Mandarin Salad Ingredients image

A delicious blend of lettuces, celery, green onions, toasted almonds and mandarin oranges tossed with a delightful homemade (easy) dressing!

1/2 c. sliced almonds
2 Tbsp. granulated sugar
1 c. celery (diced)
1 11 oz. can mandarin oranges (drained)
1/2 head iceberg lettuce (chopped)
1/2 head romaine lettuce (chopped)
2 whole green onions (diced)
1/2 tsp. salt
1/4 cup canola or vegetable oil
2 Tbsp. granulated sugar
1/8 tsp. ground pepper
2 Tbsp. white vinegar
1 dash Tobasco sauce ((or other hot sauce))

Steps:

  • In a small pan over medium heat, heat almonds and sugar, stirring constantly until almonds are coated and sugar is dissolved. Watch carefully!! They will burn easily!
  • Set almonds aside to cool on a piece of parchment paper and then store in an airtight container until ready to mix with salad.
  • Mix the dressing ingredients together. I use a jar so that I can shake it all together and store in the refrigerator.
  • Dice the celery and green onions and chop the romaine and iceberg lettuces.
  • Throw everything except the oranges, almonds and dressing into a bowl and mix together. Just before serving, add almonds and oranges and drizzle with dressing. Toss to coat and serve!

60 Ritz crackers, rolled fine
1/3 cup butter, melted
1/4 cup sugar
1 (8 ounce) Cool Whip
1 (6 ounce) frozen orange juice, slightly thawed
2 (11 ounce) cans mandarin oranges, drained
1 (15 ounce) can eagle brand sweetened condensed milk

Steps:

  • Mix together crackers, butter and sugar.
  • Press in a 13x9-inch baking dish. (Save a little bit of the crumbs for top).
  • Refrigerate this while making rest of recipe so it becomes firm.
  • Fold the rest of ingredients together.
  • Spread over crumbs in dish.
  • Top with remaining crumbs.
  • Refrigerate until ready to serve.

This Mandarin Orange Salad is the summer side dish that goes with everything. Sweet oranges, crunchy almonds and a zingy bite from a quick homemade vinaigrette that comes together in minutes.

1/4 cup oil (I like avocado oil)
2 Tbs sugar
2 Tbs vinegar
1/2 tsp salt
dash pepper
dash hot sauce
1/4 cup sliced toasted almonds
1 15oz can mandarin oranges, juice drained
16 oz fresh spinach

Steps:

  • In a jar or salad dressing container, combine the 1/4 cup oil, 2 Tbs sugar, 2 Tbs vinegar, 1/2 tsp salt, a dash of pepper and a dash of hot sauce. Whisk to combine and stir up / shake right before serving as the oil and vinegar will separate.
  • Heat a dry pan over medium high heat on your stovetop. Add 1/4 cup sliced almonds to the pan and move pan in circular motions so the nuts move around and get toasted evenly. Keep an eye on the almonds so they don't burn! Once toasted and fragrant, transfer the toasted nuts to a cup or plate until you're ready to assemble your salad.
  • Combine 16 oz fresh spinach with 1 15oz can drained mandarin oranges in a large salad bowl. Add the toasted almonds to the salad. Add as much dressing as desired to the salad and toss to evenly coat the spinach leaves.
  • Serve immediately!

1 (20 ounce) can pineapple tidbits (drained well)

1 (11.5 ounce) package fudge-striped cookies (I used Keebler)

Steps:

  • In a large bowl, mix together the dry pudding mixes and buttermilk.
  • Fold in the Cool-Whip.
  • Stir in the pineapple and mandarin oranges until incorporated.
  • Break cookies into bite-size pieces and gently fold into salad mixture.
  • Serve immediately.
  • If preparing ahead of time, add cookies right before serving.

6 oz Orange Jello Mix
3 ounce instant vanilla pudding
11 ounce can Mandarin oranges, drained
1/2 of a 20 ounce can of Pineapple chunks, drained
One 8 ounce container cool whip

Steps:

  • Mix together 4 cups of water, orange jello mix, and vanilla pudding mix in a sauce pan. Bring to a boil, stirring the whole time to keep clumps from forming. Once it starts to boil, remove from heat. Pour into a heat-resistant container (I usually use a glass baking dish), cover with plastic wrap and place in the fridge for about four hours. Remove from fridge and break up the jello into chunks. Place in a large bowl. Add in the pineapple, mandarin oranges, and whipped cream and mix around until everything is combined. Keep refrigerated until you are ready to serve.

2 1/2 cups finely crushed pretzels
3 tablespoons granulated sugar
3/4 cup unsalted butter (, melted)
6 ounce box orange gelatin
10 ounce can DOLE Mandarin Oranges (, drained, juice reserved and chilled)
8 ounces cream cheese (, softened)
1 cup granulated sugar
8 ounces cool whip topping (, thawed)

Steps:

  • Make the crust:Preheat oven to 350 degrees F. Coat a 9x13 baking dish with nonstick spray.In a medium bowl, mix together the pretzels, sugar, and melted butter. Press evenly into the bottom of the prepared baking dish. Bake for 10 minutes, or until mixture is lightly toasted. Set aside to cool completely.
  • Make the topping: In a medium bowl, whisk together the orange gelatin powder with 2 cups boiling water. Stir until completely dissolved. Then whisk in the reserved cold mandarin orange juice. Chill in the fridge for about 1 hour to partially solidify (but not too much longer or it will set too much and you won't be able to pour it.)
  • Make the filling: In a medium bowl, beat the cream cheese and sugar with a handheld mixer. Fold in the whipped topping until thoroughly combined. Spread evenly over the cooled pretzel layer, making sure it goes completely to the edges so the jello layer doesn't leak through.
  • Evenly place the mandarin orange segments on top. Chill for 30 minutes. Then pour chilled orange gelatin over the cream cheese layer.
  • Refrigerate until completely chilled and set, at least 4 hours (or overnight). Slice and serve!

2 cups pretzels sticks (broken into fourths)
1/2 cup butter (melted)
3 Tablespoons sugar
1 (8 ounce) package cream cheese
1 (8 ounce) package Cool-Whip (non-dairy whipped topping)
1 cup sugar
1 (6 ounce) box orange Jell-o
2 cups boiling water
4 (11 ounce) cans mandarin oranges (drained)

Steps:

  • Pre-heat oven to 350 degrees.
  • For the first layer, combine broken pretzels, melted butter and sugar. Stir together until well blended. Press in 9 x 13 inch baking pan and bake at 350 degrees for 7 minutes. Cool completely.
  • For the second layer, beat sugar and cream cheese together until smooth. Fold in Cool Whip.
  • Spread cream mixture over pretzel layer (be sure to seal the cream cheese layer against the sides of the pan so that the jello mixture will not be able to leak through when added).
  • For the Jell-o layer, mix orange Jell-o and boiling water together until Jello is completely dissolved. Add mandarin oranges and let cool until slightly set.
  • Pour Jell-o over cream cheese layer and refrigerate until firm.
  • Cut into squares and serve.
