1 pound ground beef
1 can (16 ounces) refried beans
1/2 cup finely chopped onion
3 cans (8 ounces each) tomato sauce, divided
2 teaspoons chili powder
1 teaspoon minced garlic
1/2 teaspoon ground cumin
12 flour tortillas (10 inches), warmed
1 can (4 ounces) chopped green chiles
1 can (4 ounces) chopped jalapeno peppers
Oil for deep-fat frying
1-1/2 cups shredded cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the beans, onion, 1/2 cup tomato sauce, chili powder, garlic and cumin. , Spoon about 1/3 cup of beef mixture off-center on each tortilla. Fold edge nearest filling up and over to cover. Fold in both sides and roll up. Fasten with toothpicks. In a large saucepan, combine the chilies, peppers and remaining tomato sauce; heat through., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry the chimichangas for 1-1/2 to 2 minutes on each side or until browned. Drain on paper towels. Sprinkle with cheese. Serve with sauce.

1 lb ground beef
1 onion (chopped)
1 ½ c cheese (shredded (cheddar, Mexican, jack, etc.))
16 oz refried beans
½ c salsa (homemade can be used - I just used premade store bought)
12 flour tortillas
2 tbsp butter (melted)

Steps:

  • Preheat oven to 425 degrees.
  • Saute onion and add ground beef in a skillet.
  • Cook until no longer pink (approx 7-10 mins).
  • Take off heat and drain.
  • Stir in refried beans, salsa and cheese after cool for a minute.
  • Melt butter and brush on tortillas, both sides. Wax paper can be used for less mess.
  • Spoon about 1/4 c. of beef mix into the center of the tortilla.
  • Fold sides over tortilla, like a burrito.
  • Place on baking sheet, seam side down.
  • Make sure to space them out so they are not touching.
  • Bake for 5-7 minutes per side or until golden brown.
  • Optional - sprinkle with additional cheese and return to oven to melt cheese (watch closely to avoid burning them).
  • Serve with favorite toppings - Sour cream, lettuce, olives, additional cheese, tomatoes, guacamole, etc.

1 pound ground beef
1 small onion, chopped
1 clove garlic, minced
½ teaspoon taco seasoning mix, or more to taste
1 teaspoon dried oregano
¼ cup sour cream
1 (4 ounce) can chopped green chilies
2 tablespoons distilled white vinegar
1 cup shredded Cheddar cheese
¼ cup margarine
6 (7 inch) corn tortillas

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Brown the ground beef, onion, garlic, taco seasoning, and oregano in a skillet over medium heat, breaking the meat up into crumbles as it cooks, about 8 minutes. Drain off excess fat. Stir in sour cream, chilies, and vinegar until well mixed. Remove from heat, and mix in the Cheddar cheese.
  • Melt margarine in a small skillet over low heat. When melted, dip each tortilla into the margarine for about 30 seconds, or until soft. Place the softened tortilla onto a baking sheet, and fill with about 1/3 cup of the meat mixture. Fold the right and left sides of the tortilla over the filling, then the top and bottom, making an envelope that completely encloses the filling. Flip the tortilla seam side down on the baking sheet. Repeat with remaining tortillas and filling.
  • Bake in the preheated oven until the tortilla is crisp, about 15 minutes.

1 jar (16 ounces) salsa

These easy, homemade burritos are freezer-friendly and can be reheated in the microwave. Just a little bit of prep work yields a batch of the best grab-and-go burritos you'll ever have!

1 lb lean (at least 80%) ground beef
2/3 cup water
1 package (1 oz) Old El Paso™ original taco seasoning mix
1 cup Old El Paso™ traditional refried beans (from 16-oz can)
1 cup hot cooked rice
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro leaves
8 Old El Paso™ flour tortillas for burritos (8 inch; from 11-oz package)
1 cup shredded pepper Jack cheese (4 oz)

Steps:

