Baked Macaroni and Cheese image

A friend of mine sent this recipe to me when I got my first apartment, because she knows how much I hate cooking! It's really easy -- even I can make it -- and tastes great. I'm not sure where she found the recipe, but it included the note 'Good source of protein, vitamin A, B group vitamins, calcium.'

1 (12 ounce) package macaroni
1 egg
2 cups milk
2 tablespoons butter, melted
2 ½ cups shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.
  • In a large pot of salted water, lightly boil the macaroni for about 5 minutes until half-cooked.
  • Whisk the egg and milk together in a large cup. Add butter and cheese to the egg and milk. Stir well.
  • Place the lightly cooked macaroni in the prepared baking dish. Pour the egg and cheese liquid over the macaroni, sprinkle with salt and pepper, and stir well. Press the mixture evenly around the baking dish.
  • Bake uncovered, for 30 to 40 minutes, or until the top is brown.

I love Mac & Cheese. So I created it just the way I like it. Hope you like it too. You can cut the prep time in half if you grate and cut up the cheese the day before.

8 ounces elbow macaroni
10 ounces Kraft macaroni and cheese, dinner (with the can of creamy cheese)
1/2 cup butter (softened)
1/3 cup seasoned bread crumbs
1 (13 ounce) can Carnation Evaporated Milk
16 ounces sharp cheddar cheese
8 ounces colby cheese
8 ounces monterey jack cheese
8 ounces Velveeta cheese
1/4 teaspoon celery salt
2 teaspoons onion powder
2 large eggs, beaten
2 teaspoons goya vegetable seasoning
salt and pepper (to taste)

Steps:

  • Cook macaroni about 3 minute less than the package directions.
  • While the macaroni is cooking:.
  • Grate about 2 ounce each of colby, monterey jack and half of the cheddar. Cut rest of the blocks into medium cubes. Slice the Velveeta. Set aside 1/2 cup of grated cheese to mix with bread crumbs.
  • Drain macaroni. Put butter, milk, grated cheese, celery salt, onion powder, salt, pepper, vegetable seasoning, cheese sauce in can and sliced Velveeta in a large saucepan.
  • Heat on low heat until cheeses are creamy. Put hot macaroni in large bowl. Add sauce, mix well. Add beaten eggs and mix well. Add cheese cubes. The cheese cubes will not melt completely. Add more milk if needed. Mix thorougly. Adjust seasoning if necessary.
  • Pour into large baking dish. Mix remaining grated cheese and 1/3 cup bread crumbs together. Sprinkle on top of mac and cheese. Drizzle 2 tablespoons melted butter on top of grated cheese and bread crumbs.
  • Bake at 350 for 35 to 45 minutes. Put under broiler to lightly brown the bread crumbs on top. Let set 15 minutes before serving.
  • If you like it cheezy, this is for you.

2 2/3 cups small elbow macaroni (or bow ties or ditali)
4 tablespoons butter
1 cup fresh whole wheat bread crumbs
1/4 cup all-purpose flour
1 1/2 cups milk
1 1/2 cups vegetable or chicken broth
4 green onions, thinly sliced
3 cups (12 ounces) grated cheddar cheese

Steps:

  • Cook macaroni in boiling salted water until tender, but firm. Drain well. Preheat the broiler. Melt the butter in a saucepan. Remove and toss 1 tablespoon of the butter with the bread crumbs. Reserve. Add the flour to the remaining butter, whisking for 2 minutes. Slowly whisk in the milk and broth. Bring to a boil, whisking constantly. Add green onions. Whisk 2 minutes longer. Remove from heat or keep on very, very low
  • heat. Add half of the cheese, stirring until smooth. Add remaining cheese, stirring until melted and smooth. Add the macaroni to the sauce and stir well. Spoon into a 2-quart shallow baking dish. Sprinkle with the buttered crumbs. Broil until the crumbs brown, about 2 minutes. Serve immediately. (If you wish, the mixture can be prepared before broiling up to several hours ahead and refrigerated. You may need to stir in a little more milk or broth if it thickens to much. Then bake, covered, for 15 minutes at 375 degrees. Uncover, and bake about I0 minutes more until crumbs are browned and casserole is hot and bubbly.)
  • IDEAS FOR LIVENING UP BOXED MAC AND CHEESE
  • Stir in chopped pasta-ready canned tomatoes and chopped fresh basil (Italian)
  • Stir in a can of chopped green chiles and a teaspoon of chili powder (Mexican)
  • Stir in a can of drained water-packed tuna fish, a small can of olives, and some chopped fresh herb such as parsley, basil, thyme, tarragon, sage, or chives

I am one of those people who never follows the recipe, so this recipe is great as it lends itself to that very well. It's also a great dish to throw in all the left over meat and veggies that you may have. Generally I add ingredients until it tastes good.

2 slices bacon
4 cups macaroni
1 pinch dried basil
1 teaspoon olive oil
1 (14.5 ounce) can stewed tomatoes
1 cup shredded Cheddar cheese
1 green bell pepper, chopped
2 carrots, chopped
1 cup shredded Cheddar cheese
1 tomato, sliced
2 teaspoons dried basil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • In large pot, cook macaroni pasta in boiling salted water with a pinch of basil and one teaspoon of olive oil until al dente. Rinse with cool water. Drain.
  • Meanwhile, use a blender to mash the whole peeled tomatoes. In a large bowl combine mashed tomatoes, 1 cup of the grated Cheddar cheese, chopped bacon and bell green pepper, bacon, and chopped carrots. Mix well. Add the cooked macaroni and toss well to coat evenly.
  • Place in 2 quart baking dish. Sprinkle the remaining 1 cup grated Cheddar cheese and 2 teaspoons basil on top. Layer the sliced tomatoes over all.
  • Bake in preheated oven for 20 minutes.

This is how we do mac and cheese in Australia. So simple, only four ingredients, using only one dish. This is always a hit at any BBQ with never any leftovers! Serves 4 sides. It really is just a chuck in a hand ful of this and a handful of that recipe, but i have tried to give you measurements. You can change the amounts to suit your taste and it is also easily doubled or adapted to suit your dish size.

300 ml heavy cream
1 cup bacon, diced (cooked or uncooked, it doesn't matter)
2 cups pre-shredded mozzarella cheese
4 cups cooked macaroni

Steps:

  • Preheat your oven to moderate (180 Celcius).
  • Spray a casserole dish with olive oil spray ( or grease with whatever is on hand).
  • Put your cooked macaroni in the dish.
  • Stir through the bacon and cheese.
  • Pour in the cream and stir through again.
  • Place in the oven and bake ( you can give it a stir half way through) for approx 40 minutes, or until the top is browning slightly or bubbling.
  • Remove and serve.
