- Preheat oven to 400 degrees F. Cook macaroni in large saucepan as directed on package for al dente pasta. Rinse under cold water; drain well.
- Melt butter in same saucepan on medium heat. Sprinkle with flour and seasonings. Cook and stir 2 minutes or until well blended. Gradually stir in milk until smooth. Stirring constantly, cook 3 minutes or until sauce starts to thicken. Stir in cheese until melted and smooth. Remove from heat. Add macaroni; toss gently to coat. Pour into greased 13x9-inch baking dish. Mix panko and paprika; sprinkle evenly over top.
- Bake 25 to 30 minutes or until bubbly and golden brown on top. Let stand 5 minutes before serving.

OLD SCHOOL MAC N' CHEESE
This is a completely unpretentious, down-home macaroni and cheese recipe just like my grandma and mom always made. A simple white sauce where you add cheese and a few other flavors with macaroni and a potato chip crust. This recipe makes a lot, I like to make two pans so I can take one to a pot luck and have the other one to keep in the fridge for later. It's an easy recipe to adjust down if you only want to make one pan. If you aren't cooking it right away, just keep the topping separate until you are ready to put it in the oven.

- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain.
- Melt butter in a large pot over medium-low heat. Slowly add flour to butter, whisking constantly; cook until brown and the mixture no longer smells of flour, about 5 minutes. Pour 1 cup milk into the flour mixture, whisking continually until fully incorporated, about 45 seconds; repeat twice. Add remaining 3 cups milk to the mixture, whisking to incorporate. Stir Worcestershire sauce, mustard powder, onion powder, and cayenne pepper into the mixture; season with salt and black pepper.
- Reduce heat to low. Cook sauce, whisking frequently, until it begins to thicken, about 10 minutes. Add about half the package of shredded Cheddar cheese; stir continually until the cheese melts completely. Repeat with remaining half package of Cheddar cheese and the American cheese, about 4 ounces at a time. Once cheese is entirely incorporated, remove sauce from heat.
- Stir drained macaroni into the cheese sauce to coat. Divide macaroni between two 9x13-inch baking dishes.
- Mix crushed potato chips, 1 cup shredded Cheddar cheese, and Parmesan cheese in a bowl. Top the macaroni with the potato chip mixture evenly. Spray the potato chip mixture with cooking spray.
- Bake in preheated oven until the crust is golden brown and the sauce is bubbling, 35 to 45 minutes.

- Preheat oven to 350°; bring 6 quarts of salted water to a boil; add in macaroni and cook, stirring occasionally, 8-10 minutes until al dente; drain and place in a large bowl.
- To blanch the spinach: bring 4 quarts salted water to a simmer over med-high heat; have ready a large bowl of ice water and a slotted spoon; add spinach to simmering water (in three or 4 batches) and submerge it.
- Let cook about 15 seconds, remove with the slotted spoon, and plunge into the ice water; let spinach cool completely, drain it, and squeeze out the excess water; if the leaves are large, chop them into bite-sized pieces; set aside.
- In a blender or food processor, puree the feta cheese with the milk, lemon juice, olive oil, salt, and pepper (blend in two batches, if needed); this will not be completely smooth; there will be very small chunks of cheese remaining.
- Stir the cheese mixture into the cooked macaroni; then add the minced rosemary and thyme, garlic, red pepper flakes, olives, cherry tomatoes, and blanched spinach.
- Transfer mixture to a 13x9 inch baking dish; sprinkle with parmesan cheese and the mixed herbs.
- Bake on the middle shelf 25-30 minutes until the pasta is heated through and the top is slightly browned.

- Preheat oven to 400 degrees. In a large pot of boiling water, cook the elbow macaroni until al dente. Drain thoroughly and set aside. Melt 1 tablespoon of the butter in a large skillet over medium heat. Add sausage and cook, stirring, until browned. Remove sausage from pan and set aside. Melt remaining 3 tablespoons of butter in the pan. Add onions and cook, stirring, until soft. Stir in flour and cook until bubbly. Remove from the heat and slowly add the milk. Return to the heat and cook, stirring until the sauce starts to boil and begins to thicken. Remove from heat and stir in the caraway seeds,white pepper and drained macaroni. Stir until well mixed. Season to taste with salt and pepper. Pour half the macaroni mixture into a buttered, shallow 2 1/2 quart baking dish. Evenly distribute half the sausage and then half the cheese over the macaroni. Layer on the remaining macaroni, then sausage and then cheese. Bake, uncovered, in a 400 degree oven until cheese is bubbly and the center of the casserole is hot, about 25 minutes. Serve immediately.

- Cook and drain elbow pasta and place into a buttered roasting pan.
- In a saucepan on the stovetop, melt 1/2 stick butter or margarine.
- Saute onions for 3 minutes.
- Mix flour into the cold milk, stirring to remove any lumps; Pour milk/flour mixture into saucepan with salt, pepper, nutmeg, and dry mustard.
- Cook until just hot; stir in cheddar cheese and pour over elbow macaroni in roasting pan.
- Melt the other 1/2 stick butter or margarine and mix into breadcrumbs to moisten.
- Sprinkle on breadcrumbs and paprika.
- Bake in 350 degree oven for 35 minutes or until golden brown on top.

- In a heavy-bottomed pan, heat the butter over medium heat. Add the onions and cook just until they begin to brown. Turn the heat to low and slowly caramelize the onions until they are soft, brown, and sweetly fragrant, stirring occasionally to prevent them from sticking to the pan. Add a tablespoon of water here and there if necessary to keep them from cooking too fast. When they are done, remove the onions to a bowl and set the pan aside. Do not wash it.
- In a bowl, combine the eggs and 1/4 cup of the heavy cream, beating to mix. In another, smaller bowl, combine the flour, salt, and pepper, combining well. Slowly add the dry ingredients to the wet, stirring with a wooden spoon. Do not overmix: stop stirring as soon as the batter is smooth and the flour has disappeared into the cream and eggs. Cover the batter and let it rest for 20 minutes.
- While the batter is resting, bring a large pot of water to boil. Once it’s bubbling madly, add a few tablespoons of salt and bring it back up to a boil.
- Set your spätzle maker over the pot and press the dough through the holes into the boiling water. (If using a flat cheese grater, just press the dough through the holes with your fingers or a wooden spoon.) You’ll need to work in two or three batches depending on how big your pot is. Once the spätzle float to the top, let them cook for another 2 minutes. Remove them with a slotted spoon and set them to dry on a plate lined with a paper towel.