  • In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in water and taco seasoning mix; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes, stirring frequently, until thickened.
  • Heat beans as directed on can. In small bowl, add hot rice, lime juice and cilantro. Stir to combine.
  • Heat tortillas as directed on package. Spread 2 tablespoons of the beans in middle of each tortilla, leaving 1-inch border around edges. Sprinkle 2 tablespoons cheese over beans. Spoon 1/4 cup beef mixture and 2 tablespoons rice mixture evenly down center of each. Fold bottom of each tortilla 1 inch over filling. Fold sides in, overlapping to enclose filling. Fold top over sides.
  • To freeze: Wrap each burrito in foil. Label 1-gallon resealable freezer plastic bag. Transfer burritos in single layer to bag; remove as much air as possible, and freeze up to 1 month. To heat: Remove 1 burrito from foil, and wrap in lightly dampened paper towel. Place on microwavable plate; microwave uncovered on High 3 minutes to 4 minutes 30 seconds, turning once, until heated through (at least 165°F).

Here's how we use this recipe to its full potential: Pick up the boneless beef chuck roast when it's on sale or when there's a busy week ahead. It's a versatile meal starter and can save money that might otherwise be spent on emergency pizza delivery or unsatisfying drive-through meals. When you've got a few extra minutes to spend in the kitchen, sear the beef and toss it in the slow cooker. Once the meat is done, it's simple enough to shred it and parcel it up into packages that are the right size for all kinds of family meals.

2 tablespoons vegetable oil
1 1/2 teaspoons salt
1 teaspoon pepper
1 teaspoon garlic powder
1 boneless beef chuck roast (2 1/2 to 3 1/2 lb)

Steps:

  • Spray 5-quart slow cooker with cooking spray. In large bowl, mix oil, salt, pepper and garlic powder. Add roast; turn to coat.
  • Heat 12-inch skillet over medium-high heat until hot. Add beef roast; cook 6 to 8 minutes, turning once, until browned on both sides.
  • Transfer to slow cooker; pour 1/4 cup water over roast. Cover and cook on Low heat setting 7 to 8 hours or until beef is tender and easy to shred.
  • Transfer beef to cutting board; cool slightly. Shred beef, discarding any pieces of fat. Toss beef with 1/2 cup of the cooking liquid. Discard remaining liquid.
  • To Freeze: Divide beef into 2 portions (about 2 cups each). Place each portion in freezer container or resealable freezer plastic bag. Label with date. Cover and refrigerate until completely cooled, at least 1 hour. Transfer to freezer; freeze up to 3 months. Thaw in refrigerator overnight or until completely thawed. Use in recipes calling for cooked shredded beef.
  • To Make in Oven: Heat oven to 325°F. In large bowl, mix oil, salt, pepper and garlic powder. Add roast; turn to coat. Heat 12-inch ovenproof skillet over medium-high heat until hot. Add beef roast; cook 6 to 8 minutes, turning once, until browned on both sides. Pour 1 cup water over roast. Cover and roast 2 1/2 to 3 1/2 hours, or until meat thermometer inserted in center of roast reads 190°F and beef is tender enough to shred easily. Remove from oven; let rest until cool enough to handle, about 30 minutes. Shred meat with 2 forks, discarding fat and cartilage as you go. Toss shredded beef in 1/2 cup of the pan liquid to coat. Discard remaining pan liquid. Freeze and thaw as directed above.

1 (16 ounce) jar salsa
1 (16 ounce) can refried beans
1 (4 ounce) can diced green chili peppers
1 (1 1/2 ounce) envelope burrito seasoning mix or 1 (1 1/2 ounce) envelope taco seasoning mix
16 flour tortillas, 7 or 8 inch
16 ounces monterey jack cheese or 16 ounces cheddar cheese, cut into sixteen 5 x 1/2 inch sticks
salsa (optional)
sour cream (optional)
cooked rice (optional)
cooking oil (optional)

Steps:

  • Using two forks, shred cooked meat or chicken (should have about 3 cups).
  • In a large skillet combine meat or chicken, salsa, beans, undrained chili peppers, and seasoning mix.
  • Cook and stir over medium heat until heated through.
  • In another skillet heat tortillas, one at a time, over medium-low heat about 30 seconds per side.
  • For each chimichanga, place 1/3 cup meat mixture atop a tortilla, near one edge.
  • Top with a cheese stick.
  • Fold in sides; roll up, starting with cheese side.
  • Bake, covered, in 350 degree F.
