MACHO NACHOS
This ultimate layered nacho recipe is made with two types of gooey cheese. Tortilla chips topped with refried beans, chili, onion, pepper jack and cheddar is a party and game day favorite.

Steps:
- Have all ingredients prepared and ready to assemble nachos.
- Pre-heat oven to 350 °F.
- In a small saucepan on low, heat refried beans until they are loose enough to spoon onto nachos. On a large oven proof platter, spread out tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with onions, Jack cheese, and jalapeño slices. Spoon on chili and top that with Cheddar cheese. Repeat this layering process until ingredients are used up. Place chips in the oven at 350 °F until cheese has melted. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato and jalapeño slices and serve hot.
TRASH CAN NACHOS

- Carne Asada: Combine 2 minced garlic cloves, 2 tablespoons lime juice and 1 teaspoon kosher salt; rub all over 8 ounces skirt steak and refrigerate 30 minutes. Grill over high heat, turning, until charred, 6 to 8 minutes. Let rest, then chop.
- Super Melty Cheese (SMC): Melt 2 tablespoons butter in a saucepan over medium heat; add 1 tablespoon flour and whisk until smooth and toasted, 5 minutes. Whisk in 1 cup each whole milk and heavy cream; bring to a boil. Add 2 ounces each grated mild cheddar, monterey jack, Oaxaca and asadero cheese. Whisk until melted. Stir in a pinch each of cayenne and cumin, 1 tablespoon each minced pickled jalapenos and pickled jalapeno juice and 2 tablespoons pico de gallo. Remove from the heat and keep warm.
- Black Beans: Rinse 1 cup dried black beans, then soak in water overnight; drain. Transfer to a saucepan, cover with water by 2 inches and bring to a boil; reduce to a simmer. Add 1/2 cup minced sweet onion, 1 clove minced garlic, 1/2 tablespoon kosher salt and 1 sprig epazote (or 1 teaspoon dried Mexican oregano). Simmer until the beans are tender, about 1 hour, adding more water as needed. Discard the epazote.
- Make the carne asada, super melty cheese (SMC) and black beans (see above).
- Spoon some of the SMC in a large tin can (an empty 110-ounce can works well, or you can use a pot or a metal bucket). Layer 1/4 pound tortilla chips one-quarter of the way up.
- Spoon more SMC over the chips, then sprinkle with a layer each of carne asada and black beans. Sprinkle with pico de gallo, shredded cheddar, sliced jalapeno, crumbled Cotija cheese, sliced red onion, julienned radish and chopped cilantro; drizzle with Mexican crema.
- Repeat to make 3 more layers of chips, SMC, meat, beans and toppings. Place a large round platter or tray on top of the nachos; invert onto the platter and remove the can. Garnish with more pico de gallo, cilantro, red onion and jalapeno.
MOLE NACHOS

Steps:
- Preheat the broiler. Stem and seed the chile peppers and soak in warm water until soft, about 15 minutes. Drain.
- Heat the olive oil in a saucepan over medium heat. Add the onions and garlic and cook, stirring occasionally, until the onions are translucent, about 5 minutes. Transfer the mixture to a blender and add the chiles, chicken broth, peanut butter, sugar and oregano. Coarsely crumble 1/4 cup tortilla chips, add to the blender and puree until smooth. Return the mixture to the saucepan and simmer, stirring, about 5 minutes. Stir in the chocolate until melted. Season the mole with salt and pepper.
- Place the remaining tortilla chips in a baking dish. Pour about 2 cups mole on top (reserve the rest for dipping); sprinkle with the cheese. Broil until the cheese melts, about 2 minutes. Top with the crema and cilantro.
SUPER NACHOS
This makes a huge meal-sized tray of nachos with lots of good stuff! You can adjust ingredient quantities to suit your preference. Serve with extra chips if required. Great for game day.

- Cook and stir ground beef in a skillet over medium heat until meat is crumbly and no longer pink, 5 to 10 minutes. Drain excess grease. Stir in taco seasoning mix and water and simmer until beef mixture has thickened, 8 to 10 minutes.
- Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil.
- Spread tortilla chips on the prepared baking sheet; top with Cheddar cheese and dot with refried beans and ground beef mixture.
- Broil in the preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes.
- Top nachos with salsa, sour cream, black olives, green onions, and jalapeno peppers.

I'm on a Jetblue flight and watching the Food Network channel and on comes Paula Deen (I've never seen one of her shows) doing a ball game episode. This recipe made me crave Mexican food so we went out for Mexican that night! Have not tried this recipe yet but wanted to post since I was able to find it on foodnetwork.com. Cooking and prep times are estimated.

- Preheat oven to 400 degrees F (200 degrees C).
- Cook and stir ground beef in a large skillet over medium heat until crumbly and browned, about 10 minutes; drain grease. Mix water and taco seasoning mix into ground beef, bring to a boil, and reduce heat to low. Simmer ground beef mixture, stirring often, until thickened, 3 to 4 minutes.
- Heat chili beans in a saucepan over low heat until simmering.
- Spread layers of tortilla chips, ground beef mixture, and chili beans, respectively into a casserole dish; repeat layers until you run out of chips, beef, and beans. Top casserole with Cheddar cheese.

- Prep: Brown and season hamburger. Chop onion and jalapenos. Dice tomato, set aside. heat refried beans.
- Heat oven to 425.
- Spray a glass baking pan, put down tortilla chips until bottom and sides are covered. Add layer of refried beans, followed by hambuger,onion, jalapeno, and cheese. Then start layering process all over. Do this until you have 3 or 4 layers. Be sure it is covered with layer of cheese before baking. Bake for 20 minutes, or until cheese is melted on top. When nachos have gone from hot to warm, add sour cream and diced tomatoes. You could also include salsa. Hope you enjoy as much as my hubby does!
