Maple Snow Cone: Sugar on Snow image

This maple candy recipe, created in celebration of National Maple Syrup Day by Snowday Food Truck and inspired by a recipe from Pure Canada Maple, is kitchen science at its tastiest. Maple syrup is cooked in a saucepan then poured over shaved ice, causing it to crystalize. The result is a chewy, taffy-like maple candy.Click here for more of our best candy recipes.

4 cup pure canadian maple syrup
4 cup shaved ice (or snow)

Steps:

  • Heat the maple syrup in a large saucepan over medium heat for 5 to 7 minutes, stirring occasionally. Then, lower the heat to keep the syrup warm while you divide the shaved ice between 6 to 8 bowls.
  • Pour the maple syrup over the top of the shaved ice, dividing it equally.

6 cups ice cubes
1 to 2 teaspoons butter
2 cups maple syrup

Steps:

  • Place ice cubes in a resealable plastic bag and wrap bag in a clean kitchen towel. With a meat mallet, coarsely crush ice; fill small bowls with crushed ice; set aside. With butter, grease a ring about 1 inch wide inside a large heavy saucepan about 3 inches from the top. Place maple syrup in the pan; bring to a boil. Cook, without stirring, until a candy thermometer reads 235°, about 10 minutes. Remove from the heat. Drizzle strips of syrup over ice with a small wooden spoon. Using a fork, lift and wrap strips of syrup around fork and enjoy!

1/2 teaspoon butter
packed snow or well crushed ice

Steps:

  • Heat syrup and butter watching pot; turn down heat, if it threatens to boil over.
  • test with candy thermometer till it reaches 234°.
  • Remove from heat and cool slightly.
  • Test if syrup is ready, by spooning a tablespoon of syrup over snow.
  • If the syrup sits on top of the snow, and clings to a fork like taffy, it's ready.
  • Pour in "ribbons" over snow packed in bowls.
