MAPLE FRENCH TOAST CASSEROLE
When I first served this to family visiting from California, they all wanted the recipe. I'd never had so many compliments on my cooking before! The recipe was originally from my grandmother, given to me on my wedding day.-Melissa Faye Paxton, Clifton Forge, Virginia

Steps:
- Place bread in a greased 2-qt. baking dish; press down gently. Sprinkle with raisins. In a small bowl, beat cream cheese until fluffy. Gradually beat in whipping cream and syrup; mix well. Whisk together the eggs, vanilla, cinnamon and salt; add to cream cheese mixture., Pour evenly over bread; lightly press bread into egg mixture with a spatula. Cover; refrigerate for 8 hours or overnight., Remove from the refrigerator 30 minutes before baking. Cover and bake at 375° for 25 minutes. Uncover; bake 20-25 minutes longer or until center is set and the top is golden brown. Serve with syrup.

- Slice the loaf of French bread into about 25 slices, and set aside. In a large bowl, whisk together the eggs, milk, and maple syrup.
- Place enough bread slices in the bottom of a 9x13 inch baking dish to cover. Drop 2 teaspoons or so of cream cheese onto each slice. You do not need to spread the cheese. Repeat layering with bread slices and cream cheese until the dish is filled to the top. Slowly pour the egg mixture over the layers, so it doesn't run over the sides. Cover, and refrigerate 8 hours or overnight.
- The next morning, preheat the oven to 375 degrees F (190 degrees C).
- Bake casserole for 45 minutes, or until set and golden brown.

MAPLE WINTER SQUASH CASSEROLE

- Preheat oven to 400°. Cut pumpkin and squashes in half lengthwise; discard seeds or save for toasting. Place pumpkin and squashes in two greased 15x10x1-in. baking pans, cut side down. Bake, uncovered, 40-50 minutes or until tender., Cool slightly; scoop out pulp and place in a large bowl. Mash pulp with sugar, maple syrup, butter, salt and cinnamon. Transfer to a greased 13x9-in. baking dish. In a small bowl, mix flour, brown sugar and oats; cut in butter until crumbly. Stir in walnuts. Sprinkle over squash mixture.
