 minutes, until cheese is melted. Serve warm.

FLORENTINE MAC AND CHEESE AND ROAST CHICKEN SAUSAGE MEATBALLS

- Preheat oven to 450 degrees F.
- Place a large pot of water on to boil for pasta. When it comes to a boil, salt it and add the pasta to cook to al dente. Strain pasta reserving 1 cup cooking liquid.
- While the water is coming to a boil, in a large mixing bowl combine the chicken, salt and pepper, rosemary, fennel seeds, garlic, crushed red pepper flakes, ricotta cheese, 1/2 cup grated Parmigiano - a rounded handful, egg and bread crumbs. *If the mixture seems too wet, add a handful of bread crumbs and mix together.
- Form 8 large round balls, about 3 to 4-inches. Coat balls in a couple of tablespoons of extra-virgin olive oil and lightly grease a baking sheet with 1 tablespoon extra-virgin olive oil. Arrange balls on the baking sheet and roast 17 to 18 minutes until juices run clear.
- Defrost spinach in microwave 8 to 10 minutes on "defrost" setting depending on the microwave. Place the boxes in a shallow dish to catch any run off.
- While the meatballs roast, in a medium sauce pot over medium heat, melt butter, whisk in flour, cook 1 minute then whisk in stock and milk, season with salt, pepper and nutmeg and thicken 5 to 6 minutes. Stir in the remaining 1 cup grated Parmigiano and reduce heat on lowest setting.
- Wring spinach completely dry in clean kitchen towel then separate as you add it to the sauce. Also add the reserved 1 cup pasta cooking liquid.
- Toss pasta with the spinach-white sauce and adjust seasonings.
- Serve Florentine Mac-n-Cheese with 2 meatballs per person along side.
CHICKEN FLORENTINE MAC AND CHEESE

- Cook the pasta according to the package instructions. Drain and set aside.
- Heat half the butter in a braiser over medium heat. Add the chicken, then sprinkle with a pinch of salt and pepper. Cook until the chicken is browned on all sides and cooked through, about 4 minutes. Add the garlic, then stir and cook briefly. Add the chicken stock, scraping the bottom of the pan as it boils. Add the milk, cream and the remaining 3 tablespoons butter and cook, stirring, until it is warmed through and the sauce is simmering.
- Toss together the Cheddar, fontina and cornstarch in a bowl.
- Sprinkle the shredded cheese mixture into the pan, stirring constantly until the cheese is completely melted. Add the processed cheese cubes and allow them to melt. Bring to a simmer and allow the sauce to thicken, about 1 minute. Add the cooked macaroni, the spinach and tomatoes, then stir until well combined. Taste and adjust the seasonings. Garnish with the fresh parsley and serve.

- Preheat oven to 350°. In a 6-qt. stockpot, cook macaroni according to package directions for al dente; drain and return to pot., Meanwhile, in a medium saucepan, melt butter over medium heat. - Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook macaroni as directed on package; drain.
- In 4-quart saucepan, heat milk over medium-high heat until steaming and bubbling around edges. Stir in 1 cup of the Cheddar cheese, the Monterey Jack cheese, Velveeta™ cheese and seasoning mix. - Cook pasta according to package instructions. Drain and rinse with cold water to keep the pasta from sticking together. Set aside.
- Heat the olive oil in a large skillet. Add the chicken and cook for 5 to 7 minutes until no longer pink and cooked through. Transfer the chicken to a plate.
- In the same skillet add the onions and cook for 3 to 5 minutes until softened and translucent. Add the garlic and cook for 30 seconds until aromatic. Season with salt and pepper to taste.
- Sprinkle the flour over the onion mixture and stir. Cook for another minute. Whisk in the milk and dried mustard. Add the mozzarella, cheddar cheese and stir it in. Continue to cook until the cheese has melted.
- Add the chicken and pasta to the skillet and stir everything together. Taste for seasoning and adjust as necessary with salt and pepper if needed.
- Serve garnished with freshly grated Parmesan cheese.
