WHITE CHOCOLATE CHIP COOKIES
Steps:
- Preheat the oven to 350 degrees Fahrenheit.

- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. This will incorporate air into the mixture.
- Add the dry ingredients to the wet ingredients and beat (on low speed) until just incorporated. Fold in the white chocolate chips.
- Cover the bowl with plastic wrap and refrigerate the dough for 30 to 45 minutes.
- Spray a large cookie sheet with non-stick cooking spray. Scoop out one heaping Tablespoon of dough at a time and place each dollop onto the cookie sheet. Be sure to keep each cookie 1 to 1 1/2 inches apart.

Steps:
- Preheat oven to 350°F.
- In a large bowl, beat the butter, brown sugar and maple syrup until well combined - the mixture will have the consistency of wet sand. Add the egg and vanilla and beat until smooth.
- Add the flour, baking soda and salt (stir them together first only if you want to) to the butter-sugar mixture and stir by hand until almost combined; add chocolate and stir just until blended. It may seem dry at this point - I always find it easiest to get in there with my hands toward the end.
- Drop spoonfuls of dough (or roll rough walnut-sized balls) about 2" apart on a cookie sheet that has been sprayed with nonstick spray. Flatten each a little with your hand, just to give them a head start. Bake for 10-12 minutes, or until pale golden and set around the edges but still soft in the middle. Transfer to a wire rack to cool.
WHITE CHOCOLATE CHIP COOKIES

Steps:
- Sift the flour, baking powder, baking soda and kosher salt into a large bowl.
- Beat the butter, brown sugar and granulated sugar in a large bowl with a handheld electric mixer on medium-high speed until pale and fluffy, about 4 minutes, scraping down the sides of the bowl as needed. (Alternatively, use a stand mixer fitted with the paddle attachment.)
- Beat in the egg until combined, then beat in the vanilla. Reduce the mixer speed to low. Add the flour mixture and beat until combined. Fold in the white chocolate chips with a rubber spatula.
- Press plastic wrap directly onto the surface of the dough and refrigerate for at least 1 hour or preferably overnight.
- Position racks in the top and bottom thirds of the oven and preheat to 375 degrees F.
- Use a 1-ounce scoop to scoop the dough onto two ungreased baking sheets about 2 inches apart. Sprinkle the cookie with the flaky sea salt.
- Bake until the cookies are golden around the edges, but still soft in the middle, 12 to 15 minutes, rotating the pans halfway through from top to bottom and front to back. Let the cookies cool on the baking sheets for 10 minutes, then transfer them to a wire rack to cool completely, about 30 minutes.
