MANGO GREEN APPLE SALSA
A sweet and zesty salsa made with fresh mangos, limes and green apples. The perfect accompaniment to any fiesta.

Steps:
- Combine diced mango, apple, bell pepper, onion, garlic, tomatoes and jalapeno in a medium sized mixing bowl. Squeeze excess juice from mango skins into bowl. Cut key limes in half and squeeze juice into bowl. Mix to combine.
- Add sugar, cumin, ginger, dash of salt and pepper. Stir to evenly distribute.Add chopped cilantro and stir.
- Cover tightly and chill for at least 2 hours. Stir before serving.

- Combine 1 diced mango, 1 diced red bell pepper, 1/3 cup chopped red onion, 2 tablespoons each fresh lime juice and finely chopped fresh cilantro, 1/2 teaspoon ground ancho chile and a pinch of cayenne pepper in a medium bowl; season to taste with salt. (The salsa can be covered and refrigerated for up to 4 hours.)

- Combine apples, mangoes, red pepper, sugar, onion, raisins, vinegar, and gingerroot in a large saucepan. Bring to a boil over high heat, reduce heat, and boil gently, uncovered, for 20 minutes or until fruit is tender and mixture is thickened, stirring occasionally.
- Add lemon juice, curry powder, nutmeg, cinnamon, and salt; boil gently for 5 minutes.
- Remove hot jars from canner and ladle chutney into jars to within 1/2 inch of rim . Process 10 minutes for half-pint jars and 15 minutes for pint jars.
